ขณะนี้โลกกำลังเผชิญอุณหภูมิที่สูงขึ้นเฉลี่ย 1.1 องศา (หากเปรียบเทียบกับระดับอุณหภูมิเฉลี่ยก่อนยุคอุตสาหกรรม ปี 1850-1900) ที่ทำให้เราเผชิญสภาพภูมิอากาศเปลี่ยนแปลง ร้อนหนัก แล้งหนัก ไฟป่า น้ำแข็งละลาย ระดับน้ำทะเลสูงขึ้น การสูญพันธุ์ และอื่นๆที่คาดการณ์ไม่ได้

ทั่วโลกจึงมีข้อตกลงร่วมกันในความตกลงปารีสที่จะให้อุณหภูมิโลกไม่สูงกว่า 2 องศา และพยายามลิมิตไม่ให้เกิน 1.5 องศา

เพราะหากโลกร้อนเกิน 1.5 หรือ 2 องศาเซลเซียส หรือมากกว่านั้น เราอาจจะเผชิญวิกฤตสภาพภูมิอากาศที่ไม่สามารถย้อนกลับได้ ผลกระทบต่อสภาพภูมิอากาศนั้นจะรุนแรงกว่านี้หลายเท่าตัว

ซึ่งสิ่งที่ทำให้อุณภูมิโลกสูงขึ้นก็คือก๊าซเรือนกระจก ก๊าซคาร์บอน ที่ถูกปล่อยออกมาอย่างมหาศาลจากกิจกรรมต่างๆของเรา ทำให้เกิดภาวะเรือนกระจกฝาชีครอบความร้อน

ทั่วโลกจึงมีความมุ่งมั่นในการลิมิตจำกัดปริมาณการปล่อยก๊าซคาร์บอนที่ถูกปล่อยสู่ชั้นบรรยากาศ เพื่อที่จะไม่ให้อุณหภูมิสูงเกิน 1.5 องศาเซลเซียส เราจึงมีปริมาณจำกัดของก๊าซเรือนกระจกที่สามารถปล่อยได้ เรียกว่า "Carbon Budget"

และหากเรายังปล่อยก๊าซเรือนกระจกอยู่แบบนี้ เรามีเวลาเหลือเท่าไหร่กัน ก่อนที่เราจะใช้ Carbon Budget นี้หมด? (ปล่อยคาร์บอนเกิน) และทำให้อุณหภูมิสูงเกิน 1.5 องศา หรือ 2 องศา

จากรายงานในปี 2018 IPCC Special Report on Global Warming of 1.5°C เผยว่าเรามีลิมิตปริมาณคาร์บอนที่สามารถปล่อยได้ (Carbon budget) ไม่เกิน 420 gigatonnes (Gt CO2) ในการที่จะทำให้อุณหภูมิไม่สูงเกิน 1.5 องศา
และเรามีลิมิตปริมาณคาร์บอนที่สามารถปล่อยได้ (Carbon budget) ไม่เกิน 1170 Gt CO2ในการที่จะทำให้อุณหภูมิไม่สูงเกิน 2 องศา

โดยในปัจจุบันนี้โลกเราปล่อยก๊าซคาร์บอนไดออกไซ์ประมาณ 42 Gt CO2 ในแต่ละปี และหากเรายังปล่อยอยู่แบบเดิม เราจะเหลือเวลาอีกนานเท่าไหร่ที่จะใช้ Carbon Budget หมดกันนะ?

