認識低GI食物
唐太:「剛患上糖尿病,醫生說要注意食物的升糖指數,是否要吃無糖的食物?」
CheckCheckCin:「升糖指數」(Glycemic Index,簡稱GI)是量度各類含碳水化合物(醣質)食物在進食後對血糖影響程度的數值,食物中的碳水化合物在消化道分解後,會轉化成葡萄糖進入血液,血糖會因而上升,各種食物的轉化速度不一樣,高GI的食物較容易消化而轉化成葡萄糖,一般都是纖維含量低、精緻度高、較為稀爛的食物,例如白飯、粥、麵包、蛋糕、南瓜、薯蓉、果汁、砂糖等,故進食後容易出現高血糖情況;而精緻度低、富含膳食纖維、蛋白質的食物大多屬於低GI,例如糙米、燕麥、全麥麵包、意粉、蘋果、粟米、白扁豆、紅腰豆、牛奶、乳酪等,延長飽足感時間,有助控制血糖。
從中醫角度來看,低GI食物多為粗糧,故建議平日多食用,包括全穀類食品,例如燕麥、藜麥、蕎麥、小米、粟米、五穀米、全麥麵粉等;要注意烹調時間越長GI值亦越高,食物越軟爛,消化時間就越短,血糖會升得較快。

Get to know low GI foods
“I was recently diagnosed with diabetes, and the doctor asked me to take note of the Glycemic Index of the foods I eat. Does that mean I have to start taking sugar-free foods?”
CheckCheckCin: Glycemic Index (GI) is used to measure the effects of carbohydrates (sugars and starches) on blood sugar levels. Once the carbohydrates enter the digestive tract, they will be broken down into glucose that can enter the bloodstream, causing an increase in the blood sugar levels.
Different foods will convert to glucose at different rates. Foods with higher GI can be digested and turned into glucose more easily. They are normally lower in fiber, high in refined carbs, and are easily mashed. These include rice, porridge, bread, cake, pumpkin, mashed potato, fruit juice, and sugar. They might cause blood sugar levels to spike.
On the contrary, foods with a lower GI have lower refined carbs and rich in fiber and protein. Some examples are brown rice, oats, whole wheat bread, spaghetti, apple, corn, white lentils, kidney bean, milk, and cheese. These foods can keep us full for a longer period. Hence, they are effective in controlling our blood sugar levels.
From the perspective of Chinese Medicine, foods with lower GI are generally coarse grains, and Chinese medicine practitioner recommend consuming them on a regular basis. These includes all types of whole grains such as oat, quinoa, buckwheat, millet, corn, grain rice, and whole-wheat flour.
Do note that the longer you cook these foods, the higher the GI readings you will get, as they become mashed. This will also shorten the digestion time, causing the blood sugar levels to rise.

有朋友問我今年打算食哪款純素月餅?說真的,很開心看到今年多了很多純素月餅選擇 👏 不過,在食素前,我最愛的月餅是冰皮系列,因喜歡它像雪糕 😁 剛好今年認識到「純生素月餅」,即不經高溫烤焗,零膽固醇,無蛋奶,無麩質,無白麵粉,無精製糖的超級月餅 😂😂😂 而且一樣是冰皮!正啊!
圖中看到的並不是純生素月餅,而是純生素蛋糕,其實和純生素月餅也是同一系列,不經高溫烤焗!這小店今年只做了極少量純生素月餅 (我已率先試食過,真的.. 太好食喇!) 買唔到純生素月餅的話,極力推介這款蛋糕呢!正過傳統冰皮月餅 😉
結合雪糕與芝士蛋糕入口即融的綿密口感,濃郁順滑的質地是來自於天然腰果及有機椰子油!一件都幾飽肚,口味又夠創新,最重要零負擔啊,今年中秋,食多多都唔怕肥啦 ✌️ (看上去都有幾分似月餅,幾可亂真啊 🤣🤣)

Some friends asked me which vegan mooncake I plan to eat this year? Seriously, I’m very happy to see that there are many more vegan mooncake choices this year. However, before being vegan, my favorite mooncake is the iced series, because its texture likes ice cream 😁 But this year I found "RAW Vegan Mooncake", that is a super mooncake without high temperature baking, zero cholesterol, dairy free, gluten free, no white flour, no refined sugar 😂😂😂 and it is iced! nice!
What you see in the pictures are not mooncakes, instead they are raw vegan cakes. In fact, it is the same series as the raw mooncakes, which is not baked at high temperature! This little shop only made a very limited amount of raw vegan mooncakes this year (I have tried it, it is soooo good!) If you can’t find raw vegan mooncakes, I highly recommend this raw cake! Much better than the traditional iced mooncakes 😉
Combining the creamy texture of ice cream and cheesecake, the rich and smooth texture comes from natural cashew nuts and organic coconut oil! One piece is quite full, and the taste is innovative enough. The most important thing is zero burden. In this Mid-Autumn Festival, you can eat a lot without being afraid of getting fat✌️ (They look like mooncakes actually 🤣🤣)

