When I met Charlene in 2000 online, playing bridge, she was a successful businesswoman. She ordered lots of French and Italian products online to ship to Taiwan, she tried everything, she ate anything, any part of any animal, any fruit or vegetable, food was an important part of her life. The moment I first met her in real life in 2000 to me she looked like a movie star. In 2007 this girl chose to give up her life, her best friends we consider family, her work and sold her apartment in Taipei to live with me. I told her: From now on you will be on a Holiday for the rest of your life and I kept my promise.
Charlene wanted to mean something in Holland and started to create a new personality in a blog, not using her fame from Taiwan. She slowly built it up from nothing and today has more than 213.000 loyal fans and followers in several groups and platforms. Charlene has always been interested in travel and European food and her dream after retirement was to become a writer and live in a house in a European country with a slanted roof, preferably in France or Italy. We lived in a not bad apartment in Holland with a flat roof which she loved so much, home sweet home.
In Holland she started to write cooking books, after she became more famous, she was asked by several publishers to translate books: Nigella Lawson, Jamie Oliver and Gordon Ramsay for instance. She has been doing this even when she was on heavy chemotherapy in hospital, even just before the end she was correcting the last version. We traveled to many places, randomly picked, just drove around, often not meeting any other person or car for hours. We stayed in beautiful apartments, mostly in small cities and villages or in the middle of nowhere. We saw beautiful things, ate fantastic food, lived life like a local, relaxed, but never a dull moment.
Charlene the truffle queen, my butterfly and I fought since October 2017 for more than three years. She has been in a sterile room alone in hospital for 6 months, we have been in quarantine for more than a year. At first it looked like we would conquer these horrible cancers. All Charlene wanted was a little luck this time, but to no avail. Charlene had a good heart and always meant the best for others, she worked hard, she was tough and sweet, she never complained, and she was happy with the little things in life.
From August 2020 we have been on our last two Holidays in Italy. Siena made her extremely happy, “My best Holiday ever” she said. Her dream was to go on a second Holiday and reach her next birthday, I was afraid that was quite optimistic. Charlene was disappointed we could not travel to the Luberon in the Provence in France, where we originally planned our second Holiday, where we had our first Holiday together in 2003. Unfortunately, the Dutch government suddenly declared many regions in France as “orange”, no go areas because of high Corona risks just after we booked. Spain was also on the list: A country I have never visited, and she wanted to show me, Spain was all orange.
Five things she accomplished, which earlier seemed nearly impossible: Our 20th anniversary May 1st, 2020 and two romantic long Holidays to Italy. The first to Siena, Italy and her favourite Val d’Orcia and the second to Stresa at Lago Maggiore, Italy where she was clearly weaker, but still immensely enjoyed the breathtaking views and the summery weather in September, where due to water problems we had to move, to Siena again, this made her feel at her second home, she was so happy! Recently she was a Dutch citizen for 12 years and moved to Holland 13 years ago. I dare/wish to think it was because she felt happy, safe and taken care of. Her final goal was her birthday (December 16th), unfortunately that was too optimistic.
We enjoyed, we dined, we cried, we laughed a lot, we cherished each other, we talked for many hours, everything has been said, no regrets. We were one. Charlene was worried for me to be and stay all alone and was sad for me losing her and I felt so sorry for all the things she missed out on, wished she would have stayed with us longer. We have been closer than ever before. I love her very much, she will always be in my heart, will miss her so much! I feel so lonely.
In the future I will go back to the places we have visited together. From the end of April till the beginning of June 2021 we planned, booked and paid an “after Corona, celebration / conquer cancer Holiday” in Italy. I now still want to go if Corona lets me, but that is “far” into the future, having learned from Charlene and all our past Holidays, I might change it slightly. We had planned so many things, so to all of you: Carpe Diem! Do not delay or postpone your goals, wishes or bucket list. I will keep her profile alive and try to post something now and then, I cannot always read all comments and reply to them, but rest assured, I will notice them. Hello friends! Today we're going to share with you how to make a classic Italian sweet buns: Maritozzi Con La Panna, sweet buns with whipped cream.
Maritozzi are gorgeous and delicious Italian cream buns. It's a kind of soft and light brioche style bun which is sliced in half, then filled with whipped cream! You can easy to get one in Rome's pastry shops or coffee shops. Usually people enjoy it with coffee for breakfast. Or even for afternoon tea.
Maritozzi buns are originally found in the Lazio region in Rome and date back to the Middle Ages. They're made with yeast, flour, egg, sugar, butter, honey, salt, and orange zest. There is a tradition that a boyfriend or future husband gives his lover these sweet cream buns as a sign of his love, or hides a ring inside the bun. So romantic. If you love cream buns, you need to try it. Enjoy :)