และทั้งหมดนี้ก็คือที่มาของ Carbon Clock และ Climate Clock ซึ่งเป็นนาฬิกาที่นับถอยหลังนี้สู่วันที่เราจะใช้ Carbon budget หมดนั่นเอง โดยทำเพื่อที่จะตอกย้ำให้เรามุ่งปล่อยก๊าซเรือนกระจกให้น้อยที่สุด หรือจนกระทั่งเป็น 0
•
Carbon Clock และ Climate clock (แถบสีแดง) นาฬิกาที่นับถอยหลังนี้เผยให้เห็น Deadline ว่าตอนนี้ (วันที่ 26 กันยายน 63)
1. เราเหลือ Carbon Budget 305 Gt CO2 ที่สามารถปล่อยสู่ชั้นบรรยากาศได้ โดยที่จะทำให้อุณหภูมิโลกไม่สูงเกิน 1.5 องศา ซึ่งหากเราปล่อยก๊าซคาร์บอนแบบในปัจจุบันนี้ ในอีก 7 ปี คาร์บอน Budget นี้จะหมด (เราเหลือเวลา 7 ปีในการมุ่งสู่คาร์บอนศูนย์)
2. และเราเหลือ Carbon Budget 1055 Gt CO2 ที่สามารถปล่อยสู่ชั้นบรรยากาศได้ โดยที่จะทำให้อุณหภูมิโลกไม่สูงเกิน 2 องศา ซึ่งหากเราปล่อยก๊าซคาร์บอนแบบในปัจจุบันนี้ ในอีก 25 ปี คาร์บอน Budget นี้จะหมด (เราเหลือเวลา 25 ปีในการมุ่งสู่คาร์บอนศูนย์)

นอกจากนี้บน Climate Clock ยังมีตัวหนังสือสีเขียวที่แสดงถึงเปอร์เซ็นต์การเติบโตของการผลิตพลังงานจากแหล่งที่หมุนเวียน เรียกว่า Lifeline ที่ ณ วันนี้ คิดเป็น 27% โดยเราต้องทำให้ Lifeline หรือการผลิตพลังงานจากแหล่งหมุนเวียนให้เป็น 100% ก่อนที่ Deadline ของเราจะถึง 0 หรือ ก่อนวันที่ Carbon Budget หมดนั่นเอง

นาฬิกานับถอยหลังนี้คงเป็นสิ่งย้ำเตือนให้เราเร่งลงมือปฏิบัติในวันนี้ ในการลดการปล่อยก๊าซคาร์บอนจากกิจกรรมต่างๆในชีวิตของเรา เพื่อไม่ให้อุณหภูมิโลกสูงเกิน 1.5 หรือ 2 องศาที่จะทำให้เราเผชิญหายนะในอีก 7 ปี หรือ 25 ปีข้างหน้า

โดยนาฬิกานี้เปรียบเสมือนการนับถอยหลังสู่หายนะ ที่เราทุกคนจะต้องเผชิญเหมือนกัน หากไม่ลงมือทำอะไรเลย เพราะฉะนั้นเราทุกคน ทุกภาคส่วน จะต้องร่วมมือกันในการมุ่งสู่เป้าหมายปล่อยคาร์บอนศูนย์ เพื่อเราทุกคนเอง

ขณะนี้หลายๆเมืองที่ได้นำ Climate Clock นี้ไปติดตามตึกต่างๆ อย่างใน Berlin, New York, และ Paris เพื่อย้ำเตือนผู้คนถึงให้ตื่นละตระหนักถึงความเร่งด่วนในการลงมือ Take Action กับเรื่องสภาพภูมิอากาศ โดยทุกท่านเองก็สามารถมีนาฬิกาถอยหลังนี้ไว้ที่บ้าน มือถือ หรือเมืองของตัวเองได้ เพื่อย้ำเตือนตัวเองตลอดเวลาว่านี่คือเวลาที่เหลือที่เราจะช่วยโลกได้

Because the world has a deadline and a limit! Climate Climate Clock. Countdown to global warming disaster. We have only 7 years left! In saving the planet, aiming to zero carbon, not over 1.5 degrees, before we face a never-ending global warming disaster. (or less time, it's up to us all)

The world is currently facing a temperature of an average of 1.1 degrees (compared to pre-industrial average temperature of 1850-1900) that has us facing climate change, hot warming, heavy drought, wildfires, melting ice, sea level rise, extinction, etc. Unpredictable
•
Globally, there is a mutual agreement in Paris agreement to provide global temperatures not higher than 2 degrees and try Limit not to get above 1.5 degrees.
•
Because if the global warming is above 1.5 or 2 degrees Celsius or more, we might face an irreversible climate crisis. The climate impact is slightly more severe.

What makes the world higher is the greenhouse gases, carbon gases released greatly from our activities, causing the greenhouse, heated capsules.

