春季養生從吃開始
天氣回暖濕度上升,轉眼又來到春天了,根據中醫養生理論,春天是陽氣生發的季節,人體的陽氣也順應自然而向外抒發,所以應該充養及保護體內陽氣,適量進食辛溫發散食材,有助增進食慾,亦有助促進陽氣的升發,例如蔥、芫茜、韭菜、洋蔥、茼蒿、芹菜等。
春屬木,與肝相應,所以在春天要多注意肝臟的調養,肝喜疏泄而惡抑鬱,若然肝氣鬱結,加上飲食辛辣、煎炸油膩、過分溫補、或經常熬夜就容易肝火上升,出現心煩易怒、睡不安寧等症狀。養生學著作《攝生消息論》中提及:「當春之時,食味宜減酸增甘,以養脾氣。」酸味入肝,其性收斂,多吃不利於春天陽氣生發和肝氣疏泄,所以宜少吃酸性食品。而甘味入脾,有滋養、補脾、緩急、潤燥及補益脾胃功能,適宜在春天多吃甘味食物,例如大米、小米、淮山、紅棗、黃豆、扁豆、黑豆、紅蘿蔔、薯仔、番薯、芋頭、蓮藕、南瓜、粟米、桂圓等。
春天多雨潮濕,濕氣重會使人困倦及情緒不穩,可以適量食用健脾祛濕食材,例如淮山、薏米、白扁豆、赤小豆、黃豆等。同時多吃有理氣功效的食物,例如佛手、五指毛桃、白蘿蔔、陳皮等,有助肝氣暢通,調節情緒。

You can tell spring is coming as it has been warm and humid. According to healthy living concepts based on Chinese medicine, spring is the season that yang qi is most active. Human yang qi is naturally expressed so you should nourish and protect yang qi in the body. Appropriately consume spicy and warm natured ingredients to stimulate appetite and promote yang qi, such as spring onion, cilantro, chives, onion, garland chrysanthemum, celery.
Spring belongs to the wood, which corresponds to the liver. So in the spring, pay more attention to the conditioning of the liver. The liver is responsible for detoxification and weak for those with depression. If liver qi is stagnated , eating spicy, fried and oily food, replenish too much, or often staying up late, can easily lead to an increase in liver fire, causing symptoms such as irritability, poor sleep. According to the ancient healthy living book, one should opt for sweet flavour but not sour in the spring. Sour flavour harms yang qi and liver qi is exposed, so eat less sour food in the spring. Sweet flavour can nourish the spleen and relieve dryness. It is suitable to eat more sweet food during spring, such as rice, millet, Chinese yam, red dates, soya bean, hyacinth bean, black soya bean, carrot, potato, sweet potato, taro, lotus root, pumpkin, corn, longan.
It is rainy and humid during spring, and dampness causes fatigue and bad mood. You can eat ingredients to strengthen the spleen and stomach, such as Chinese yam, coix seed, hyacinth bean, rice bean, soya bean. At the same time, eat more ingredients that can regulate qi, such as fingered citron, hairy fig root, white radish, dried citrus peel, to promote liver qi circulation and regulate mood.

春回大地,清爽空氣不再。雨水是廿四氣節中的第二個節氣,顧名思義就是指在這節氣期間雨量會增多,氣候再次回復潮濕。初春依然乍暖還寒,時雨時晴,時濕時乾,在這種天氣驟變的轉季時分,更要多注意保暖,慎防濕寒悄悄偷襲!「內傷脾胃,百病由生」,說明脾胃虛弱是生病的主要原因。踏入了雨水,更宜調養脾胃。一年之計在於春,如未開始每天喝米水的習慣,今天開始最適合不過了!先堅持連續飲用十五天,感受一下會有什麼不同!另外飲食方面要少吃煎炸油膩食品、可多食理氣食物,如五指毛桃、白蘿蔔、陳皮等。

1.天氣還未正式回暖,還是多穿一件外套吧!
2.時晴時雨,雨傘傍身最穩陣!
3.切忌太亢奮或太抑鬱,保持平常心。

Because its shape and pattern are like a shrimp, we call this taro potato Ebi-Imo (shrimp potato). It is in season from November through January. My neighbor gave me some beautiful Ebi-Imo, so I decided to make this dish for my family. I hope this idea helps 👍

