今天雖然休假,一整天卻也挺充實
跑去醫院探望外婆,跟堂弟打球,晚上跟家人吃飯聚餐,試著在創業期間擠出點時間陪家人之外
我滿~~腦子,還是想著接下來要在菜單上做的改變
而由於思考習慣的關係,我常常以英文去做各種思考
我想這受益於我上個專業 - 英文 的關係
最近由於健忘,所以習慣把自己自言自語般的思考過程記錄下來
紀錄完成後覺得這件事有點ㄎㄧㄤ
所以決定拿出來博君一笑,滿腦子想著食物的人到底是怎麼思考的

關於親子丼與漢堡排的故事

OYAKODON, a dish that known to every Japanese
and of course its popularity around the world shows the value and power within few ingredients
under the pressure of putting more items on the menu
This sensationally simple yet delicious dish came to my mind
But, how to make it a restaurant worthy dish, instead of most people can recreate in their house
IS a everyday issue to most chefs lol
So after couple of hours doing researchs online
A method sounds pretty sexy to me
Pre-poach your seared, still raw chix thigh in wings stock and flavor it with spring onion juice, while it set in the fridge, the gelatin from the cooking of wings seal all the fragrance and flavor
then all you have to do is to scoop out your chix and jelly while you get order, heat it up with some sweetened soy, finish it with free range egg
viola, Oyakodon that is perfect both for service side and flavor side,,,,amazing
and also i was thinking about rearranging the sequence that i do my tofu burger,,,
i used to simply smash the tofu with the mince, season it, shape it and cook it just above 65 degrees
finally, bagging it up with some teriyaki sauce and chill
while in service all i have to do is to take it out from 62 degrees water bath and heat it up with all the veggies
but you know, after smashing tofu with everything, you only get the soft texture from the end result - the whole patty
But
you dont get the soft texture from the tofu
so while i was brainstorming about this, sitting on the toilet in my house ( unfortunately im sorry
i was like, well
in order to get the texture from the tofu, i must not break it too much, but in the meanwhile i gotta try to combine it with the mince well enough to form a patty
So,,,
Instead of breaking the tofu with the mince
I can sear it first to get a bit of the water content out of it, then smash it gently with pork skin jelly ( sth that you boil the shit out of pork rind and you'll get gelatin like skin stock, then you dice it into cubes,,,)
then combine it gently with skin jelly, and just like making a scotch egg, you shape your patty into an one inch flat layer, then on the other hand you shape a ball of tofu/skin jelly mixture
then wrap it up and press it just like any other patty
so while you sear it in the pan, the jelly inside the patty will slowly melt and your burger will be fucking sexy and juicy
and to prevent from any juice leaking out in the cooking process
i might dust the patty with a bit flour before cooking
wishing that the flour will create a crust to encase all the juice inside,,,

thats how I loveee cooking lol
and funny things is that though my first language is Mandarin
But while i was thinking of food, most of the time it is English version lol

