👉先将锅内的清水烧沸,接着把生坯汤圆轻轻放入锅内,用勺子拌一下,以免粘锅,圆子上浮时,加冷水,反复两次,等汤圆都浮上来了,就可以出锅了。如果放在锅里不捞上来,太久就要糊。
👉如果想让汤圆更好吃,你不妨将汤水和汤圆分开煮,如果是甜馅的只要在汤水中略加白糖就可以了。如果是鲜肉等咸馅料,那汤料可以丰富一些,如蔬菜、紫菜等配料可以加在汤水中,把煮好的汤圆直接放在汤水中就可以享用了。
⛔❎不能不提醒的是:煮冷冻汤圆以前,若直接将汤圆放入开水中,结果就会外熟内生。原因:干粉放入热水中,外层迅速吸收热水而膨胀,水分就再也进不到里面,所以里面还是生的。而应该先放在冷水中,让汤圆吃饱了冷水,再放入开水中,这样就能均匀受热。
㊙㊙以下是煮汤圆的小窍门👇
👉轻轻捏,在汤圆下锅前,应用净手微捏汤圆,使其外皮上略有裂痕,这样下锅煮透后的汤圆里外皆熟,不会夹生,且软滑可口。
👉开水下,待水烧开后,把汤圆慢慢放入锅内,同时应随即用勺将其轻轻推开,朝同一方向略作搅动,使其旋转几圈,不粘锅。
👉慢火煮,旺火煮上片刻,待汤圆浮起后,迅速改用小火慢煮,否则会使汤圆在锅内不断翻滚,煮出的汤圆外熟里生不好吃。
👉点冷水,在煮汤圆的过程中,每烧开一次锅应同时点入适量的冷水,使锅内的汤圆保持似滚非滚的状态。开锅两三次后,再煮上一会儿,便可出锅食用。
👉勤换水,锅内的沸水连续煮过两三次汤圆后,即应及时换水。因为这时锅内的汤圆汤已变得稠腻,如果再继续使用下去,不但汤圆熟得慢,而且容易夹生。
👉及时煮,生汤圆的糯米粉中含水量较多,若将汤圆做好后久放,会出现变质现象,生汤圆受冻后再煮,还常会煮破皮子,影响外观。
👉快出锅,已经煮熟的汤圆若一时吃不完,应及时出锅,并将其置于洁净的冷开水中,待冷却后捞出装入盘中。(资料来源于网络)
