Dieting and eating healthy can be quite challenging for some of us especially when we love our curries, Asam Pedas & delicious varieties of Sambal as well as other delightful creamy gravy dishes.

I faced the same issue too, whereby eating grill/steam dishes got boring after sometimes...and hence Experimenting & tweaking local Malaysian dishes to make it healthier is one of my fav past time nowadays so I can help Malaysian to cook & eat healthier yet remain the original taste - (well I try my very best to match the tweaked recipes to match close to the original dish taste - there’s always room for improvement).

Yesterday I had the privilege to share one of my fav local recipe and having it prepared in front of Chef Wan. To be honest I was nervous (duh talking about cooking tweaked recipe right next to one of the most well known chef in Asia! Sweats was pouring like waterfall lol 😂

NOTE: Spaghetti Napolitan sounds like an Italian dish BUT it is a typical Japanese pasta dish made at home and served at restaurants nationwide. Nothing related to Napolitana and the main seasoning is Tomato Ketchup. It is a must.
Frozen Udon noodles are just perfect! Noodles won't go too soft but very chewy yet elastic even after you pan fry them 👍
Napolitan is well balanced with meat and vegetables. Easy for kids to eat!

Udon alla Napolitan (Japanese Pasta Recipe)
Difficulty: Easy
Time: 15min
Number of servings: 2
Ingredients:
2 packages frozen Udon noodles
50g (1.8oz.) sausage or ham
100g (3.5oz) onion
50g (1.8oz.) green pepper
1/2 tbsp. olive oil
3 tbsp. Kagome Tomato Ketchup https://amzn.to/2S8EH0A
1 tbsp. Worcestershire sauce or soy sauce
salt and pepper
grated parmesan cheese
Directions:
1. Slice the onion and green pepper. Diagonally slice sausages.
2. Heat olive oil in a frying pan and cook the onion slices until soft. You can cook garlic together if you like.
3. Add green pepper and sausage slices and cook well.
4. Meanwhile defrost the frozen Udon noodles as directed on its package.
5. Move back to the vegetables, season with tomato ketchup and Worcestershire sauce (or soy sauce). Drain the noodles and mix well. Season with salt and pepper if needed.
6. Serve on a dish and dust with grated parmesan cheese to finish.

Brussels Sprouts Ohitashi (Japanese Vegan Recipe)
Difficulty: VERY EASY
Time: 5min
Number of servings: 2
Ingredients:
200g (7oz.) brussels sprouts
salt
* 100ml water
* 1/3 tsp. Kombu kelp Dashi powder https://amzn.to/2Ysaqgv
* 1 tbsp. soy sauce
* 1/3 tsp. sugar
ground white sesame seeds
Directions:
1. Wash brussels sprouts, trim off the dirty end, then slice down the middle lengthwise.
2. Boil water in a large pot. Add a teaspoon of salt in the water, cook brussels sprouts for about 3 minutes. Drain well in a strainer.
3. In a sauce pan or microwave, heat water, Kombu kelp Dashi powder, soy sauce, and sugar mixture until it comes to a boil.
4. Soak brussels sprouts in Dashi soy sauce.
5. Sprinkle with some fresh ground white sesame seeds just before you serve.
You can keep it in the fridge for 3 days.

Cup noodle-like Okonomiyaki Set by Nisshin Flour Milling Inc. It says you don't need many cooking utensils but actually you need a lot of ingredients to get 😅 At least it contains mayo and sauce in addition to the dry ingredients. Anyway, the direction was interesting. Using 14cm (5.5inch) frying pan, no pressing with spatula, resulted satisfying fluffy soufflé texture! I would vote for this trick 👍

Okonomiyaki Cup Set (Fluffy Savory Japanese Pancake Recipe)
Difficulty: Easy
Time: 20min

Ingredients:

120ml water
220g finely chopped cabbage
100g (3.5oz.) thinly sliced pork rib
1 egg
cooking oil
Okonomiyaki sauce https://amzn.to/3ohfhfa
mayonnaise https://amzn.to/2KLG3P2
Directions:
1. Make Batter: In the cup, put Okonomiyaki flour and water. Mix with a spoon, a bit crumbled is okay, do not overmix.
2. Mix: Add chopped cabbage, Agedama (crunchy bits of deep fried flour-batter) and egg, then mix well. *Thinly sliced cabbage is not easy to mix with a spoon, so this is why chopped cabbage is recommended.
3. Cook: In a 14cm/5.5inch frying pan, heat cooking oil, put half of the batter, and place pork slices. Uncover and cook on medium for 4 minutes. Flip it over, COVER, and cook on medium for 5 minutes. Again, flip it over, uncover, and cook on low for 5 minutes.
4. Finish: Put Okonomiyaki sauce, mayonnaise (if you like), Katsuobushi (bonito flakes) and Aonori (green laver) to finish.
