📍 Pom Pom Island, Semporna
In the 12 years I have been diving in Borneo, Malaysia (some as a guest visiting but mostly while living there), I have come across several hundred sea turtles. Some I got to know well as we spent many hours underwater together and some I knew from passing.
All in all, I can safely say that no sea turtles are the same. Similar to cats & dogs, they all have their own distinct personalities and traits. Whilst some can be curious and friendly, some are a bit more stand-offish. Whilst some can be seen as vain (always cleaning the algae off their shell), some just can’t be bothered to care (dirty shells).
So for people to say that marine animals do not have feelings is just a completely ignorant and mindless fact.

Hứa Vĩ Văn thử nghiệm với chất liệu màu acrylic, ốc và sao biển, được gắn lên tranh với bột dính, keo và lớp phủ bóng. Dù anh hoàn thiện tác phẩm tại không gian làm việc Toong 188 Võ Thị Sáu chỉ trong vài ngày, Hứa Vĩ Văn đã dành một thời gian dài để thử nghiệm tại studio cá nhân để tìm được một quy trình vẽ chỉn chu và tự nhiên nhất.
Nhìn vào tác phẩm, chúng ta có thể thấy ba phần hiển hiện: trời, biển, đất. Trong đó, ốc và sao biển đại diện cho những sinh vật bình dị và vô danh, nhưng lại có vai trò lớn lao với thiên nhiên và sự sống bền vững của con người. \ Artwork description:
Mix media painting ‘Night Irene' is inspired by the island of Santorini, Greece - a place that represents the artist's peace of mind. Hua Vi Van experimented with acrylic, sea snail shells and starfish, which were attached to the painting with sticky powder and glue, finishing with a glossy coating. Although he perfected his work at Toong 188 Vo Thi Sau workspace in just a few days, Hua Vi Van spent a long time experimenting at his personal studio to find the most natural and thorough drawing process.
Looking at the artwork, we can see three parts manifest: sky, sea, earth. In it, the shells and starfish represent simple and anonymous creatures, which in turn have a great role in nature and immense impact on sustainable human life. In particular, when the issue of starfish being damaged by tourists is being strongly raised, ‘Night Irene', to a certain extent, becomes a poetic reminder.

「蒜香欖油煮蜆」Clams In Garlic Sauce
A Simple and Quick seafood recipe
Ingredients:
Large Clams ................................. 900g
Garlic Cloves (Chopped) ............. 6 Cloves
White Wine ....................................1/2 Cup
Extra Virgin Olive Oil ..................... 3 Tbsp
Pepperoncini ................................. 1 tsp
Black Pepper ................................. 1/3 tsp
Sea Salt ......................................... A Few
Parsley (Chopped) ........................ A Small Bunch

Preparation:
1. Clean the Large Clams with clean water. Then dry off the water on the shells.
2.Heat up a pan, add Extra Virgin Olive Oil. Stir fry the garlic on medium low heat to enhance flavor.
3. Add Pepperoncini And Clams. Stir fry a bit, then add White Wine into the pan and cook for one minute. Cover with lid and allow to cook until shells open.
4. Seasoning with sea salt, black pepper and parsley.
Enjoy!
材料:-
番薯蜆/蛤蜊...................900g (20隻)
蒜瓣(切碎).....................6瓣
白酒...............................1/2杯
特純橄欖油/
(Extra Virgin Olive Oil) ..3湯匙
辣椒碎...........................1茶匙
黑胡椒碎.......................1/3茶匙
海鹽...............................適量(可先試味,再決定)
番茜(切碎).....................1小束
做法:-
1. 把番薯蜆/蛤蜊的沙吐淨,清洗乾淨瀝乾備用。
2. 熱鍋下特純橄欖油、蒜頭碎,以中小火炒香至微焦黃。
3. 然後下辣椒碎、番薯蜆/蛤蜊入鍋略炒,注入白酒燒1分鐘,蓋上鍋蓋,煮至番薯蜆/蛤蜊開口,最後加入黑胡椒碎、番茜碎便可。
小貼士:-
煮好的番薯蜆/蛤蜊有天然的鹹鮮味,可先試味,再自行決定是否需要加一些海鹽作調味。(以這次為例,味道剛好,鹽的部分就可以省下)

Portuguese Garlic Shrimp by Jimmy’s Table
This is definitely one of our favorite dishes to eat in Portugal. We ate this in Lisbon, Algarve and Porto. Every restaurant that had this dish, we ordered it. My version is a more elevated version where I infused the olive oil with shrimp shells to give a powerful shrimp flavor blast! It also makes for a fantastic dip for crunchy French bread. What's best is that this dish is so easy to make! Hope you enjoy it!
Ingredients 食材:
0.5-1 kg of large red shrimps or langoustines with heads (大蝦)
1/2 cup (15 pieces) of Garlic - sliced (大蒜)
1 cup of Cilantro - leaves only (香菜)
2 lemons - halved and squeezed for juice, seeds removed (檸檬)
1-2 tablespoons of paprika (紅甜椒粉)
1 glass of white wine (白酒)
5-6 tablespoons of garlic infused olive oil (大蒜橄欖油)
Salt - for taste (鹽)
Finishing Ingredients 撒料調味:
1/2 lemon (檸檬)
1/4 cup cilantro (香菜)
Fresh loaf of crunchy french bread (法國麵包)
STEP 1
Cut garlic into slices.

