Porridge 🥣 represents ultimate comfort served up in a bowl for people of all walks of life. It’s relatively simple to make, warming and filling. A big bowl of porridge can help increase the running speed of your internal motor in the morning, help you unwind after a long tiring night or even cure your hangover after a night of heavy drinking. The beauty of porridge boils down to the different ways it could be made. It can be prepared sweet, savoury, thin and thick with toppings/condiments or without. This humble dish is best served warm, my favourite version of porridge would be “JUK” 粥congee. Besides being featured often as a breakfast dish served in Asian households, 粥 also being served as a main meal with the addition of meat & vegetables. Depending on which country & region you are from, the addition of toppings/ condiments range from pickled vegetables, eggs to even fermented tofu to add flavours to the congee. I don’t have any porridge selfie to celebrate World Porridge Day today but hoping these few snippets of Congee could express a little bit of the world I grew up in. I believe that we all grew up eating all sorts of savoury congee - from Plain, Spinach, Fish, Pork, ABC to 皮蛋瘦肉粥. The congee list is endless here and this is really the beauty of it. What may seem old is new again whenever there are new ingredients gracing the warm pot of congee. #WorldPorridgeDay #Porridge #CongeeForLife

In this episode, we went down to Hand in Hand Restaurant at Boat Quay to demolish a Dumpling Challenge! Hand in Hand is a restaurant that serves a variety of Chinese cuisine including Peking Duck and Fried Rice, but are renowned for their Xiao Long Bao and Dumplings. They have 2 outlets in Singapore, with the one at Boat Quay actually specialising in Peking Duck.
For this challenge, I ordered 10 servings each of their Dumplings and Xiao Long Bao, and told them to keep them coming. I started with the Dumplings, which were bigger than most dumplings I have had in Singapore. They were filled with shrimp and leek, with noticeable chunks of shrimp dotted throughout each dumpling. As they were fried, they were pleasantly crunchy on the outside while moist and juicy on the inside. The filling-to-wrapper ratio was very generous, which is particularly unexpected for such a large dumpling. Dipped in soya sauce, they were a treat to eat and I was relishing every bite.
Next, I tried their famous Xiao Long Bao. Steamed to perfection, each ball of joy was filled with a soupy, savoury filling that explodes in your mouth when you bite into them. As Xiao Long Bao are generally small in size, they easily fit entirely into your mouth and can be devoured quickly. Topped with soya sauce and ginger, they are the quintessential Chinese snack food suitable for most palates. Hand in Hand lives up their reputation of being an excellent Dumpling and Xiao Long Bao restaurant and my usually light-eating crew voraciously ate dozens of them.
Naturally, it became difficult towards the end even with the help I was getting, but this was one of the rare occasions where I enjoyed the bulk of the challenge and would certainly visit again for regular meal. This place would certainly be on my list of best Dumplings and Xiao Long Bao in Singapore.

" Today I’m going to tell you about one of the biggest, oldest traditional festival and has the widest popular range in Vietnam, which is Tet Holiday.
Tet marks (=celebrates) the arrival of spring and is the most important celebration in Vietnamese culture and it has the date falling in (which falls in) = takes place around late January or early February according to the Lunar Calendar.
Tết is also an occasion for family reunions. When Tet comes around the corner, most Vietnamese people return to their families to visit their family members, to worship at the family altar or visit the graves of their ancestors in their homeland as a sign of respect.

During Tet days people also visit relatives and friends to wish them all a happy new year. Local pagodas are popular spots as well, as people go there to wish for a better year to come for their families.
Tet holiday is the only occasion that people that people start forgetting about the troubles of the past year and hope for a better upcoming year. "

If you like Xiao Long Bao or Chinese Soup Dumplings but have problems (like us) mastering the right way to wrap Xiao Long Bao, we believe you will like our simplified method. Chinese Soup Dumplings or Xiao Long Bao in Chinese 简易版小笼包 is really yummy yummy. It's also extremely satisfying when the Xiao Long Bao turned out perfect - ie not broken and full of soup when you bite into them. Life is goooood! :-)

Makes about 12 - 15 dumplings (depending on how much meat you stuff in each dumpling)
Ingredients for collagen stock

400g of chicken feet (blanched)
300g of pig skin (blanched)
2L of water
1 thumb-size ginger - sliced
2 cloves of garlic - lightly smashed
1 tablespoon of chicken stock powder
Ingredients for meat filling

400g of minced meat
2 tablespoons of light soy sauce
1 tablespoon of sesame pil
1 tablespoon of Chinese white rice wine
1 tablespoon of fresh ginger juice
1 teaspoon of GoodSalt
A few dashes of white pepper
1 cup of collagen stock

About 20 pieces of ready-made Shanghai dumpling skin
A few pieces of baking paper
Some cooking oil
Some water
Black vinegar & julienne ginger (as dipping sauce)