吾,玳瑚師父的看見,嚴格上來講,不單指,當年八方雲遊渡眾生的那一段歲月而已,而是到將來吾返回太虛前的種種看見。因此,這應該會是世間上,最長的「劇本」。(一笑)其實啊!吾撰寫「玳瑚師父的看見」,不是向全世界宣示,吾的那麽一點能力,主旨是告訴眾生,我們一生的成敗榮枯,跟我們的起心動念,有著不可分隔的因果。撰寫這文章,慈悲喜捨於眾生的同時,也警惕自己一定要常在禪定中,不要一失足成千古恨。恨是恨自己,沒有全力以赴的修行。
吾的其中一位門生,介紹她的一位女同事,來詢問吾的專業服務。這位女有情已婚,是位在職的女性,先生是高薪職員,她他倆育有一千金。她及她的千金名字,是由吾應她之請求,重新撰於她母女倆,出類拔萃的吉祥良名。後來我們較熟絡了,她就向吾透露些心事,吾也就傾耳聆聽,並給於她吾真心的慰籍與慧見。事情是這樣的,她的先生到了晚上,某個特定的時間,總是要出門。說實在的,結了婚有妻有女的男人,三更半夜一直往外開溜,在情在理真的較難說得過去啊!紙果然保不住火。原來是跑到別的女人的溫柔鄉也。
吾見她並無下堂求去的執意,就問她信不信風水,她回曰她信,她先生就不怎麼信。她其實也有意思,請吾到其位於黃金地帶的寓所,勘察勘察,看看到底是DNA出錯(一笑),還是陽宅出了差錯。立在她家門口,「還未亮劍」之時,她家裡頭的「不速之客」,即不善之靈,已早準備給吾一點顏色瞧瞧。真感恩傳承偉大,傳承大加持啊!要不然,恐怕吾將會有一段時日,無法服務眾生。在客廳中,吾一眼就得到答案,爲何已擁有美麗性感嬌妻的男人,三更半夜還跑到別的女人的溫柔鄉,且已到了無法自拔的地步。
吾,玳瑚師父,在此奉勸大家:勿將來歷不明的物品,帶回家擺放。在這婦人的客廳,吾看見有「靈氣」的木雕櫥櫃、含情脈脈的女子畫像、裸體打火機,等等。重點就在女子畫像及印有裸體的打火機。難怪吾在門口時,已覺察到屋內的邪氣。這屋子的男主人,淫念大動而迎來更多的邪氣,慾火焚身以外,更犯了淫戒,即邪淫也。據吾所知,犯邪淫不及時懺悔還淨者,死後會進入傍生(禽獸門),轉世成飛禽走獸,如:鳥、雞、豬、狗等等。五百劫後出生爲下等人,如:妓女、婢女、賤命之人等等。邪淫所生子女,也較容易沖犯。至於那些畫淫畫的人,未離世福田已削盡,死後或入蛆糞地獄,身臭無比,肚餓食蛆蟲,皮破血流、肚脹蛆出、全身腐爛而死。正心正念太重要了。

Strictly speaking, my sightings are not just from my past years of travelling in eight directions delivering sentient beings. It also encompasses what I see in the future before I return to the Ultimate Void. Thus, this should be the world's longest script! (laughs) Actually, I wrote this "The Sightings of Master Dai Hu" not to declare to the world that I have this little power. The main objective is to tell sentient beings that the rise and fall in our fortunes are karmically inseparable with our every thought and intention. When I wrote this article, it is out of compassion to benefit all sentient beings, as well as to remind myself to be always in a meditative state, and not take a wrong step only to end in eternal regret. Regret that I did not give my best effort in my spiritual cultivation.
One of my disciples recommended her colleague to engage my professional services. This lady colleague of hers was a working married woman. Her husband was a high-salaried employee. They had a daughter. I acceded to her request to give new outstanding and auspicious Chinese names for herself and her daughter. As we got to know each other better, she confided some of her worries in me. I lent her my listening ear, and provided her with my genuine consolation and wisdom.
This was what happened. She told me that her husband always left the house at a certain timing in the night. Frankly speaking, it is inappropriate for a married man with a daughter to always slip out of the house in the middle of the night. No matter what, it was indeed hard to justify such behaviour! Alas, paper cannot wrap up fire. The truth was the husband sought comfort in the tender arms of another woman.
I saw that she did not want to give up on her marriage, hence I asked if she believed in Feng Shui. She said yes, but not her husband. She actually had the intention to invite me to audit the Feng Shui of a residence in a high-valued area. She wished to know if there was something wrong with the DNA (haha!) or the Feng Shui of her house.
As I stood at the entrance of her house, before I could pull out my "treasured sword", the "unwanted guests" in her house, a.k.a. evil spirits, had long prepared to show me their displeasure. I am truly grateful to the great linage empowerment of my noble Root Guru! If not, I would be out of service for quite some time. In the living room, I immediately saw the answer why a man with a beautiful and sexy wife would go out late at night to seek comfort in another woman's arms, and the situation had became Inextricable.
Master Dai Hu wishes to advise everyone: Do not bring any object of unknown origin home. In this lady's house, I saw a wooden wardrobe with active energies, drawings of coy female figures, a lighter with a nude lady, etc. The items of significance were the drawing of women and the lighter with the nude figurine. It was no wonder I sensed an air of negative energies when I was at the door. The man of this house allowed his lust to grow, attracting more negative and evil energies. The fire of lust consumed him, and he broke the precept and committed sexual misconduct.
From what I know, a person who commits sexual misconduct and does not repent for it to resume his/her purity in time will be reborn into the realm of animals, like birds, chickens, pigs, dogs, etc, for the next 500 rebirths. After which, he or she will return to the human realm as a person of lowly status, such as a prostitute, a maid, a wretched person etc. Children borne out of sexual misconduct are more prone to vile energy clashes. As for those who produce books with sexual contents, their merits would have already been slashed even before their death, and upon dying, they may enter Hell and suffer the fate of foul-smelling body, with only maggots to eat when hungry, have broken and bleeding skins, bloating stomach bursting with maggots, and finally dying from a fully rotten body. Having the Right Intention and Right Thought is indeed extremely important.

