All vegetables everything on @chefvickylau’s new “Ode to Earth” menu at @tatediningroom. The menu features vegetables from the east and west, highlighting all parts of different vegetables from the seeds, leaves, bulbs, stems, fruits, roots, and flowers.
The first few bites included a green peas & sticky rice tartlet, century egg mimosa with tofu espuma, taro croquette with black truffle & mustard seed, and a warm broth made from 10 vegetables.
The “bulbs” dish featured a 9-year sweet lily bulb stuffed with “8 treasures” and mushroom sauce.
The “stems” course consisted of white & green asparagus with bamboo shoot chartreuse with fermented tofu sauce served alongside Chinese olive leaves focaccia with baby vegetables.

材料:熟木瓜1個、姬松茸3朵、新鮮百合1個、新鮮蓮子連芯80克、花生30克、桂圓肉11克、蜜棗2枚
做法:
1. 所有材料洗淨,木瓜去皮去籽切塊;新鮮百合剝開一瓣瓣備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

Papaya and almond mushroom soup with lily bulbs
Effects: Nourishes the blood and calms the mind. Relieves forgetfulness and improves sleep quality.
Ingredients: 1 ripe papaya, 3 blaze mushrooms, 1 fresh lily bulb, 80g fresh lotus seed with core, 30g peanut, 11g dried longan, 2 candied dates
1. Rinse all ingredients thoroughly. Cut peeled and seeded papaya into pieces. Cut open the lily bulb.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

麥米屬性偏涼,有清心除煩、養心安神的功效。適合心悸不安、失眠多夢等症狀。
粟米蓮子百合麥米湯

材料:粟米2根、紅蘿蔔1根、蓮子30克、百合30克、麥米20克、桂圓10克、紅棗4枚

Lotus seed and lily soup might help
Dealing with the pandemic can be very tiring and can take a toll on our emotional wellbeing and general health. Not being able to sleep well, constantly experiencing nightmares, and waking up in the middle of the night can cause us to feel more exhausted than ever.
From the perspective of Chinese Medicine, all these situations are symptoms of insomnia. Fatigue and excessive worrying would hurt the spleen and the heart, hence causing individuals to experience insomnia. It is best to start treating this sleep disorder when the condition is mild. Consume lotus seeds, lily bulb, dried longan, spine date seed and dwarf lilyturf, as these ingredients can calm the mind and improve your sleep quality.
Tip on the ingredients:
Pelted wheat – cool in nature, clears the heart and relieves irritability, can calm the heart and mind. It is suitable for individuals with heart palpitations, difficulty falling asleep and frequent dreaming.
Corn and lotus seed soup with lily bulb and pelted wheat
Effects: nourishes the heart and calms the mind, relieves symptoms such as insomnia due to irritability, poor sleep quality and excessive sweating.
Ingredients: 2 ears of corn, 1 carrot, 30g lotus seed, 30g lily bulbs, 20g pelted wheat, 10g dried longan, 4 Chinese dates
1. Rinse all ingredients thoroughly. Soak pelted wheat in water for 2 hours. Cut peeled corn into pieces. Cut peeled carrot into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt to taste.

Many would agree that when eating Hainanese chicken rice, their chilli is one of the most important aspects of what makes a good plate of chicken rice. While usually I prefer to have mine only with chicken rice dark soya sauce, Roland loves to drench his rice with lotsa chilli and he likes his chilli really really spicy. I also like adding ginger sauce to the chicken because it just helps to remove the greasiness of the chicken and gives a lot of 'freshness' to the entire dish.

Ingredients:
Ginger sauce
—-
60g of ginger - chopped finely (can increase to 90g for more ginger bits)
130ml of chicken stock
1 teaspoon of sugar
2 teaspoons of sesame oil
1 teaspoon of concentrated chicken stock
Chilli sauce
—-
10 pieces of chilli - remove seeds and cut into 1cm size
12 pieces of bird’s eye chilli (can reduce or add more depending on how spicy you like)
1 cup of chicken stock
2 bulbs of garlic
50g of ginger
Juice from 15 calamansi
3 teaspoons of sugar
1 teaspoon of salt
