Chinese Yam Cake
Bahan-bahan
500g yam (dikupas)
50g udang kering
8 cendawan shitake kering
Bawang merah 120g
Minyak 100ml
1 sudu teh lima rempah ratus
1 sdt garam
½ tsp lada putih
1 sudu kecil kicap cair
Tepung beras 200g
800 ml air / stok (dari rendaman cendawan)
50g kacang goreng
Bawang putih dicincang 30g
Cili 15g cincang
Arahan
Rendam 50g udang kering dalam air panas selama 30 minit
Rendam 8 cendawan cina kering di dalam air selama 30 minit
Kupas 1-2 biji (500g) ubi keladi - Potong kiub kecil
Tos kan udang kering & cendawan dan cincang (simpan stok air rendaman)
120g bawang merah hiris nipis
Panaskan minyak 100ml
Masukkan bawang merah dan kacau sehingga masak, keluar dan tos kan
Dengan baki minyak di dalam kuali, tambahkan ubi dan kacau goreng sehingga lembutkan
Pindahkan ubi ke mangkuk yang besar, kemudian masuk kan 1 sudu teh lima rempah, 1 sdt garam dan Dan ½ sudu teh lada putih
Baki minyak di dalam kuali, masukkan udang dan cendawan dadu.. goreng..
Masukkan 1 sudu kecil kicap ringan dan kacau sehingga harum. Angkat dan campur kan dalam campuran ubi dan masukkan separuh bawang goreng td.. ketepikan
Ayak 200g tepung beras
Tambah air / stok 800ml (dari rendaman udang dan cendawan) ke kuali
Kacau dan masak sehingga adunan menjadi likat
Masukkan campuran yam dan kacau dengan baik
Sadur minyak dulang dalam / timah dan tuangkan adunan itu
Stim selama 45 minit
Untuk hiasan dan perasa tambahan - tabur bawang goreng, kacang goreng, daun bawang dan cili cincang
Biarkan kek kuih yam selama sekurang-kurangnya 1 jam sebelum di hidang kan..
