那天朋友問是否有地瓜口味的月餅,剛想起原來有弄過那麼一款地瓜蓮蓉冰皮月餅。🍠😋
地瓜蓮蓉冰皮月餅 Sweet Potato Snow Skin Moon
饼皮材料:
糕粉150克
糖粉100克
白油70克
冷水250克
色素 少许
内馅材料:
地瓜莲蓉馅700克
地瓜莲蓉馅材料:
莲蓉馅350克
地瓜350克
蜂蜜 50克
地瓜莲蓉馅做法:
1.地瓜入锅蒸至熟,压成泥备用。
2.将地瓜泥和蜂蜜放入锅中,炒匀。
3.将莲蓉馅加入,拌炒至浓稠不粘手,起锅放凉备用。
做法:
1.将糕粉和糖粉过筛,加入白油拌匀。
2.把冷水和色素入搓匀成饼皮面团,分成等份。
3.把地瓜莲蓉馅分成等分。
4.用檊面棍把面团分别檊平,把内馅包入饼皮中,再放入月饼模内压制成形后扣出,放入冰箱冷藏约30分钟即可。

Skin ingredients:
150g koh fun (cooked glutinous rice flour)
100g icing sugar
70g shortening
250g iced water
food colouring
Filling ingredients:
700g sweet potato lotus paste
Sweet potato lotus paste ingredients:
350g lotus paste
350g sweet potato
50g honey
Procedure:
1. Steam sweet potato till cooked and mashed it, set aside.
2. Add in mashed sweet potato and honey in pan, stir well.
3. Add in lotus paste, and continue stir-fry until thick and non-stick.
Procedure:
1. Sift koh fun and icing sugar into a mixing bowl, add in shortening and mix well.
2. Stir in water and food colouring until well combined, and form dough.
3. Divide dough and fillings into each equal portion.
4. Flatten dough with roller and warp in filling, press into moon cake mould, knock it out and chill in refrigerator.

9月21日は十五夜です。陽キャ顔の3Dうさぎさんとお月見はいかがですか?
*レシピ*(5ぴょん分)
1.耐熱ボウルに上新粉 100g、砂糖 40gを入れ混ぜる。
2.混ぜながら、ぬるま湯を少しずつ入れ、耳たぶくらいの固さにする。今回70g弱加えました。
3.ふんわりラップをして、600wの電子レンジで1分40秒加熱。白っぽいところが残っていたらザッと混ぜ、様子を見ながら加熱をする。今回、20秒追加加熱しました。
4.水で濡らしたすりこぎなどの棒で滑らかになるまでつく。
5.触れるくらいまで冷めたら、水で濡らした手で50回ほどこねる。
6.餅を5等分(1個 40g)にし、楕円に伸ばす。
7.耳になる部分を折り、切り込みを入れる。
8.お好みの餡を薄く塗る。今回はさつまいもの塩バター餡にしました。お餅が甘いので無くても大丈夫です。
9.餡を包む。切り込み部分の端が気持ち隠れるまで巻き込むとよいです。
10.海苔で顔を付ける。
11.でけた。
えらくポップなウサギさんになっちゃったけど、お月見を楽しみましょう。

* Recipe * (for 5 rabbits)
1.In a heatproof bowl, mix 100g of Joshinko and 40g of sugar. ( Joshinko : top-grade rice flour made from non-glutinous rice. )
2.While mixing, add lukewarm water little by little to make it as hard as an earlobe. I added a little less than 70g this time.
3.Cover with plastic wrap softly and heat it in a 600w microwave for 1 minute and 40 seconds.If any whitish areas remain, mix them briefly and heat while watching the situation. This time, it was additionally heated for 20 seconds.
4.Use a stick such as a wet pestle to pound the mixture until it becomes smooth.
5.When it is cool enough to touch, knead it with wet hands about 50 times.
6.Divide the rice cake into five equal portions (40g each) and roll out into an oval.
7.Fold the part that will be the ears and make a notch.
8.Spread a thin layer of your favorite bean paste. This time, I used sweet potato salt butter bean paste.The rice cake is sweet, so you can do without it.
9.Wrap the bean paste. It's best to roll it in until the end of the notch is hidden.
10.Put a face on it with nori (seaweed).
11.It's done.
It turned out to be a very poppy rabbit, but let's enjoy Otsukimi.

天然無色素的喜板,
南瓜喜板做出來的顏色好美喔!
重點是這樣的比例做出來,
鬆軟不黏牙,好好吃喔!
連孩子都讚不絕口。
材料:
中筋麵粉 300g
糯米粉 200g
砂糖 150g
植物油 30g
即溶酵母 1茶匙
南瓜 250g
水 150g
作法:
1. 將南瓜蒸熟後, 打成泥狀。
2. 中筋麵粉和糯米粉過篩在一個容器盆內。
3. 把砂糖、植物油、即溶酵母、南瓜泥、清水、放入粉中, 攪拌均勻。
4. 搓揉至均勻的時候, 放入油, 再繼續搓揉至光滑。
5. 取60g搓成圓形, 壓扁後, 放在烘焙紙或是香蕉葉上。
6. 靜置30分鐘發酵, 然後中小火蒸12分鐘。
(可以做18~20個左右)

Pumpkin 250g (steamed to soft)
Water 150g
The dough is divided into 60g each.
It can be done about 17~19 pcs.
