{Recipe below} 红槽烧鸡 Braised Red Glutinous Wine Lees Chicken
Made this hearty dish with @wricewine nutritional wine lees ($11.90) that’s handcrafted by the third generation of a rice wine artisan family. It’s so fragrant and yummy! 👍 For those unfamiliar to wine lees 紅槽, it’s a nourishing ingredient and a by product of wine-making, commonly used by mid-wives in post natal recovery (很補的喔) due to the natural red yeast being able to improve digestion, promote blood circulation and lower cholesterol. The rice wine ($19.90) is all-natural and pure with no added sugar or preservatives and gluten-free.

{RECIPE-serves 2-3// this recipe does not call for sugar, water or any starch mixture}
2 chicken drumsticks (skin on)
Ginger slices (as preferred)
2 tbsp @wricewine 紅槽
1 bowl of Shaoxing Wine
1 Tbsp mirin
Spring onion 1 stalk
1. Pan fry the chicken skin down without any oil until half cooked, add in the ginger slices to the oil to infuse flavors
2. Transfer the half cooked chicken to chopping board, cut into chunks and return them to the pan. Add 2 tbsp of red wine lees (p.s. the redness increases as u fry) and stir fry well
3. Add Shao Xing Wine and cover to simmer and reduce the sauce for 10minutes. (No corn starch needed as there is natural starch in the wine lees)
4. Add in mirin and the chopped spring onions stalks. Stir fry for 15 secs or so. Garnish with chopped spring onion and served. 🍚

Is this @pdc_apec a beauty product or a food product? The latter definitely comes to my mind first. 😂 Technically speaking, I’m not entirely wrong since it’s really made of food extract.
If you are a 小红书RED user, you probably have seen the review of this PDC Wafood Made Wine Yeast Sake Kasu Mask, which was highly raved by Fan Bingbing.
I personally love its fuss free packaging. Simply squeeze out from the pouch, which is so easily accessible with no wastage. Simply store it in a cooling and dry place (no need to keep it refrigerated) after first use. I really thought it’s a food pouch at first glance as it looked exactly l like the food pouch that my daughter eats.
The creamy texture makes it very easy to apply on my skin. I like it that it really stay on my skin without me worrying that it will drip. I personally hate masks that keep dripping liquid into my eyes.
It was recommended to leave it on for 5-10 minutes, but I personally prefer to leave it on for 20-30 minutes and it has visibly brighten my face after I washed it off, it doesn’t dry my skin even though I applied it longer. My skin also feel moisturised and soft.
You can use this 2-3 times weekly and with regular usage, your old keratine melanin will be removed making your skin bright and tender.

黑木耳红糟鸡酒
Red Yeast Black Fungus Ginger Chicken
A dish suitable for the whole family.
Black fungus helps to promote blood circulation, reduce blood fat, improve anemia and stimulate intestinal movement.
Ginger aids your digestive, immune and muscular health with its potent anti-inflammatory and antioxidant compounds.
Ingredients (for 6 pax)
1-1.5kg chicken chopped
350g Black fungus, soaked & tear into small pieces
65g ginger sliced
5 cloves garlic chopped
900g water
300g @wricewine Glutinous Rice Wine
150g @wricewine Red Yeast
25g Light soy sauce
1/2 tsp Salt
Steps:
Over The Stove
1. Marinate the chicken with @wricewine Red Yeast, light soy sauce and salt for at least 4 hours
2. Heat up the wok and fry the ginger till golden brown. Remove and set aside.
3. Using the same wok, fry the garlic till fragrance.
4. Add in black fungus and chicken. Fry till evenly and chicken slighly golden brown, add in ginger slice.
5. Add in water and cook for 20-25mins.
6. Add in W Glutinous Rice Wine. Remove when boiling.
7. Serve hot.
For Thermomix
1. Marinate the chicken with W Rice Wine Red Yeast, light soy sauce and salt for at least 4 hours
2. Put oil and ginger into mixing bowl. 8mins / 120 / Speed 1. Take the ginger and put aside.
3. With the same oil, put in garlic. 5mins / 120 / Speed 1.
4. Add in black fungus and chicken. 10mins / Varoma / Speed 1 reverse
5. Add in water. 20mins / Varoma / Speed 1 reverse
6. Add in W Glutinous Rice Wine. 5mins / Varoma / Speed 1 reverse.
7. Serve hot.
You can also use Red Yeast to cook with clams, chicken feet, mantou and fish.