有別於美式的芝士蛋糕, 巴斯克焦香芝士蛋糕表面呈深焦糖色,邊緣不整理,沒有餅底或海綿蛋糕。 材料不多步驟簡單,但吃起來有淡淡的焦香味及柔滑的奶香,也被紐約時報評選為2019年度甜點。
It is not like any other American-styled cheesecakes. Basque burnt cheesecake has a top that is overly dark (almost like burnt), the side is rough and uneven. It does not have any base like a crust or sponge cake. Only 5 ingredients and the steps are relatively simple. It is soft and creamy. It is nominated by New York Times Magazine as Dessert of the Year in 2019.

↓ Very soft and creamy Basque burnt cheesecake recipe ↓
Mold size: 6-inch cake mould 模具: 一個6吋蛋糕模
巴斯克焦香芝士蛋糕
►材料:
忌廉芝士(室溫) 450克
糖 110克
3 顆蛋 (室溫)
低筋麵粉 10克
淡忌廉 225毫升
檸檬汁 2茶匙(可不加)
►Ingredients:
Cream Cheese (softened at room-temperature) 450g
Sugar 110g
3 eggs (at room-temperature)
Cake Flour 10g
Whipping Cream 225ml
Lemon juice 2 teaspoons (optional)
►►步驟 :
1) 預熱焗爐至230C (446F)
2) 準備一個六吋模具
3) 用一張大的烘焙紙, 把它放在中間之後從中間擠壓下去
4) 模具旁邊也需要壓下去
5) 一隻手按着中間一隻手把邊邊反出來接好
6) 檢查忌廉芝士是否柔軟
7) 在一個碗中加入已放室溫的忌廉芝士
8) 用中低速打發至順滑 (我的打蛋器有10個速度我用了3速 (3/10))
9) 加入糖
10) 繼續用中低速打發至順滑及糖完全溶化
11) 蛋分三次放入 一次一顆
12) 改用低速攪拌至混合再放下一顆 我用的是1速 1/10
13) 在另一個碗中加入篩入低筋麵粉
14) 加入少許淡忌廉攪拌均勻這樣可以減少產生顆粒
15) 再加入一半的淡忌廉攪拌均勻
16) 再加入其餘的淡忌廉攪拌均勻
17) 加入芝士糊中
18) 加入檸檬汁
19) 繼續用低速攪拌均勻
20) 把蛋糕糊過篩可以隔去氣泡
21) 慢慢倒入蛋糕糊以免產生氣泡
22) 放在枱面敲打幾下
23) 焗230C (446F): 中層15 分鐘 上層10分鐘 中層 5分鐘
(因為我的焗爐放在中層表面不夠深色所以15分鐘後我把蛋糕放在上層10 分鐘上色, 每個焗爐都不一樣, 如果你的蛋糕放在中層很快上色, 你不用像我這樣放到上層)
24) 焗至蛋糕表面焦糖色, 搖的時候中間會抖
25) 取出放涼
26) 喜歡吃軟心的可以放涼一點後取出食用
27) 喜歡口感硬一點的可以放至室溫後冷藏6小時
28) 慢慢的撕開烘焙紙
29) 刀子用熱水浸熱 擦乾 每次切完用紙擦乾淨再放熱水中 重複步驟
►►Steps:
1) Preheat oven to 230C (446F)
2) Line a 6-inch cake mould with a large piece of parchment paper
3) Put it on top of the cake pan and press in the middle of pan
4) Press carefully and firmly on the side
5) Use one hand to fold the excess of the parchment paper outward while the other hand firmly pressing the middle
6) Check if the cream cheese has softened
7) In a big bowl, add the room temperature cream cheese
8) Beat at medium-low speed until smooth (My electric mixer has 10 speeds and I’m using 3rd speed. )
9) Add in sugar
10) Continue using medium low speed to beat until sugar has dissolved
11) Add eggs one by one in 3 times
12) Change to low speed to mix. One egg at a time. I’m using speed 1 out of 10
13) In another bowl, sift cake flour
14) Add a little bit of whipping cream and mix to prevent lumps
15) Once it is mixed, add half of the whipping cream and mix
16) Add the rest of the whipping cream and mix until combined
17) Add the flour whipped cream mixture into the cheese batter
18) Add lemon juices
19) Continue beating in low speed until combined
20) Sift the batter to remove bubbles
21) Pour the batter slowly and carefully to prevent bubbles
22) Tap on the table for a few times
23) Bake at 230C (446F): Middle rack for 15 mins Top rack for 10 mins Middle rack for 5 mins
Note: The top of my cheesecake didn’t get as brown as I want it to be so I moved it to the top rack after 15 mins. It all depends on your oven you can leave it on the middle rack for the entire time if the top get browned easily.
24) Bake until the top is dark brownish. When you shake the pan, the middle of the cake should jiggle
25) Take out the cake and let cool
26) If you like the gooey texture with a melty middle, you can serve it after it has cooled down
27) If you would like it to be firm, let cool at room temperature then put in the Refrigerate for at least 6 hours
28) Slowly peel off the parchment paper
29) Wet the knife with hot water and wipe dry. Repeat after every cut

