I’ve always loved classic baked mooncakes — something Shangri-La Kuala Lumpur never fails to do. But they also have trendy mooncakes such as their Celebrity Michelin Starred Chef Recipe Gift Box Matcha with Red Bean & Yuzu and Kid’s Rabbit-Shaped Gift Box with Chocolate Orange & Nut and Mango, Passionfruit & Coconut snowskin range.
The classic baked mooncakes are good as expected. Smooth lotus paste filling and quality assorted nuts — Shangri-La standard, for sure.
And then we have the new mooncakes; red bean & yuzu which features a baked, melt-in-the-mouth pastry case, and red bean mochi centre. Quite good, this one.
The rabbit shaped gift box made MA so happy, because she’s been watching her mummy receive so many “special deliveries” and was delighted to receive her own from Shangri-La KL. Obviously, I didn’t get to eat her mooncake stash. “Mummy, got sugar. You cannot eat,” she said. Sorry, I cannot give you a review on that. She inhaled it.

INGREDIENTS (10 cakes, 50 gram each)
A. Black tea lotus filling
100 grams dried lotus seeds
50 grams sugar
35 gram oil
15 grams black tea brewed in 120 grams freshly boiled water
B. Mochi
50 grams glutinous rice flour
30 grams icing sugar
90 grams milk
8 grams oil
½ tsp vanilla extract
Corn starch
C. Black tea mooncake dough
45 grams golden syrup
45 grams corn syrup
20 grams oil
10ml strong black tea
140 (± 5) grams all purpose flour
1g – 2 grams ground black tea
1 egg white for egg wash
To make lotus seed filling:
- Soak dried lotus seeds in warm water 2 - 3 hours. Drain then remove the green part in the middle of the seed.
- Boil the seeds with lots of water until they are very softened and mushy, can be easily mashed.
- Puree the seeds with 120 ml black tea (in part A). Strain the puree through a sieve and put them into a wok.
- Add all sugar and oil into the wok, mix until incorporated. Put the wok on medium heat and stir constantly until the filling turns into very thick paste. You can watch this video to know more details about the cooking stage: https://youtu.be/hdcHVBcZuoI

INGREDIENTS
A. Filling
80 ml or 1/3 cup cold whipping cream, 30-40% fat
40 g/ 2 tbsp condensed milk
4 g/ 2 tsp matcha powder)
240 g/ 0.5 lb/ 8.5 oz. mooncake filling (mung bean, lotus, sesame paste...)
B. Dough
100 g (1 cup less 2 tbsp) cooked glutinous rice flour
80 g (3/4 cup) icing/ powdered sugar
30 g/ 2 tbsp shortening)
80 – 150 ml (1/3 – 1/2 cup) COLD milk or water