梅花肉 500公克/pork shoulder 500g
黑豆瓣醬 60公克/soybean paste 60g
醬油 40公克/soy sauce 40g
細砂糖 120公克/sugar 120g
五香粉 1/2茶匙/Chinese five spices 1/2tsp.
紅麴粉 1茶匙/red yeast rice powder 1tsp.
米酒 2大匙/cooking rice wine 2tbsp.
B
水 100ml/water 100ml
作法:
1. 所有醃料材料混合拌勻成醃醬。放入梅花肉,均勻沾裹上醃醬。
2. 蓋上保鮮盒蓋,放入冰箱冷藏約2小時醃漬入味。
3. 烤盤鋪上一張錫箔紙(亮面朝上),擺上醃好的梅花肉,放入多功能燒烤機中,選擇【上下火、25分鐘】。
4. 烤至時間結束後取出,趁熱在表面塗上蜂蜜。
6. 靜置放涼再切片食用即可。

蜂蜜 適量/honey q.s.
醃料:
醬油 80公克/soy sauce 80g
蠔油 50公克/oyster sauce 50g
黑豆瓣醬 100公克/soybean paste 100g
細糖 300公克/sugar 300g
紅麴醬 50公克/red yeast sauce 50g
五香粉 1茶匙/Chinese five spices 1tsp.
紹興酒 60公克/Shaoxing wine 60g
作法:
1. 梅花肉切成厚約1.5公分的長條。
2. 所有醃料材料混合拌勻成醃醬。放入梅花肉,均勻沾裹上醃醬。
3. 蓋上保鮮盒蓋,放入冰箱冷藏約2小時醃漬入味。
4. 將醃好的梅花肉取出,放入蒸汽氣炸鍋中,選擇【蒸氣烤、烤雞模式、30分鐘】。
5. 烤至時間結束後取出,趁熱在表面塗上蜂蜜。(塗上蜂蜜表面不易乾、風味更香甜)
6. 靜置放涼再切片食用即可。

1.粉蒸五花肉
材料
五花肉 1200公克/pork belly 1200g
醃料:
甜麵醬 40公克/ sweet bean sauce 40g
辣豆瓣醬 100公克/ chili bean sauce 100g
蒜末 30公克/garlic 30g
薑末 15公克/ginger 15g
糖 1茶匙/sugar 1tsp.
米酒 2大匙/cooking rice wine 2tbsp
花椒粉 1/2茶匙/ Sichuan pepper powder 1/2tsp.
蒸肉粉 120公克/ flavored rice powder 120g
水 50公克/water 50g
香油 1大匙/sesame oil 1tbsp.
作法:
1. 所有醃料材料混合均勻成醃料。
2. 將醃料放在五花肉上,抹勻,放入冰箱冷藏醃漬1小時。
3. 水箱加滿水。將蒸盤放入氣炸鍋內鍋中,再擺上醃好的肉。
4. 蓋上鍋蓋,選擇原味蒸、手動設定30分鐘。蒸至時間結束。
5. 取出切片食用即可。
2.烤鹹豬肉
材料:
五花肉 1200公克/pork belly 1200g
醃料:
鹽 3茶匙/salt 3tsp.
糖 3茶匙/sugar 3tsp.
白胡椒粉 3茶匙/ white pepper powder 3tsp.
五香粉 1茶匙/ Chinese five spices 1tsp.
花椒粉 1/2茶匙/ Sichuan pepper powder 1/2tsp.
米酒 2大匙/ cooking rice wine 2tbsp.
作法:
1. 五花肉雙面各撒上醃料,抹勻,放入冰箱醃漬約一個晚上。
2. 水箱加滿水,將作法1放入蒸氣氣炸鍋中,選擇蒸氣烤、160℃、25分鐘,烤至時間結束。
3. 取出切片食用即可。
3.炸紅糟肉
材料
五花肉(1.5公分厚) 600公克/pork belly 600g
地瓜粉 適量/tapioca starch q.s.
醃料
紅糟醬 100公克/red yeast sauce 100g
蒜泥 30公克/garlic puree 30g
五香粉 1/2茶匙/Chinese five spices 1/2tsp.
鹽 1茶匙/salt 1tsp.
糖 1茶匙/sugar 1tsp.
米酒 2大匙/cooking rice wine 2tbsp.
作法:
1. 所有醃料材料混合均勻成醃料。
2. 將醃料放在五花肉上,抹勻,放入冰箱冷藏醃漬一個晚上。
3. 取出沾上適量地瓜粉,靜置返潮。
4. 將作法3放入蒸氣氣炸鍋中,選擇空氣炸、設定150℃、15分鐘。
5. 取出切片食用即可。
