Homemade Vietnamese Beef Stew (Bò Kho). I enjoyed this amazing stew by dipping a fresh baguette to absorb all that flavor! ❤️🍲

♨️ Directions (serves 4-6):
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Marinate the beef
• Buy 3 lbs of beef (shank/brisket)
• Cut beef into 1 inch cubes
• Marinate beef with: 2 tsp sugar, 1 tsp salt, 1 tsp pepper, 2 tbsp bo kho powder (or five spice), 1 tsp chicken stock, 2 tbsp soy sauce, 1 tbsp grated ginger, 1 tbsp minced garlic
• Cover and marinate over night in the fridge
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2️⃣ Cook the beef
• In a pan, heat 1 tbsp vegetable oil and stir-fry 1 tbsp garlic, 4 stalks of lemongrass (cut into 3 inch pieces), 4-5 star anise, and 1 stick of cinnamon with the marinated beef
• Cook beef to medium rare and turn off the heat
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3️⃣ Make the soup
• In a pot, add the cooked beef, 1.5 cups of tomato sauce, 1.5 cups coconut water, and 6 cups of beef broth (or water, but it won't be as flavorful)
• Peel (4-5) carrots. Cut them into bite size pieces and add them to the pot.
• Cover and cook soup until the meat and carrots are tender. Adjust with salt/sugar/bo kho powder as needed.

**optional: cut the carrots into flowers just for fun (see highlights); also optional: sauté the carrots with: 1 tbsp oil, 2 tsp sugar, 1 tsp salt, 1 tbsp oyster sauce before adding it to the soup for more flavor.

4️⃣ Time to eat!
• You can garnish the soup with thai basil, peppers, fried shallots and/or sliced onion.
• Enjoy with a crunchy baguette, rice, or noodles. 👌🏻

越南魚露牛油雞翼 Vietnamese Butter Chicken Wings
Ingredients:
Chicken drumsticks - 5 Pcs
Chicken wings - 5 Pcs
Minced garlic - 1 Tbsp
60°N Fish sauce - 2 Tbsp
Sugar - 1 tsp
Black pepper - 1/4 tsp
Butter - 1.5 Tbsp
Tapioca starch - 2.5 Tbsp

Chris Wong Private Kitchen Cooking Channel
Preparation:
1. After cleaning the chicken wings and drumsticks, dry them with a kitchen towel.
2. Marinate the chicken with minced garlic (1/2 Tbsp), fish sauce, sugar and black pepper for 30 minutes.
3. Coat the chicken wings and drumsticks with tapioca starch. And let it rest for 5 minutes.
4. Deep fry the chicken 2 times to cook through. Using a high oil temperature for the second deep fry.
5. Heat up a frying pan with a small amount of oil. stir fry butter (1 Tbsp) with minced garlic (1/2 Tbsp).
6. Apply butter (1/2 Tbsp) on the surface of wings and drumsticks. Pour the sauce onto them before serving.

【越南魚露牛油雞翼】
材料:-
雞鎚.....................5隻
雞翼.....................5隻
蒜蓉.....................1湯匙
越南60°N魚露....2湯匙
糖.........................1茶匙
黑胡椒粉..............1/4茶匙
牛油.....................1.5湯匙
木薯粉.................2.5湯匙
做法:-
1. 雞鎚和雞翼洗淨瀝乾,然後加入1/2湯匙蒜蓉、魚露、糖和黑胡椒粉醃30分鐘。
2. 將已醃入味之雞鎚和雞翼平均地沾上木薯粉,然後待5分鐘讓雞鎚和雞翼回潮。
3. 把雞鎚和雞翼放入熱油鍋內炸熟拿出;然後調高油溫復炸拿出。
4. 鍋內下少量油燒熱,下1湯匙牛油和1/2湯匙蒜蓉炒香關火;把另外1/2湯匙牛油塗在雞鎚和雞翼表面再淋上蒜蓉牛油汁便可。

材料:
三黃雞 1隻(約2磅)
香茅 4-5條
南薑、生薑 各1塊
絲苗米 隨意
斑蘭葉 2條
蒜頭 2個
青檸 4個
泰國辣椒仔 隨意
糖 2茶匙
越南魚露 2茶匙
水 1/4杯
雞粉 1湯匙
鹽 1湯匙
做法:
1.雞洗乾淨用雞粉加鹽內外擦勻,室溫醃製1小時
2.蒸熟後冷卻,保留蒸雞汁煮飯,然後拆肉
3.米先洗淨,瀝乾水之後,用雞油或其他油先爆香香茅、南薑、蒜頭,然後加入米一齊炒
4.放入電飯煲以一份米比0.9水分的比例,用蒸雞汁加水,加斑蘭葉煮飯
5.煮熟後,將所有料頭取出,加入適量椰漿再煮
秘製醬汁:
青檸汁、蒜頭、辣椒、南薑、糖加水,用攪拌機打碎,加入薑茸用魚露調味
Hainanese Chicken Rice
Ingredients:
Yellow Hair Chicken 1 pc (Approximately 2 lbs)
Lemongrass 4-5 pcs
Galangal 1 pc
Ginger 1 pc
Jasmine rice Amount depends on personal preference
Pandan leaves 2 pcs
Garlic 2 heads
Lime 4 pcs
Thai chili Amount depends on personal preference
Sugar 2 tsp
Vietnamese fish sauce 2 tsp
Water ¼ cup
Chicken powder 1 tbsp
Salt 1 tbsp
Steps:
1. Clean chicken, rub chicken powder and salt on skin and inside cavity, marinate in room temperature for 1 hour.
2. Steam chicken. Once cooked, let chicken cool to room temperature and keep chicken drippings for the rice. Cut chicken into pieces.
3. Wash rice and drain. Heat pan with some chicken fat or other cooking oil. Sauté lemongrass, galangal and garlic cloves. Add rice and stir-fry.
4. Add stir-fried rice into rice cooker. Add water and chicken drippings using 1:0.9 rice to water/chicken drippings ratio. Add pandan leaves to cook with the rice.
5. Once rice is cooked, remove all ingredients except the rice. Then add coconut milk to the rice and cook again.
Special sauce:
- Blend lime juice, garlic cloves, Thai chili, galangal, sugar and water together. Season sauce with ginger paste and fish sauce to taste.

HOW TO MAKE :

- Fry a bit to get off the fat about 5 mins, you let the meat rest then fry the eggs until they get hard crunchy cover (Rán vàng các mặt để cháy bớt phần mỡ, sau đó rán trứng đến khi lớp vỏ giòn và chín vàng)
- Stir fry pork with dry onion and fish sauce to get the taste, add water and caramel, then eggs, you can add some coconut milk (optional) Xào thịt với hành khô và nước mắm để ngấm gia vị, sau đó cho đường thắng vào đun cùng với trứng, bạn có thể dùng cốt dừa tuỳ khẩu vị
- Cook until the sauce get silky (Đun cho đến khi nước sốt sền sệt )
- Enjoy with bread, rice or sticky rice (Ăn kèm bánh mì, cơm hoặc xôi)