STEP 2
To prepare the shrimp, we need to remove the shell without removing the head and tail. We do so by using a pair of scissors to cut down the spine of the shrimp from where the head meets the body upto one segment before the tail.

準備蝦子,將蝦殼身的部分剝除,保留頭跟尾巴,所以我們可以準備剪刀,從跟蝦頭連接的地方至蝦尾巴部分剪開。
STEP 3
Then start to peel away the shrimp shell and legs in the middle section. Be careful not to peel off the tail or head. Save the shells to be used to flavor the oil. Remove the dark, digestive tract along the spine, as this is dirty and you don’t want to eat it. Rinse with cold water to clean and drain.

接著剝除蝦子中斷的殼跟腳的部分,小心不要將頭跟尾巴去除了。記得將蝦殼留著,要來增加油的風味。接著也將蝦子的腸泥一併去除,並用清水簡單沖洗、瀝乾蝦子。
STEP 4
On the stove, add in 5-6 tablespoons of garlic olive oil until entire surface is covered with a layer of oil and heat up your pan. The shrimp and garlic infused olive oil will be used later to dip your bread in, so be generous!

STEP 5
When the oil is very watery in the pan, it is hot enough. On low to medium heat, add in shrimp shells to fry. The goal is the get all of the great shrimp flavors into the olive oil.

STEP 6
When the shrimp is fried, about 5-8 minutes, then remove and strain the rest of the oils from the shrimp shells.

Add in garlic slices to simmer and fry into the shrimp olive oil for about 30 seconds to a minute without browning the garlic too much.

Add in shrimp one at a time and ensure entire pans surface is utilized. Add 1-2 teaspoons of sea salt for taste. Evenly add in 1-2 tablespoons of paprika.

Add in 1/2 cup of white wine. Squeeze in a lemon. Cook for about 5-10 minutes until shrimp are fully cooked. This will depend on the size and thickness of the shrimp.

Be sure to taste the garlic shrimp olive oil sauce to see if you need to add in more salt, wine, or lemon juice. Towards the end, pour in another 1/2 cup of wine so that it will give it a more fragrant wine taste.

Lastly, add in the cilantro and stir in. We don’t want to over cook the cilantro.

For plating, you can either serve it in a pot or directly using a cast iron pan. Prepare some sliced french bread for dipping. Add in half a lemon. I used a torch to burn the lemon for a good lemon smell, but it can also be squeezed into the shrimp. Top it with some cilantro.

材料:
薯仔(大)1千克
粟米2支
甘荀1支
海蝦300克
調味料:
沙律醬大量
煉奶適量
幼鹽少量
處理:
1. 薯仔沖洗乾淨。
2. 粟米清洗乾淨。
3. 煲一煲滾水,蒸薯仔20分鐘。
4. 蒸粟米及甘荀10分鐘。
5. 蝦洗乾淨,煲大煲滾水,加入1茶匙鹽,放入蝦,熄火,焗5分鐘。
6. 倒去滾水,沖乾淨蝦仁,擎乾水。
7. 蝦,剝殼,放雪櫃雪1小時,抽乾水分。
8. 薯仔已蒸了20分鐘,熄火再焗10分鐘。
9. 薯仔已蒸好,倒去滾水,加入凍水,快速降溫。
10. 薯仔擎乾水。
11. 甘荀切粒,預備粟米粒。
12. 薯仔已攤凍,壓成薯蓉。
13. 加沙律醬,1茶匙煉奶,少許幼鹽,加入甘荀粒及粟米粒與薯蓉攪勻。
14. 放蝦仁在沙律上,放入雪櫃雪2小時以上。
15. 唧少許沙律醬在沙律上面,完成。
Sweet corn salad with mashed potatoes:
Ingredients:
Potatoes (large) 1 kg
Sweet corn 2 Nos.
Carrot 1 No.
Sea shrimps 300g
Seasonings:
Salad sauce large amount
Condensed milk appropriate amount
Salt little
Preparation:
1. Rinse potatoes.
2. Rinse sweet corn.
3. Boil up a pot of water, steam potato for 20 minutes.
4. Steam sweet corn and carrot for 10 minutes.
5. Rinse the shrimps. Boil up a pot of water, add 1 tsp salt, then put shrimps into boiled up water. Turn off fire and put the lid on top, leave it for 5 minutes.
6. Pour away water. Rinse the shrimps and hang dry.
7. Drain in refrigerator after shrimps have been removed shells.
8. Potatoes have been steamed for 20 minutes, turn off fire, leave them for 10 minutes.
9. Potatoes have been steamed well. Pour away water. Rinse with cold water to help cooling down faster.
10. Drain potatoes well.
11. Dice the carrot and get ready for the sweet corn cubes.
12. Potatoes have been cooled down. Get them mashed well.
13. Put salad sauce, 1 tsp condensed milk and little salt as well as carrot cubes and mashed potatoes. Mix well.
14. Put shrimps on top of salad. Refrigerate for at least 2 hours.
15. Squeeze some salad sauce on top of salad, serve.
