@tiffinroomsg is rounding off a series of successful collaborations with an enchanting showcase of specially curated dishes and well-crafted cocktails from @elephantroomsg (4 courses + 4 cocktails - $118/guest). We definitely are no stranger to wine pairings but Indian cuisine paired with Indian-influenced cocktails? That might just be a first!
The first course sees a Crispy Fried Prawn with a sweet and spicy guava chutney and masala peanuts paired with “Buffalo Road” - a cocktail with Juniper spirit and pink guava. The cocktail was really good(my fave) and I absolutely enjoyed the textural contrast and explosion of flavours in the dish
The second course highlights an interesting ingredient - betel leaf. Expect the softest melt-in-your-mouth lamb kebab which has been minced 8 times over a span of 8-9 hours, on a delightfully crisp fried betel leaf, complemented by “Race Course Plantation” - a rum-based cocktail with sugar cane juice, coconut, and betel leaf. I’ve never been a fan of lamb but this was breathtakingly delicious! I don’t think I’ll ever find a lamb kebab this good!
Third course : Achari Murgh Curry, Madras Fish Curry, Dalcha Chop Masala, Paneer Pulao (in signature tiffin box) with plain, garlic and cheese naan. I’m a little sad that the Achari Murgh and Madras Fish Curry will not be available after this collaboration ends because they are insanely yummy. I rarely eat Indian food but I would kill for these two curries and the fragrant naan anyday! Will strongly urge you to give them a try before this menu runs its course (16 September). The accompanying cocktail “Mr Desker” (made with 2 Indian whiskies) was pretty strong when I first tried it but when I took sips of it in between bites of naan, rice, and curry, I realised that the cocktail actually tasted perfect. I was really surprised but I Guess that’s the beauty of food and alcohol pairing ! So much art and finesse!
And finally, a unique dessert of rice and milk dumplings cooked with Jaggery, paired with Sippin @ 78(Bru coffee rum, coconut kombucha & caramelised onions)
I don’t think you can get such an exclusive meal with 4 cocktails at just $118 anywhere else so make a reservation now!

我和友人談bitcoin談八卦談了3小時,喝了其中幾款:
🇹🇼Taiwan代表:Mum's Old Fashioned
用台灣的驕傲 Kavalan Whisky 噶瑪蘭威士忌,加入King's Ginger Liqueur 及調酒師自家製作的薑茶糖水,成為一杯感覺「養生」的雞尾酒。還有薑餅先生帶來驚喜!
🇯🇵Japan代表:Jan Ken Pon
名字是「包剪揼」的日文 じゃんけんぽん,和風茶杯入面的綠色雞尾酒看來像海帶湯!甜甜的味道由 house blend rum, Vanilla Syrup 及 Red Bean Liqueur 組成,再加 Matcha 及芝麻,就像瞬間到「京都」
🇬🇧United Kingdom代表:Hail Mary (milk-washed)
初入行做記者,第一次出差坐英航到德國經倫敦轉機(那年頭用BNO去歐洲要申請「神根簽證」),機上80%英國人都向空姐點 Bloody Mary,我印象中就將英國人與 Bloody Mary 劃了等號。這杯 Hail Mary 用了自家 Mary Mix 與 Lobster Fat-washed Vodka,看成份已想像到是鹹鹹地,好適合仍會大量流汗的9月份,好好補充體內電解質
🇻🇳Vietnam代表:COCO Ca Phe
越南令你一秒聯想到什麼?Pho?咖啡?老實說我已不能再喝極深焙及超長萃取的越南滴漏咖啡,會頭痛;不過這一杯有例外,因為用到自家 Spice Tea Vodka 加 Espresso Liqueur,再加Espresso及Cinnamon Coconut Ice,味道像椰子雪糕Affogato雞尾酒版本,甜蜜奶香與咖啡酒味很搭

嚟呢度一定要試下 #cocktails 🍸 3-7pm仲有happy hour🥳 推薦Ice Volcano,店員會即場燃點Rum酒,加上可愛嘅杯子,非常吸睛 🌋 飲品重果香,容易入口!Mr Toffee質感香醇幼滑,甜度唔會太高,入口酒味及咖啡香都濃郁平衡,唔錯☕️ #辣肉腸 用紅酒汁及蒜片煮,略嫌辣肉腸本身嘅咸香被醬汁遮蓋,不過真係好送酒。 #生蠔 好抵食,每隻未折都係~$30,生蠔新鮮肥美,海水味濃,滿足!我好鍾意食pasta,點咗Beef Ragu Fettucine,每條闊條麵都掛上肉醬,好惹味,如果闊條麵煮得彈牙d會更好😌 甜品揀咗香港比較少見到嘅 #Cannoli,Cannoli內餡嘅奶油香濃幼滑,甜而不膩😋

Bored at home? Let us bring Happy Hour to you – virtually!!
During this period, it is important that everyone stays home as much as possible. While travelling seems beyond reach, the Singapore Tourism Board wants you to experience @VisitSingapore by sharing locally inspired cocktail recipes that you can recreate at home.
Today’s recipe in our stay home series is a Kaya Toast Cocktail inspired by a drink from Bitters and Love. In our own rendition of the cocktail, we have used kaya, which is a traditional jam made from pandan, coconut and eggs. This olive-green jam most known as a spread on toast for a truly authentic Singaporean breakfast (the link to our kaya toast recipe below). Also in the mix are the Gula Melaka or known as palm sugar, and coconut cream. For this recipe, we will also be using the Dark Rum from Compendium, a homegrown distillery that produced the first and only rum made in Singapore.
Serve this cocktail with a slice of Kaya Toast on the side perfect for an afternoon tea. Cheers and we hope to see you when it’s safe to travel again!

Serving:
Ingredients:
45ml Dark Rum
2 bar spoon Kaya
20ml Gula Melaka Syrup
20ml Coconut Cream
Pandan Leaf
Steps:
Add Dark Rum, Kaya, Gula Melaka syrup and coconut cream into a shaker. Froth/stir and taste.
Add ice into a rocks glass. Add ice into the shaker, shake for 8-10 seconds. Strain into rocks glass with ice.
Garnish with pandan leaf and kaya toast on the side.