For the pancake wraps:
2 large eggs
1/4 teaspoon vanilla
1/4 teaspoon salt
1 cup milk, divided
1 cup all-purpose flour
1/2 teaspoon butter
For the wrap filling:
4 hash brown patties
8 strips bacon
4 tablespoons butter, divided
1 1/2 teaspoons salt, divided
8 large eggs
1 cup shredded cheese
4 tablespoons maple butter
2 tablespoons maple syrup
INSTRUCTIONS
Make the pancakes:
In a medium-sized bowl, whisk eggs until lightly beaten. Add vanilla, salt and 1/3 cup of the milk, and stir until combined. Add flour and whisk until smooth. While whisking, add the remaining milk. Batter should be thick and smooth.
Heat a 10-inch pan on medium-high and coat with butter. Drop approximately 2/3 cup of batter onto pan and cook until golden. You will start to see bubbles form on the top of the dough when it is close to flip time. Flip over and repeat until golden. Keep pancakes warm on a plate until ready to assemble.
Prep the wrap ingredients:
Preheat the oven to 425 degrees. Line 2 baking sheets with parchment paper.
Place 4 hash brown patties on parchment and bake until golden, approximately 20 to 25 minutes. Place strips of bacon on another sheet and bake until crispy, approximately 20 minutes.
While bacon and hash browns are baking, prepare the remaining ingredients for the wraps.
In a large nonstick pan, melt the remaining tablespoons of butter over medium heat. Crack eggs into a medium-sized bowl with the remaining salt, and whisk until yolks are broken and eggs are just combined. Pour into the warm pan and turn heat down to medium-low. Cook eggs very slowly, swirling them in the pan using a wooden spoon or spatula. Eggs are done when they look silky, have come together and are still a little wet. Turn off the heat and add cheese. Mix just to combine. Set aside.
To assemble wraps:
Spread maple butter in the middle of each pancake and place a hash brown on top. Place a quarter of the scrambled eggs on each hash brown. Layer bacon over the eggs and drizzle with maple syrup.
Secure wraps in parchment until serving. They will keep up to a day in the fridge. Reheat in the oven or microwave before serving.