The pancake's shape and structure varies worldwide. But fluffy American pancakes are on my A-list. Everybody loves pancakes because they're so easy to make, but NOT THAT EASY. I mean if you want to make the most delicious one.
So we did some research to find the recipe. New York Magazine has voted Clinton St. Bakery Co’s pancakes are the best in New York city twice, so no doubt, we tried their recipe. And we love it. They are rich in flavor but light in texture. Super Yummy. Their pancakes are famous for a reason.
In this video, we’ll share the secret of these pancakes step by step, and how to make the fluffy texture (almost like a cake). They are great for a weekend brunch, and we strongly recommend topping with maple butter and blueberries compote. Of course you can also add some crisp fried bacon with it, they are a classic American breakfast dream team forever :). Wow~so enjoyable. Every day should start like this.

How to make blueberry pancakes
☞ Yield: 8~10 servings, using ¼ cup to scoop the batter
✎ Ingredients
📍 pancake
all purpose flour 160g
milk 220g
baking powder 6g
granulated sugar 70g
salt 2g
unsalted butter 58g, melted
egg 2, M~L size
vanilla extract 2g
📍 maple butter
maple syrup 160g (about 1/2 cup)
cold unsalted butter 110g, cubed (about 1/2 cup)
📍 blueberry compote
fresh or frozen blueberries 178g (1 cup)
granulated sugar 22g (2 tbsp)
lemon juice 5g (1tsp)
✎ Instructions
📍 pancake
1. Sift flour and baking powder together into a large mixing bowl. Then add sugar and salt and mix well.
2. Separate egg yolks from egg whites. Add vanilla extract, milk and melted butter into yolks bowl, and whisk until combined.
3. Beat the egg whites by electric mixer or by hand with a whisk until foamy, then add sugar in 3 batches and continue whisking until they reach medium soft peaks.
4. Pour the egg yolk and milk mixture into the dry mixture, just mix until the flour is dissolved, the batter will be slightly lumpy. Don't over mix it.
5. Next, gently mix half of the whipped whites into the batter, using the whisk to mix from the bottom, then add the rest of the whipped whites and keep folding it in, but no need to fully incorporate.
6. Heat the griddle until hot about 190°C. Drop half cup of pancake batter on the griddle to test the temperature and let set. Once bubbles form and pop, flip it. If the color is nice, the heat is enough. (A common mistake many people make is they don't heat the griddle enough, which is why we need to test the first one.) BTW, if you prefer the crispy on the edge, you can grease the hot surface with a little oil or butter.
7. Add 1/4 cup pancake batter, as the pancake cooks, you will see bubbles start to form on top, once the bubbles pop and become holes, it's time to flip. (3~3.5 mins per side)
8. Repeat the process with remaining batter, you can add some blueberries on top to create fruit flavor. Cooking several pancakes at a time. Transfer cooked pancake to a plate and garnish with confectioners’ sugar on top. Serve warm with maple butter and blueberry compote. Enjoy! To keep the pancakes warm while you make more, you can preheat the oven to 50°C and transfer cooked pancakes in to keep warm.
📍 maple butter
1. Heat maple syrup in a small saucepan over medium heat.
2. Add cold butter to warm syrup (never bring to a boil), whisking until sauce is smooth and all of the butter is incorporated. Maple Butter can also be kept refrigerated for up to two months. Reheat before using.
📍 blueberry compote
1. Simply combine blueberries, sugar and lemon juice in a small pot over medium-low heat, stirring continuously.
2. Once cooked, simmer for 4-5 minutes, keep stirring until a thick mixture has formed.