It’s been a long while since I had any memorable matcha lattes and I must say these brews from @matchafanatik are totally delicious and satisfying. Made with high-quality Kyoto matcha and vegan milk, these lattes are refined sugar free but not overpoweringly bitter. Both versions are good but i prefer the Matcha Oatlatte ($8.80) to Matcha Soylatte ($7.80) as the matcha taste is slightly more distinct. It’s currently out of stock but they will be back soon

純素、無麩質、無精製糖 的一人份甜品,這次是教人懷念的小點心——布丁。無雞蛋卻有淡淡的豆奶香氣⋯⋯吃完一個也不夠呢。

Vegan caramel vanilla pudding
Serve 1
Preparing time 15 minutes
Ingredients /
(Pudding)
220mL Unsweentened Soymilk
5g Arrowroot powder
1g Agar agar
15g Maple Syrup
1/2 tsp Pure vanilla extract
1/2 tsp Dark Rum
(Caramel sauce)
25g Organic coconut sugar
15g Water
Instructions /
1. Whisk together soymilk, arrowroot powder and agar agar until smooth.
2. Add maple syrup, pure vanilla extract and dark rum into the mixture. Mix well.
3. Heat the mixture until simmering. Let it boil for 1 minute.
4. Carefully pour the mixture into the mould. Cover it in clingfilm & place it into the fridge for at least 4 hours to set.
5. Make the sauce: Add the coconut sugar to a saucepan with the water. Melt until its golden.
6. Remove the pudding from the fridge and serve with the caramel sauce. Enjoy!

【純素焦糖雲呢嗱布丁】
1人份
準備時間:15分鐘
食材 /
(布丁)
220毫升 無糖豆乳
5克 葛粉
1克 寒天粉
15克 楓糖漿
1/2 茶匙 純雲呢嗱油
1/2 茶匙 蘭娒酒
(焦糖醬)
25克 有機椰糖
15克 水
做法 /
1. 將豆乳、葛粉和寒天粉放入鍋中,攪拌均勻。
2. 加入楓糖漿、純雲呢嗱油和蘭娒酒。
3. 以中火熬煮布丁的材料,煮滾一分鐘後熄火。
4. 將材料倒進布丁模具中,然後放進雪櫃,冷藏至少四小時至凝固。
5. 準備焦糖醬:將糖和水放進鍋中加熱,以小火煮至濃稠和金黃色。
6. 將焦糖醬淋在純素布丁上,即成!

One Direction イギリスにちなんでカップケーキは
紅茶フレーバーにしてみました。
香りがいいので、アールグレイやダージリンを
チョイスするとベストです!

*Recipe*
1.Break tea leaves with a rolling pin.
2.Add 1tsp(4g) baking powder into 200g of cake flour and sift together.
3.Add 70g very-refined sugar and 1tbs(21g) honey into 100g salt-free room temperature butter ,and mix well.
4.Beat 2 eggs that returned to room temperature. Add in 3 steps and mix well each time.
5.Add the broken tea leaves (1).
6.Add and mix one third of the prepared flour (2).
7.Add and mix one third of 70cc fresh milk.
8.Repeat step 6 and step 7, and mix lightly.
9.Flow it into a mold.
10.Bake about 35 minutes in oven preheated to 170 degrees Celsius.
11.If nothing come attached to the inserted bamboo skewer, it is baked up.

*レシピ*
1.準備をします。
ティーバックの茶葉は、袋の上からめん棒を転がして、
細かくしておく。
2.薄力粉200g、ベーキングパウダー小さじ1(4g)を
合わせてふるっておく。
3.室温にもどしておいた、無塩バター100gに上白糖70g、
はちみつ大さじ1(21g)を加え、よく混ぜる。
4.室温にもどしておいた 卵2個を溶きほぐし
3回に分けて加え、その都度、よく混ぜる。
5.1の紅茶の茶葉を加え混ぜる。
6.2の粉類の1/3を加え混ぜる。
7.牛乳70ccの1/3を加え混ぜる。
8.6、7を繰り返し、さっくりと混ぜる。
9.型に入れる。
10.170度に予熱しておいたオーブンで35分ほど焼く。
11.竹串をさして何も付いてこなければ、焼きあがりです。
12.完全に冷めたら、マジパンで飾る。
