最近在研究米布丁,由於顧問了一間飯糰店 🍙
正是夏天,芒果滿街都是,逛一趟市場都能聞到飄散在街道上的芒果香氣🥭
不知要做什麼還是不自覺買了兩斤回來,後來想到芒果🥭,想到米飯🍚,接著又想到椰奶 🥥
於是,做一個 #芒果椰奶米布丁 的念頭就出來了
嘗試了幾次之後找到了黃金的配方
煮熟米飯1公斤
鮮奶 800公克
奶油 100公克
二砂糖 150公克
好的鹽巴 10公克
香草精 5公克
煮滾之後慢慢收乾,狀態跟很稀的燉飯差不多,煮好之後攤平倒在平盤上封上保鮮膜進冰箱冷卻約一小時(記得要平!)
接著切芒果丁,跟萊姆皮萊姆汁與少許五香粉混合
再來把一整罐 #小磨坊 的椰奶與削下來的芒果皮煮滾後,過濾取出的椰奶進冰箱冷卻
最後把冷卻好的米布丁與椰奶混合,接著加入100公克打發的鮮奶油即可與切丁的芒果一起擺盤🤙🏿🤙🏿🤙🏿

I still remembered when I was in London and I laid 7 pounds for a piece of way below average standard mango 🥭
Back here in Taiwan 🇹🇼 the quality of mango is amazingly nice, the fragrance of it is very unique from other fruits. And the sweet and sour taste of it is balanced and the texture is soft and it just melts in your mouth.
Anyway it really is sth that we Taiwanese expect on a hot summer day, we put it on shaved ice with condensed milk, make fruit tea out of it, layered cake with it and loads of cream.
Now I’m running a Onigiri 🍙 shop in Taipei and I was wondering wht kinda dessert can I make with rice. And the idea of this coconut milk rice pudding with mango popped right in to my mind.
I diced up the mango and mix it with lime zest & juice, and the secret is to put a sprinkle of 5 spice to give it that nice aroma. Rice is from the east part of Taiwan, short grain and stored in fridge for over an year. The. Simply boil with sugar/salt/vanilla/butter and cook just like risotto but a bit runny.
Then out in a tray and cooled to core temp at around 8-10 (easier to combine with whipped cream and coconut milk).
The skin and pit of mango I don’t waste, I boil with coconut milk to extract the mango flavor and then just combine cooled rice and mango together.
Simple but full of details, defoly worth a try 🤙🏿🤙🏿🤙🏿

Ingredients:
1/4 Cup of oil
1/4 Cup of condensed milk
1/4 Cup of milk
1/2 Tsp of vanilla extract (optional)
1/2 Cup of caster sugar
1 Cup of wheat flour (Sift)
1 Tsp baking powder
1/2 Tsp baking soda
Take 1 Cup of batter from above to prepare as follows:
1-2 Tbsp cocoa powder (I used 2in1 milo)
1 Tsp water
Oven baking time:
Preheated oven at 170 'C, bake for 30-45 mins.
(Check with a skewer until it comes out clean)

1 cawan tepung gandum
1 sudu teh baking powder
1 sudu teh soda bikarbonat
4 biji telur
1 sudu esen vanila
CHEESE LAYER
250gm cream cheese
2 sudu makan gula halus
1 biji telur
1 sudu makan tepung gandum
1 sudu makan air
** Pukul cream cheese dan gula sehingga sebati. Masukkan telur diikuti dgn air dan tepung. teruskan pukul dgn kelajuan sederhana sehingga semuanya sebati..
CARA-CARA MEMBUATNYA:
✔Masukkan koko, gula, susu cair, susu pekat manis dan minyak masak ke dalam periuk,kemudian Masakkan di atas api yang Pelahan sehingga larut dan ketepikan.
✔Dalam bekas lain, ayakkan tepung gandunm, soda bikarbonat dan baking powder.
✔Cara intan pulak intan blend je semua telur sehingga kembang dengan menggunakan blender. Biar dia nampak berbuih-buih keputihan.
✔masukkan telur yang di blend dan esen vanila kedalam bahan yg dimasak tadi kacau sampai sebati,Masukkan sedikit demi sedikit tepung gandum,soda bikarbonat dan baking powder yang diayak tadi.Kacau sehingga sebati dan jangan biarkan ianya berketul-ketul.
✔Panaskan pengukus dan biarkan air mendidih dahulu baru masuk adunan kak ke dalam bekas,intan guna bekas plastik je senang,
kukus separuh adunan kek coklat selama 20minit,kemudian masuk kan adunan cheese kukus selama 10-15minit kemudian masuk kan separuh adunan kek tadi kukus lagi selama 20-30minit,sejuk kan dah boleh makan😋

CHEESE LAYER

WAYS TO MAKE IT:
✔ Insert cocoa, sugar, liquid milk, sweet condensed milk and cooking oil into the pot, then Cook it on a Slow fire and put aside.
✔ In another container, ayakkan gandunm flour, bicarbonate soda and baking powder.
✔ Intan's way to blend all the eggs until it grows using a blender. Let him look bubble whitish discharge.
✔ insert the egg that is blended and vanilla vanilla into the ingredients that were cooked just now stir until mix, insert it little by little wheat flour, bicarbonate soda and baking powder that was joking just now. Stir it up and don't let it cut.
✔ Heat up the steamer and let the water boil first then enter the mix of sis into the container, intan only uses plastic containers easy,
Steamed half the chocolate cake mix for 20 minutes, then entered the steamed cheese mix for 10-15 minutes then entered the half of the cake mix just now steamed for 20-30 minutes, it's cold and you can eat it 😋

【Ingredients】5 DAISO pudding cups
1 Egg
20g Granulated sugar
350ml milk
30g Sweetened condensed milk
Vanilla extract a little
7g Gelatin powder
50ml water
30g brown sugar syrup
【材料】DAISOプリンカップ 5個
卵 1個
グラニュー糖 20g
牛乳 350ml
加糖練乳 30g
バニラエッセンス 少々
ゼラチンパウダー 7g
水 50ml
黒みつ 30g
【作り方】
①卵をボウルに入れてグラニュー糖を加えてよく混ぜます。
②牛乳をボウルなどに入れて約90℃まで温めて①に加えながらよく混ぜて練乳とバニラエッセンスとふやかして電子レンジで温めて溶かしたゼラチンを加えてこし器でこします。
③こしたプリン液をボウルに入れて氷水にあてて温度を下げます。
(プリン液が冷たくなったらOKです)
④プリン液を容器に入れてその上からそっと黒蜜を加えたら冷蔵庫で一晩冷やします。
⑤冷蔵庫から出したら底についてるツマミを折って容器から出します。
