今早有看到天氣心裡就涼了一半,惱人的雨就這樣遍佈整個台北啦,我是真的很不喜歡下雨天,感覺連早餐都意興闌珊不想做呢...

今天的早餐真正開伙只有烤白蘆筍,其餘的食材都在前一晚都準備好了,但是昨天甩哥運動完實在太累,睡前煮完溏心蛋撈起泡冰水後在床上稍作休息就一覺天明了,還好蛋泡著沒事沒事的,反正已經熟了嘛😅

本次的溏心蛋煮得有好一些,但是距離我想要的感覺還是有點距離,不過對我而言都好吃啦,配上清甜的白蘆筍就是美味😋,等假日比較有空再做荷蘭醬吧,荷蘭醬的豐厚感配白蘆筍的甜嫩真的是絕配呢❤️

ROASTED CHICKEN W MIXED VEGETABLES (serves 2)
1. 2 Chicken Legs Quarter – 336Cals each
2. 2 Carrots, sliced – 50Cals
3. 1 head Broccoli – 98Cals
4. 1 Sweet Potato, sliced into cubes – 112Cals
5. 1 Red Onion, sliced – 46Cals
6. 6 Garlic Cloves, crushed – 27Cals
7. 1 tbsp. Olive Oil – 69Cals
8. 1 tbsp. Apple Cider Vinegar – 3Cals
9. ¼ tsp. Fresh Rosemary, chopped
10. ¼ tsp. Mixed herbs
11. Salt & Pepper to taste
Steps:
1. Pre-heat oven to 425°F/220°C.
2. Rub the chicken legs with olive oil. Season with fresh rosemary, salt and pepper. Set aside.
3. Next, make a bed for the chicken pieces by arranging the vegetables on the bottom of a baking dish. Season the vegetables with a little bit of olive oil, apple cider vinegar, salt, pepper, mixed herbs and some rosemary.
4. Transfer and arrange the chicken legs on top of the vegetables.
5. Bake for an hour or until chicken is cooked through.
6. Serve warm!

BAKED SALMON & ZUCCHINI (serves 1)
1. 1 Salmon Fillet - 416Cals
2. ½ Zucchini, halved lengthwise and thinly sliced – 9Cals
3. ½ cup Cherry Tomatoes, halved – 13Cals
4. ½ Lemon, slices, plus 2 teaspoons fresh lemon juice – 8Cals
5. 1 Garlic Cloves, minced – 4.5Cals
6. ¼ tsp. Rosemary, chopped
7. ¼ tbsp. Olive Oil – 17.5Cals
8. Salt & pepper to taste
Steps:
1. Preheat oven to 350°F/180°C.
2. Let’s prep the salmon. Marinade the salmon fillet with olive oil, salt & pepper, chopped rosemary and garlic clove. Gently massage the seasoning into the salmon and set aside.
3. Next, line a baking tray with tin foil. Then make a bed for the salmon fillet by arranging all the vegetables on the bottom of a baking dish and season with salt and pepper.
4. Place the salmon and drizzle with freshly squeezed lemon juice. 5. Seal it all in tightly. Place into oven and bake until cooked through for about 30 minutes.
5. Enjoy warm

AUBERGINE & BLACK BEAN RATATOUILLE (serves 4)
1. 2 Aubergines, sliced – 272Cals
2. 1 Zucchini, sliced – 33Cals
3. 1 tbsp. olive oil – 69Cals
4. 1 can Diced Tomato – 108Cals
5. 1 can Black bean- 316Cals
6. 1 Onion, chopped – 46Cals
7. 2 Garlic Cloves, chopped – 9Cals
8. 25g Grated Parmesan -108Cals
9. ¼ tsp. Cayenne Pepper
10. Salt & Pepper to taste
Steps:
1. Pre-heat oven to 220°C.
2. In a large bowl, season the aubergine and zucchini slices with olive oil, and salt and pepper. Set aside.
3. To make the sauce, mix together the diced tomato, black beans, onion, garlic, cayenne pepper and salt & pepper. Set aside.
4. Now let's assemble the dish. In a baking dish, arrange the aubergines and zucchini slices in a single layer.
5. Next, pour in a layer of the black bean sauce. Then top it up with another layer of aubergine and zucchini slices. Repeat until the baking tray is filled.
6. Finally, sprinkle with some grated cheese. Bake in the oven for 30 - 40 minutes until the top layer is golden brown. Serve hot.