How to make Maritozzi Con La Panna
Maritozzi Con La Panna Recipe
☞ Yield: Serve 5
✎ Ingredients
bread flour 167g
unsalted butter 25g
granulated sugar 27g
medium egg 2
instant yeast 2.2g
salt 2.3g
honey 7g
an half orange zest
milk 45g
✎ Instructions
1. In a large bowl, add milk (room temp), a teaspoon of the total quantity of sugar and instant yeast and 15g of the total quantity of flour together, mix well to create a smooth paste. Cover with plastic wrap and let rest for 30 minutes in a warm spot.
2. Then add egg mixture, the remaining of sugar, honey and orange zest into the bowl, mix to combine.
3. Add the remaining of flour and salt, combine the ingredients, incorporating the flour bit by bit.
4. Transfer the dough to the work surface, the dough will be sticky but try not to add too much flour, a little is fine, just knead until it becomes a ball, it should come together nicely. You can use a scraper to collect the dough.
5. Add the softened butter, press the dough out in a way on the work surface to help blending the ingredients together, then scrape the dough back into the center, and continue to press the dough again until fully incorporated.
6. Next, use the slap and fold method to knead the dough, just pick up the dough and slap it down, then fold it over, and repeat again, until the dough is smooth and soft. You can also use a mixer for this procedure.
7. Place the dough ball in a bowl and cover with a plastic wrap in a warm place for about 2 hours or until doubled in size.
8. Turn the dough onto a work surface. Divide the dough into pieces of 55g for each. Degas them gently, rolling each bun into a small round shape. Place them one by one onto a baking sheet with baking paper. Cover with a tea towel or plastic wrap loosely, let them rise for 30 minutes in a warm spot.
9. When ready to bake, preheat the oven to 200ºC, brush the maritozzo with an egg wash and bake for about 12~14 mins, or until golden on top.
10. Once baked, let the buns cool completely.
11. Cut the bread in half without cutting through. Open slightly and fill with fresh whipped cream, and dust with icing sugar.
12. Enjoy.

6人分
材料:
食パン 12枚
溶き卵 大1個分
マヨネーズ 60g
プロヴォローネチーズ 9枚
ボローニャソーセージ 5枚
ハム 8枚
生ハム 12枚
ペパロニ 14枚
サラミ 16枚
酢漬のペペロンチーニ 100g
無塩バター 大さじ4
ガーリックパウダー 小さじ½
イタリアンシーズニング 小さじ½
作り方
1.大きなまな板の上にラップを敷き、その上に食パンを並べる。パンの右側のフチに卵液を刷毛で塗り、その上にもう1枚のパンの左側のフチを乗せて、上からしっかり押す。この作業を繰り返し、全部で横に4枚、縦に3枚の大きな長方形にパンをつなげる。
2.パンがしっかりくっつき合うように、麺棒を使って、パン全体を伸ばす。
3.マヨネーズをパン全体に塗ったら、パンの下から1/4辺りにプロヴォローネチーズを並べる。その上に、ボローニャソーセージ、ハム、生ハム、ペパロニ、サラミ、ペペロンチーニを乗せていく。
4.手前側から、サンドイッチをしっかりと巻いていき、巻き終わったら、ラップでしっかり覆う。冷蔵庫で30分冷やす。
5.オーブンを180度に予熱しておく。天板にクッキングシートを敷いておく。

Meat Lovers Sandwich Roll
for 6 servings
Ingredients:
12 slices sandwich bread
1 large egg, beaten
¼ cup mayonnaise (60 g)
9 slices provolone cheese
5 slices mortadella
8 slices ham
12 slices capicola
14 slices pepperoni
16 slices salami
1 cup peperoncini (100 g)
4 tablespoons unsalted butter
½ teaspoon garlic powder
½ teaspoon italian seasoning
Preparation:
1.Place a slice of bread on top of a piece of plastic wrap on large cutting board. Brush the right edge of the bread with egg wash and place the left edge of another slice of bread over the brushed edge, pressing together firmly. Repeat with the rest of the bread so you have a rectangle of 4 slices across and 3 slices down.
2.Using a rolling pin, roll out the bread so all of the pieces of bread are sealed together.
3.Spread mayonnaise over the bread, then arrange the sliced provolone across, starting about ¼ of the way up the bread. Layer on the mortadella, ham, capicola, pepperoni, salami, and peperoncini.
4.Starting at the bottom, roll the sandwich tightly, then cover snugly with plastic wrap. Chill in the refrigerator for 30 minutes.
5.Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
6.In a small bowl, melt the butter in the microwave for 1 minute, stirring every 15 seconds, or until fully melted. Mix in the garlic powder and Italian seasoning.
7.Transfer the sandwich roll to the baking sheet. Brush the outside with the garlic butter and bake for 18-20 minutes or until golden brown.
8.Let the roll sit for 5 minutes before cutting into thick slices.

