RECIPE : Ham, Spinach and Mushroom Pasta with Basil Pesto
There is always a pasta pack in my kitchen cupboard. From a simple spaghetti served with tomato sauce to more elaborate baked dishes, cooking pasta can be quick and versatile. We cooked a simple pasta dinner over the weekends with cooked ham, pasta and some fresh greens from Huber's Butchery. The cooked ham is made in-house and only sliced upon purchase. They have other choices includes honey baked ham, kurobuta ham, smoked ham etc. To make life simpler, we also bought Pukara Estate’s basil pesto sauce which is rich and tasty. Do try the recipe when you are free! :)
Ingredients (2 pax)
· 3 cloves of garlic, thinly sliced
· a few sprigs of fresh thyme
· 100 g portobello mushrooms, sliced
· 100 g Huber’s Cooked Ham, shredded
· 300g penne
· olive oil
· 3 tablespoons basil pesto
· 100 g baby spinach
· some shredded Parmesan cheese
· 1 lemon, squeezed into juice
· some sea salt
· some black pepper
· 4 cherry tomatoes, halved
Method
1. Cook the pasta in a pan of boiling salted water and drain.
2. Heat a little oil in a large pan, sauteed the garlic until golden. Add the thyme, cherry tomatoes, mushrooms, sea salt and black pepper and stir-fry for 5 minutes.
3. Stir in the ham, and add basil pesto sauce.
4. Toss the pasta into the sauce. Add a little water to loosen, if needed.
5. Stir in the spinach, squeeze in the lemon juice and sprinkle some parmesan cheese before serving.