For this video, we went down to Wolfgang’s Steakhouse at Robertson Quay to savour a $1000 Steak Mukbang! Wolfgang’s Steakhouse, founded by Wolfgang Zweiner, specialises in 28-day dry-aged USDA Prime Black Angus Steak served in an upscale setting. Their steak is aged in their in-store dry-aging room and USDA Prime grading refers to the highest possible steak grade given by the US authorities. Dry-aging is a process where meat is placed in a controlled environment (temperature and humidity) to enhance the flavour profile and texture, creating a deep, “meaty” flavour. The ambience is exceptional with a clear view of the Singapore River, high ceilings, an expansive bar and mahogany flooring.
For my mukbang, I ordered a Porterhouse for Four ($382), Rib Eye Steak ($148), Filet Mignon ($125), Onion Rings ($20), Lobster Mac N’ Cheese ($30) and Cream of Corn ($17). For dessert, I got Key Lime Pie ($17). To pair with the steak, I also requested for a bottle of red wine. The star of the show was the enormous porterhouse steak, served on a blistering hot plate that was previously under a broiler. It contained the best of both worlds, a divinely tender filet mignon and a sumptuously flavourful strip steak. Still affixed to the bone, the whole piece was probably around 2KG of dry-aged goodness. Thanks to the dry aging process, the meat truly encapsulated the signature deep “meaty” flavour that dry aging is known for with the tenderness to match.
As for the sides, the Lobster Mac N’ Cheese never fails to impress. Whipped up with 3 types of cheeses and filled with large chunks of lobster, the side was not overpowering or too heavy as it can tend to be. It was elegantly balancing right on the precipice of too much and too little in terms of flavour. I also had my favourite dessert, Key Lime Pie. It was similarly well-balanced and I could rich notes of the condensed milk used in the batter and the fragrance of lime. The crust was a delicate biscuit base that gave some bite to the soft interior of the pie.
It will come to no surprise that this was a thoroughly enjoyable mukbang for me. The food was stellar from the wonderful dry-aged steak to the sides and dessert. Pairing the meal with an excellent glass of wine only elevated it even further. However, as I ate with Mervin, I underestimated his capacity and realised that I could have eaten significantly more. I look forward to attempting a greater challenge in the future with Wolfgang’s Steakhouse. If you are looking for a classy atmosphere, ridiculously good food and drinks to match, look no further than Wolfgang’s Steakhouse. Do head over there, especially for special occasions for your loved ones. They deserve this treat!

【ingredients】(6pieces of DAISO Silicon typex2pieces)
150g Oreo
60g Melted butter
200g Cream cheese
80g Granulated sugar
2 egg(room temperature)
180ml heavy cream
1tsp lemon juice
40g Flour
5 Strawberry
6 blueberry
【材料】(ダイソーの6個取れシリコン型×2枚)
オレオ 150g(15個)
溶かしバター 60g
クリームチーズ 200g
グラニュー糖 80g
卵(室温) 2個
生クリーム 180ml
レモン汁 小さじ1
薄力粉 40g
いちご 5個
ブルーベリー 6個
【作り方】
①オレオはフードプロセッサーや麺棒などで細かくつぶして溶かしバター(電子レンジで溶かします)を加えて混ぜ、シリコン型に入れてスプーンなどで押し固めて冷蔵庫で約30分冷やします。
②クリームチーズを電子レンジ600wで30-40秒あたためてボールに入れて泡だて器でよく混ぜてクリーム状にします。
③グラニュー糖、室温に戻した卵、約40℃に温めた生クリーム、レモン汁を加えながらその都度よく混ぜて、薄力粉をふるい入れて粉っぽさがなくなるまで混ぜます。
④ ①のシリコン型へ生地を流し入れて160℃に予熱したオーブンで25-32分焼きます。
(竹串を刺して生の生地がついてこなければ焼けています。)
⑤焼けたらケーキクーラーであら熱を取ったらラップをして冷蔵庫で一晩冷やします。
⑥いちごやブルーベリーを乗せます。