カラメルの苦味と抹茶チーズケーキのような濃厚な味わい、そしてクリーミーな食感が最高の一品です。

抹茶のイタリアンプリン
400ml角型の耐熱容器 1個分
材料:
■プリン液
牛乳 100ml
卵 1個
砂糖 大さじ3
薄力粉 小さじ1
抹茶 小さじ1
粉ゼラチン 7g
水 大さじ1
クリームチーズ(室温に戻す) 100g
生クリーム 100ml
■カラメルソース
砂糖 大さじ2
水 小さじ1
熱湯 大さじ1
作り方:
1.カラメルソースを作る。深めの耐熱ボウルに砂糖、水を入れ、ラップをかけずに600Wの電子レンジで2分ほど加熱する。茶色くなったら鍋つかみをはめてボウルを揺すり、熱湯を加えてかき混ぜる。(カラメルが跳ねるので注意する。)なめらかになったら容器に流し入れ、冷蔵庫で冷やす。
2.プリン液を作る。ボウルに卵、砂糖を加えて溶きほぐし、薄力粉、抹茶を合わせてふるい入れ、ダマがなくなるまで混ぜる。
3.牛乳を加えてさらに混ぜ、ふんわりラップをかけて、600Wの電子レンジで1分30秒加熱する。取り出してなめらかになるまで混ぜ、再びラップをかけて20-30秒加熱してよく混ぜる。
4.別のボウルにクリームチーズを入れてなめらかになるまで練り混ぜ、生クリームを2回に分けて加え、その都度混ぜる。
5.(3)のボウルに(4)を3回に分けて加え、その都度よく混ぜる。ふんわりラップをかけて、600Wの電子レンジで1分30秒加熱する。
6.ゼラチンを水に振り入れて600Wの電子レンジで20秒ほど加熱して液状にし、(5)に加えてよく混ぜる。
7.(1)の型にプリン液をこし入れ、冷蔵庫で3−4時間冷やす。
8.皿の上に裏返して取り出したら、完成!

Matcha Italian Flan Made With Microwave!
Servings: 1 (400ml cake mold, microwave-safe)
INGREDIENTS
■Flan
100ml milk
1 egg
3 tablespoons sugar
1 teaspoon all-purpose flour
1 teaspoon matcha powder
7g gelatin powder
1 tablespoon water
100g cream cheese (at room temperature)
100ml fresh cream
■Caramel sauce
2 tablespoons sugar
1 teaspoon water
1 tablespoon hot water
PREPARATION
1. To make caramel sauce, microwave sugar and water in a large bowl for two minutes (600W). When browns, shake the bowl, add hot water and mix. (Make sure to use oven mitts! Its hot!) When smooth, pour into a microwave-safe mold and refrigerate it.
2. To make flan mixture, mix an egg and sugar in a bowl. Sift all-purpose flour and matcha into the bowl and mix until smooth.
3. Add milk and mix. Plastic-warp the bowl slightly and microwave it for 1 minute and 30 seconds (600W). Mix until smooth, then wrap it again to microwave 20 to 30 seconds. Mix well again.
4. In separate bowl, put cream cheese and mix until smooth. Add half of fresh cream into the bowl to mix, then pour the rest of cream to mix more.
5. Pour cream cheese cream mixture (4) into the bowl (3) slowly (1/3 of mixture at a time). Make sure to whisk well each time you add the mixture. Plastic-wrap the bowl lightly and microwave for 1 minute and 30 seconds (600W).
6. Sprinkle gelatin powder into the water and microwave for 20 seconds (600W) to let it dissolve. Add into the bowl (5) and mix well.
7. Pour cream mixture (5) into the mold (1). Refrigerate for 3 to 4 hours.
8. Unmold the flan onto a plate.
9. Enjoy!
