有別於 #加工食品(processed foods ),食品界開始有所謂的 #超加工食品(ultra-processed foods) 出現!
#超加工食品 的定義,是指工業化配方,除了使用鹽、糖、油和脂肪之外,還包括 #不被使用於烹飪的物質,特別是用於模仿 最少加工之食品 及其 烹飪製備 的感官品質 的 添加物。
Ultra-processed foods were defined as industrial formulations which, besides salt, sugar, oils and fats, include substances not used in culinary preparations, in particular additives used to imitate sensorial qualities of minimally processed foods and their culinary preparations.[註]
簡單地說,就是想 #藉由添加物來模仿真實的食物風味的食品加工技術。
為何要利用添加來模仿?
如果「是真的」,就不需要模仿!
正因為不是真的,所以才要模仿!
因為要模仿,所以要利用人工添加物,使我們的感官分辨不出那個原本質地與風味本來可能完全不同的食品,以為我們吃到了 #真的食物。
所以,當我們吃的食物(foods),從 天然食物(nature foods)進展為 加工食品(processed foods ),再進化為 超加工食品(ultra-processed foods),到底是幸還是不幸??
最近有人說煮飯、烹調也屬於「食品加工」。
既然如此,超加工食品(ultra-processed foods)應該可以有所區別了吧!
