每次過年總會發現一些全家都只會台語,沒人知道怎麼寫的食材⋯例如這個口感有點像栗子與黃豆的綜合體、台語發音「品彭」的食物,本名為「鳳眼果」,又稱蘋婆、羅晃子,外殼像大型的深紅色豆莢,黃色果實外還有一層黑色的殼,在植物界裡也算是長得蠻時尚的⋯根據醫藥百科,果實性甘,有溫胃、治腹痛的功效。
雖然不明白它跟鮑魚、白菜、獅子頭、勾芡之間的關係,不過也是順便長了知識。(除了獵奇長輩圖與麻將以外的小樂趣)
Always found new things in the new year dish that everyone knows how to pronounce in Taiwanese but don't know how do they written - for example this thing we found today: phoenix eye fruit, a fruit taste like chestnut mix beans (it also called Thai chestnut) sounds like "ping pong" in Taiwanese, which is grow in a dark red/brown pod with a black shelf outside the yellow bean. Sounds like a fashion icon in vegetable world.. lol
According to Chinese herbal medical encyclopedia, this fruit tastes sweet and able to cure stomach problems. Although I don't get the reason to cook it with abalone, cabbage and meatball, but it was fun to discover new interesting ingredients on the table.

This is a very simple recipe that you can put together in a rush. Better yet, it is very healthy and vegan. Use a variety of mushrooms like oyster mushroom, enoki (golden mushroom), shiitake, straw mushrooms or any other edible kinds that you can find in your region. It must be exciting to try out this dish in the fall after a mushroom harvest!

Ingredients
1 tablespoon minced garlic
3 tablespoon vegetable oil
1/4 cup tomato sauce
1/4 cup soy sauce
2 teaspoon sugar
1/4 teaspoon chili flakes
1 2/3 pounds (750g) fresh pho noodles
7 ounces (200g) various mushrooms, roots removed and separated or sliced2 shallots, thinly sliced
Salt and pepper
2 scallions, chopped
2 tablespoon roasted sesame seeds
1 tomato, sliced
Instructions
1. Heat a wok on medium, add 2 tablespoons vegetable oil and fry the sliced shallots till golden brown. Remove the fried shallots with a slotted spoon and transfer to a small bowl to use for garnish.
2. Into the remaining oil in the wok, add half the minced garlic and sauté till fragrant. Then add the tomato sauce, soy sauce and sugar. Stir well and simmer for 30 seconds till smooth. Add chili flakes if desired. Turn off the heat. Transfer one third of the sauce to a condiment bowl to serve as dipping.
3. Separate the noodles with your fingers and toss with the remaining sauce in the wok.
4. In a pan, add 1 tablespoon vegetable oil and sauté the rest of the minced garlic till fragrant. Add the mushrooms and quickly stir-fry for 1 to 2 minutes. Depending on the kinds of mushrooms you use, you might add the ones that take longer to cook first (like king oyster or beech mushrooms) and then the others like enoki (golden mushrooms) or straw mushrooms. Season with salt and pepper and take off heat.
5. Divide the noodles into serving plates. Top with the sautéed mushrooms and garnish with chopped scallions, roasted sesame seeds and fried shallots.
6. Serve with the tomato slices and the dipping sauce as the side.

This mung bean dessert is shaped into miniature size of various kinds of fruits and vegetables, such as chilies, mangosteens, oranges, mangoes, and carrots etc.. It is sweet, frageant and colorful. It is also popular in Thailand, where It is called Luk Chup meaning ‘lovely,’
As a finishing touch, a jelly is applied to coat the mung bean sweets to create a plastic look and texture. In the old days, this dessert is made for the king after meals in the palace. But now you can make this imperial dessert and enjoy them at home, too.
►Ingredients:

- 170g đậu xanh cà không vỏ (1 cup peeled split mung beans)
- 100ml nước cốt dừa (3.5 oz coconut milk)
- 30ml dầu ăn (2 tbsp vegetable oil)

►Ingredients:
1 tofu block, cut into ½ inch (1cm) thick steaks and wrapped in paper towels to remove the moisture
1 cup vegetable oil
1 carrot, julienned
1 teaspoon sugar
1 tablespoon vinegar
2 tablespoon minced scallion (white part only)
2 ounces (57g) dried woodear mushroom, soaked 15 minutes in hot water to rehydrate and cut into ¼ inch (1/2 cm) strips
1 1/2 teaspoon sugar
1 tablespoon vinegar
1 teaspoon mushroom seasoning powder
¼ teaspoon salt
10 scallions, green part kept whole and rinsed
2 sweet potatoes, steamed and cut into sticks in size of French fries
3 ½ ounces (100g) vegan ham, cut into sticks in size of French fries
3 1/2 ounces (100g) fresh herbs like mint, basil and perilla
7 ounces (200g) fresh rice vermicelli
1 pound (450g) mustard greens, rinsed
Sauce
4 tablespoon fermented soy bean sauce (Tương bần, or tương Cự Đà)
4 teaspoon sugar
1 tablespoon peanut butter
½ cup water
4 tablespoon roasted sesame
1 teaspoon minced chili
Directions
1. Fill a frying pan with 1 inch (2.5 cm) of vegetable oil and heat until bubbles appear around a chopstick standing into it (Oil temperature is about 375°F or 180°C).). Gently slide in the tofu steaks and fry till golden brown on both sides. Then remove and place on paper towel to drain off the excess oil. Let cool completely and cut into long sticks to the thickness of ¼ inch (1/2 cm)
2. In a bowl, combine half the julienned carrot with 1 teaspoon sugar and 1 tablespoon vinegar. Mix well and set aside.
3. Heat 2 tablespoon vegetable oil in a wok and sauté half the minced scallions (white part) till golden brown. Add the rest of the carrot and sauté for 1 to 2 minutes until soft. Then add the woodear mushroom, ½ teaspoon each of sugar and mushroom seasoning, and ¼ teaspoon salt. Stir well. Then add the tofu and toss to combine. Take off the heat and let cool.
4. Bring a saucepan of water to a rolling boil. Quickly blanch the green part of scallions for 30 seconds or until wilted. Transfer to a large bowl filled with ice water to stop the cooking process and maintain the green color. Drain and set aside
5. Arrange all fillings ready at the rolling station: the stir-fry, sweet potatoes, fresh herbs, vegan ham and rice vermicelli. Remove the thick part of the mustard leaf stems. Place one leaf on a flat surface witht the dark side facing down. Place a bit of each filling ingredient on top and roll it up. Use one leaf of the blanched scallion as a string to tie up the roll nicely. Repeat until finish. Place the rolls parallel to each other and trim off the rim to make them even in size.
6. To make the sauce, heat 1 tablespoon vegetable oil in a small saucepan and sauté the rest of the minced scallion (white part) till fragrant. Add the fermented soy bean sauce, sugar, peanut butter and water. Stir well and simmer for 1 to 2 minutes until smooth and thickened. Transfer to a serving bowl. Add the roasted sesame and mix well. Top with the minced chili for more heat and color.
