Today is one of those my favorite day that we all gather together to do blind tasting, and the most favorite one & good value one will be chosen to imported by our company.
So in general before the tasting, I don’t like to search what are the producers and what style of the wine we should be expecting as I don want to have any pre-assumption by the marketing or by how big is the producer. I don’t even focus on the color of the wine, cuz all I want to focus on is the notes on the nose and the palate.
And WOW. Here comes my grand cru wine...PURE pure yet CONCENTRATE juice on your palate…linger for so long that I was pretty confident this must be it and it will show more after few more years...
Hey, I’m not saying you can not drink right now as the layer between red & black fruit and vanilla is all gently showing… but I would wait.
While you are waiting, get yourself glass of his 1er cru “Les Sorbets”. I do think 30min breath from the bottle will show the best out of the black, ripe, dark fruit layer with subtle spice.
And I want to make a point that I LOVE THE JUICE ON MY PALATE! His style is concentrate yet pure, you feel the little touch of sth make your palate feel so light and gentle.

通常公司內部的盲飲,我是不喜歡先前做功課的,因為不想要要預設立場,我甚至不會專注在葡萄酒的顏色,只會認真的“吸取”葡萄的味道,和”咀嚼“葡萄汁~
今天想跟大家介紹的這位釀酒師,Domaine Olivier Guyot, 坦白講我也對他不熟悉,但是OMG,超級喜歡他的style,你可以感受到葡萄汁的集中(中文變得好爛不知道怎麼說),以及那種空靈的啜飲感~
他的特級園 18 “Clos de la Roche”絕對是可以再放個5年以上,也可能才會達到最好的品飲時間,現在喝不是說不可以,只是會有點浪費~所以在等待的同時,推薦大家可以喝他的一級葡萄園 18 “Les Sorbets” 這款酒是比較陽剛款的,果香味很濃厚,但是口感很清爽~建議打開瓶子讓酒呼吸個15-30分鐘再喝~~

Thai Red Curry Chicken Wings
Ingredients:-
Chicken Wings ........................10 Pcs
Walnut .....................................12 Pcs
Dried Red Chili ........................15 Pcs
Lemongrass (Grated) .............1.5 Stalks
Lemongrass (Finely Sliced) ...1/2 Stalk
Lime Leaves ............................10 Pcs
Lime Leaves (Finely Sliced)... 1Pcs
Flour .........................................1Tbsp
Tapioca Flour ..........................1 Tbsp
Corn Syrup ...............................1 Tsp
Marinades:-
Fish Sauce .............. 1Tbsp
Red Curry Paste .......1 Tbsp
Sugar... .....................1Tsp
Cooking:
1. Pre-Mix the Marinades and add to the wings. Let it marinates for 10 mins
2. Heat up a pot of oil, fry the Dried Red Chili, Lemongrass (Grated), Lime Leave and Lemongrass (Finely Sliced).
3.Wash the Walnut with hot water, drink and dry well before fry in oil. After fry, add Corn Syrup to the Walnut and mix well.
4. Add Flour and Tapioca Flour to the Wings. Fry for two times, use higher temperature in second fry.
5.Mix with Walnuts, Lemongrass and Lime Leaves. Serve and Enjoy!

Korean Spicy Chicken Stew
Ingredients:
Drumsticks.....................500g
Chicken Thigh................350g
Carrots...........................1.5Pcs
Onion..............................1.5Pcs
Potatoes........................2Pcs
Korean Green Pepper.........Few
Red Pepper..........................Few
Spring Onion.......................Few
Sesame Seed.....................Few
Marinades:-
Korean Gochujang............3 Tbsp
Korean Soy Sauce.............3 Tbsp
Korean Chili Flakes...........2 Tbsp
Korean Muhak Soju..........2 Tbsp
Corn Syrup.........................1.5 Tbsp
Sesame Oil.........................1.5 Tbsp
Garlic (Minced)..................1 Tbsp
Dried Anchovies And Kelp Stock..........900 ml
Dried Anchovies And Kelp Stock:-
Dried Kale......................................................... 3 Pcs
Dried Anchovies
( Heads and Digestive Tissues Removed)......10 Pcs
Water .................................................................1L
Cooking:
1. Soak the Chicken in salty water ( 1L Water and 1 Tsp Salt) fro 20 mins. Drink and Dry.
2. At the mean time, prepare the Dried Anchovies And Kelp Stock, cook for 7 mins. Remove the anchovies and kelp for clear stock.
3. Pre-mix the Marinades and then mix with the Chicken.
4. Cook the Chicken in the Dried Anchovies Stock in medium low heat for 20 mins with cover on.
5. Add Carrot, Onion and Potatoes. Cook in medium low heat for another 20 mins with cover on.
6. Add Korean Green Pepper, Red Pepper and Spring onion. Cook for 2-3 mins.
7. Add Sesame Seed well before serving. Enjoy!