⇨ Day 1
☆ Chocolate Protein Smoothie
2 TBS Tropeaka Lean Protein Powder
2 TSP Tropeaka Immunity
1 TSP Tropeaka Maca Powder
1 TSP Tropeaka Cacao Powder
6 ice cubes / almond milk
250 ml of almond milk
20g of Brazil Nuts
Banana (Optional)
☆ Burrito Bowl:
Beef (Porterhouse, Scotch Fillet, or Rump)
2-3 Tomatoes
1 Large Avocado
Button Squash
Sour Cream (optional)
Cheddar Cheese (optional)
Salad Leaves
1/2 Red Onion
1 Lemon
Corainder
First make pico de gallo. Chop up 2 tomatoes, 1/2 a red onion, some corainder. Mix them in a bowl and squeeze in 1/2 a lemon or 1 lemon.
Mash up your avocado and add the remaining lemon or lime. Your preference.
Chop up the steak into small cubes and fry it over stove with coconut oil. Season with salt and pepper.
Then just mix them all together in a bowl. Use your favourite salad leaves, or vegetables. I've roasted some squash here as well.
⇨ Day 2
☆ Matcha Protein Cleanse Smoothie:
1 TSP of Tropeaka Matcha
1 TBS of Tropeaka Vanilla Lean Protein Powder
2 TSP of Tropeaka Ultra Cleanse
Stevia (optional - I use a few drops)
Banana or your favourite fruits (Optional)
1/2 an Avocado
250ml Almond Milk/Coconut Milk
☆ Smoked Salmon Salad
Honestly I just mix everything together. I don't have measurements of this one.
☆ Kale, sweet potato and Roast Chicken
I rarely ever roast my own chicken anymore. I just buy them from the local charcoal chicken store.
I coat my sweet potato with some coconut oil and roast it in the oven for about 15-20 mins in total. Flip the sweet potatoes once.
For kale, i normally stir fry is quickly with some coconut oil and salt so that it's easier to digest.
⇨ Day 3
☆ Matcha Chocolate Truffle
200g of Cacao Butter
28g of Coconut Oil
80ml of coconut Cream
1 tsp of vanilla extract
Stevia/erythritol (To taste - you can add both)
For the coating:
Some matcha powder and erythritol (Swerve) - mix them together.
This is actually quite hard to make.
First melt the cacao butter and coconut oil slowly using a double boiler. Make SURE you don't burn the butter. You'll have to do it VERY slowly. I melt probably about 3/4 of the cacao butter then i chuck all the rest of the ingredients in the food processor and blend them together so that it is like a ganache texture. Not watery, more like creamy! Add your favourite sweetener. You can use coconut sugar, caster sugar, honey, maple syrup, etc. Then pop the mixture into a piping bag or a zip lock bag and squeeze them into an ice cream/ chocolate mold. Then freeze it for about 15 minutes or so, or longer.
Then take it out and let it rest for a while before you coat them!
☆ Prawn + Squash + Salad
I just roast the squash in the oven for about 15 mins. Coated with coconut oil and salt
For the prawns. Just fry it with some coconut oil, some tomato paste, salt, pepper, garlic, ginger and turmeric. Very easy.
⇨ Day 5
☆ Matcha Chia Seed Pudding (SUPER TASTY)
1 tsp of Tropeaka Matcha Powder
30g of Chia Seeds
50ml of Full Coconut Cream
70ml of Almond Milk
1 tsp of Vanilla Extract
A few drops of Stevia or Maple Syrup
Let it set in the fridge!
Taste sooooo GOOODDD!!! I love the pudding!
⇨ Day 6-7 recipes are really basic. I get the fatty king fish cuts from our local japanese grocery. Very GUD!

1) 1kg of pumpkin, roasted, peeled and cubed – 260Cals
*Option: Any other winter squashes.
2) 1 medium Yellow Onion, diced – 40Cals
3) 3 Garlic Cloves, minced – 15Cals
4) 1 tbsp Fresh Ginger, minced – 6Cals
5) ½ cup Coconut Milk – 267Cals
6) 3 cups Vegetable Stock – 45Cals
7) 1 tbsp. Olive Oil – 119Cals
8) 1 tsp. Curry Powder – 6Cals
9) ½ tsp. Cumin – 4Cals
10) ½ tsp. Turmeric – 4Cals
11) 1 tsp. Coriander Seed – 5Cals
12) 1 tbsp Fresh Lemon Juice – 3Cals

1) 1.5 cups Sweet Potato, peeled & diced into cubes – 171Cals
2) 1 can (15oz) Black Beans, rinsed & drained – 350Cals
3) 1 medium Yellow Onion, diced – 40Cals
4) 2 Garlic Cloves, minced – 10Cals
5) 1 tsp. Olive Oil – 40Cals
6) 1 tsp. Cumin – 8Cals
7) 1 tsp. Smoked Paprika – 8Cals

**You may add more vegetable stock depending on how thick you want your soup to be.