Chicken Mince Simmered Ebi-Imo (Shrimp-Shaped Taro Potatoes) Recipe
Difficulty: Easy
Time: 30min
Number of servings: 4
Ingredients
600g (1.3lb.) Ebi-Imo (shrimp potato)
300g (0.7lb.) minced chicken
3 tbsp. green peas (cooked/frozen/canned)
salt
400ml Dashi broth
A
* 4 tbsp. soy sauce
* 2 tbsp. Sake
* 2 tbsp. sugar
* 1 tbsp. ginger juice
1 tbsp. cooking oil
B
* 1 tbsp. corn/potato starch
* 1 tbsp. water
Directions:
1. Peel and cut Ebi-Imo in bite-size chunks. Parboil in salted water to remove bitter taste then rinse to remove slimy texture. *When you use regular potato, this procedure is not necessary but it improves flavor.
2. Heat cooking oil in a pot, and cook minced chicken until no longer pink.
3. Add Ebi-Imo and Dashi stock, and bring to a boil. When it comes to a boil, remove the foam.
4. Add the seasonings (A), and cook until the potatoes are soft for about 10~15 minutes.
5. Stop the heat, add starch diluted with water, then heat again until thick.
6. Lastly, add green peas, and cook until hot.

芋頭糕:
材料:
芋頭1斤
迷你紫薯1個
蝦米3湯匙
臘腸4條
臘肉4兩
粘米粉160克
鹽1茶匙
水跟隨做糕盤的8成
處理:
1. 芋頭及紫薯刮皮。
2. 芋頭切條或切粒。
3. 紫薯切細粒。
烹調:
1. 白鑊中火爆香臘肉、臘腸及蝦米,放在碗中。
2. 放芋頭落鑊爆香,加入裝糕盤8成的水分,大火煮滾。
3. 滾起,熄火,焗5分鐘。
4. 焗了5分鐘,看看芋頭是否已焗腍。
5. 加入1茶匙鹽。
6. 加入臘腸粒、臘肉粒及蝦米。
7. 粘米粉,分3次,逐少落,每次大約落50克, 攪勻。
8. 芋頭基本上慢動作跌下就可以了。
9. 掃少許油在糕盤上。
10. 倒入糕盤。
11. 細力搖一下盤,釋出空氣。
12. 錫紙封盤。
13. 大火燒熱一鑊水。
14. 大火蒸芋頭糕1個小時。
15. 過了20分鐘,再加入一次滾水。
16. 再過了20分鐘,又加一次滾水。
17. 總時間蒸了1小時,完成。
Taro cake:
Ingredients:
Taro 1 catty
Mini purple sweet potato 1 No.
Dried sea shrimps 3 tbsp
Chinese sausage 4 slices
Preserved pork 4 taels
Rice flour 160g
Salt 1 tsp
Water 80% volume of taro glassware
Preparation:
1. Peel the taro and mini purple sweet potato.
2. Slice or dice the taro.
3. Dice sweet purple potato into small cubes.
Steps:
1. Fry preserved pork, Chinese sausages and dried sea shrimps in wok with no oil, then put in a bowl.
2. Fry taro in wok, then add 80% volume of tap water of the pudding pan. Boil up at high flame.
3. Turn off fire when boiling up with the lid for 5 minutes.
4. Already 5 minutes is over, see whether taro becomes soft or not.
5. Put 1 tsp salt into taro cake.
6. Add Chinese sausages cubes, preserved pork cubes and dried sea shrimps.
7. Rice flour, divide into 3 shares, put into pudding pan little amount by little amount, about 50g per each time. Mix well then.
8. It is OK when the mixture drops slowly.
9. Brush little oil on pudding pan.
10. Pour mixture in the pan.
11. Shake pan lightly, this will help to release air from taro cake.
12. Seal pudding pan with aluminium foil.
13. Boil up a pot of water at high flame.
14. Steam taro cake at high flame for 1 hour.
15. After 20 minutes, add more boiled up water into wok.
16. Another 20 minutes is over, add more boiled up water into wok again.
17. Taro cake has been steamed for 1 hour. Serve.

芋頭蒸排骨:
材料:
芋頭(細)1個
冰鮮排骨1斤
蔥1條
辣椒仔1隻
處理:
1. 冰鮮排骨,用鹽及生粉乸1分鐘,清水沖洗乾淨,擎乾水,用廚紙索乾。
2. 排骨,加入少許胡椒粉撈勻,去羶味。
3. 排骨調味:
a. 雞汁1湯匙
b. 生抽1湯匙
c. 糖1茶匙
d. 生粉2湯匙
e. 油1茶匙
撈勻,醃15分鐘。
4. 芋頭去皮。
5. 辣椒仔,切粒。
蔥,切粒。
6. 芋頭,洗乾淨,切厚片,放碟上。
7. 放排骨在芋頭上。
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸30分鐘。
3. 蒸好,灑上蔥粒及辣椒粒。
4. 完成,可享用。

Ingredients:

Green onion 1 No.
Red chili 1 No.
Preparation:

2. Steam pork ribs at high flame for 30 minutes.
3. Pork ribs have been steamed well. Put green onion and chili cubes on top.
4. Complete. Serve.
