Here’s my Oregon & Washington Blueberries Oatmeal Muffins recipe inspired by Georgen. ✨✨

Ingredients
200g Rolled Oats
200g Oregon & Washington Blueberries
50g Honey
½ tsp Baking Soda
1 tsp Baking Powder
¼ tsp Salt
2pcs Eggs
1 Banana
1 tsp Vanilla Essence
80ml Olive Oil

Methods:
1. Place the rolled oats in a food processor and blend until they form a fine flour, stopping and stirring occasionally.
2.Add baking soda, baking powder and salt to the oat flour and then mix well.Mash the banana with a fork in a big mixing bowl.
3. Add the eggs to the mashed banana, followed by olive oil, honey and vanilla essence. Stir until all the wet ingredients are well combined.
4. Pour the wet mixture into the dry ingredient bowl, and slowly stir until combined. Scoop the batter and distribute evenly into all the muffin liners.
5. Place a few Oregon & Washington blueberries and sprinkle some rolled oats on top to garnish. Bake in a preheated oven at 190°C for 20 minutes.
6. Test the doneness with a toothpick, when it's fully baked, there won't be any wet batter on it. Enjoy! 💯💯

簡單易整 健康低卡 ✅全素
Healthy Berries Oatmeal Cups
什莓燕麥鬆餅
食譜(4-5件):
燕麥 280 mL (1/2 即食+ 1/2 原片)
雞蛋1隻/亞麻籽粉 1tbsp + 植物奶3 tbsp
香蕉1隻 (全熟)
牛奶/植物奶 100mL
泡打粉 1 tsp
椰子糖 3 tsp (可調整)
香草精油 1 tsp
**180C 25-30 分鐘
-------------------------------------------------------------------
Recipe (4-5 portion):
Oats 280 mL (1/2 instant+ 1/2 rolled oat)
egg 1 medium/ flaxmeal 1tbsp + plant-based milk3 tbsp
banana 1 medium (ripe)
milk/ plant-based milk 100mL
baking powder 1 tsp
coconut sugar 3 tsp (adjustable)
vanilla extract 1 tsp
**180C 25-30 minutes

【素食 Vegan】無糖無麩質燕麥餅乾&檸檬藍莓杯子蛋糕
燕麥餅乾是很多媽媽們做給小孩吃的放學點心,我是還沒有小男孩,倒是家裡有位大男孩,想讓他帶到公司當下午時的解饞點心,不然下午總是給我叫餓。可是最近限制精緻澱粉、糖的攝取,因此想把燕麥餅乾做成無糖、無麩質、無奶油、無蛋的全素食、健康版本。因為這次比較特別的全素食譜,讓我嘗試了一些新的粉類、天然甜味劑,默默覺得食材庫的選擇變多了,尤其是利用「亞麻籽粉」做成素蛋(vegan egg) 的方式,非常有趣~
杯子蛋糕減低卡路里的大絕招—優格
杯子蛋糕一般的食譜有些是運用全蛋打發、分蛋打發或是比較多奶油的食譜,由於優格是一項很好的替代蛋或是奶油材料,像是之前在「低脂優格舒芙蕾」食譜中也是用優格替代原始配方的奶油讓整體的卡路里降低一半以上。

A.(vegan) 無糖藍莓燕麥餅乾
可做8~9片餅乾
乾性材料
燕麥片(傳統型,非即溶燕麥)125ml
糙米粉 ( Brown Rice Flour) 125ml
泡打粉 1/4 小匙
小蘇打粉 1/4小匙
肉桂粉 1/2 小匙
鹽 1/8小匙
濃農本家 藍莓乾 1~ 2大匙(隨意)
B.檸檬藍莓杯子蛋糕(可做4個)
低筋麵粉 70g
泡打粉 1/4 小匙
小蘇打粉 1/8小匙
鹽 1/8小匙
奶油(融化) 40g
楓糖粒 或是一般砂糖 45g
檸檬汁 2小匙 +檸檬皮屑 1小匙
蛋 35g
希臘優格 (greek yogurt) 85g
杏仁奶 / 牛奶 20g
*楓糖粒是天然楓糖漿乾燥後製成的糖,帶有楓糖特有的香氣跟甜味,熱量是一般砂糖的2/3,透過iHerb網站可買到。
C.藍莓起士奶油霜
奶油乳酪 cream cheese 60g
奶油 60g
新鮮藍莓果醬 1大匙 (做法請見:藍莓辮子麵包)
糖粉 50g (依個人口味調整)