3. 鮮淮山,清水洗淨,用毛巾包住,輕手刨去皮。
4. 西施骨已出水,清水洗乾淨,放入煲。
5. 南杏、陳皮及無花果,清水沖洗乾淨。
6. 放南杏入煲。
7. 無花果,1開2,放入煲。
8. 陳皮,刮去囊,放入煲。
9. 鮮淮山,切一片片,放入煲。
10. 蘋果,清水洗淨,1開4, 去芯,放入煲。
11. 在煲內加入清水3升半。
烹調:
1. 大火煲滾。
2. 滾起後,轉中慢火煲90分鐘。
3. 西施骨,已煲了1小時,另一邊,用清水浸魚腥草15分鐘。
4. 魚腥草,清水沖洗乾淨,擎乾水。
5. 湯已煲了1小時15分鐘,加入魚腥草,轉大火,滾起後,轉中慢火煲20分鐘。
6. 湯已煲好,熄火,焗15~20分鐘。
7. 完成,可享用。
Houttuynia cordata soup with fresh yam and Washington apples
Ingredients:
Houttuynia cordata 0.5 catty
Pork bones 1.5 catty
Dried figs 6 Nos.
Fresh yam 0.5 catty
South apricot kernels 2 taels
US Washington red apples 2 Nos.
Dried orange peel 1 pc
Preparation:
1. South apricot kernels, soak in tap water.
Dried orange peel, soak in tap water.
Dried figs, soak in tap water.
2. Heat up water 1L at high flame in pot, soak the pork bones.
3. Fresh yam, rinse with tap water. Wrap it with a towel. Peel it lightly.
4. Pork bones, has been soaked for a while, rinse thoroughly. Put into pot.
5. South apricot kernels, dried orange peel and dried figs, rinse thoroughly.
6. Put kernels into pot.
7. Divide each dried fig into 2 shares, put into pot.
8. Dried orange peel, remove sacs, put into pot.
9. Fresh yam, slice it and put into pot.
10. Apples, rinse and divide each apple into 4 shares. Remove cores. Put into pot.
11. Add in water 3.5L into pot.
Steps:
1. Heat up at high flame.
2. Turn to medium~low flame after boils up. Boil for 90 minutes .
3. Pork bones has been boiled for 1 hour, soak the houttuynia cordata in tap water for 15 minutes.
4. Rinse the cordata thoroughly. Drain.
5. Soup has been boiled for 1 hour and 15 minutes, add in cordata. Turn to high flame, turn to medium~low flame after boils up. Boil for 20 minutes.
6. Soup has been cooked well, turn off fire. Leave it for 15~20 minutes.
7. Complete. Serve.

黃金年糕
材料:
雞蛋黃蕃薯(大)2個
糯米粉
片糖3片
處理:
1. 蒸年糕器皿容量一半水的份量,煮溶片糖,攤凍。
2. 蕃薯,去皮,切細舊。
3. 大火蒸15分鐘。
4. 蕃薯已蒸好,攤凍。
5. 戴上透明膠手套,揸爛蕃薯。
6. 加入糯米粉及片糖水,攪至糊狀。
7. 在蒸糕盤上掃油。
8. 放蕃薯漿入糕盤。
9. 凳出空氣。
10. 鋪上錫紙。
烹調:
1. 煲滾1鑊水。
2. 大火蒸1小時。
3. 大約20分鐘左右加入滾水。
4. 年糕已蒸了1小時,完成。
5. 可在年糕上放1粒紅棗。
6. 攤凍,封上保鮮紙。
7. 放雪櫃36~48小時,完成。
8. 切開年糕,用中火煎熱,可享用。
Golden rice cake:
Ingredients:
Sweet potatoes (large) 2 Nos.
Glutinous rice flour
Slab sugar 3 slices
Preparation:
1. Fill water in rice cake tray with half volume. Pour the water in pot. Melt the slab sugar at medium flame. Wait for cooling down.
2. Sweet potatoes, get them peeled. Dice into small cubes.
3. Heat up at high flame for 15 minutes.
4. Sweet potatoes have been steamed well. Wait for cooling down.
5. Put on transparent gloves, squeeze the sweet potatoes.
6. Mix the sweet potatoes with glutinous rice flour and syrup, stir until mushy.
7. Brush oil on rice cake tray.
8. Pour sweet potato syrup into it.
9. Release air in the rice cake by hitting the tray on table.
10. Put aluminum foil on the tray.
Steps:
1. Boil up a pot of water.
2. Steam at high flame for 1 hour.
3. Add boiled~up water for every 20 minutes.
4. Rice cake has been steamed for 1 hour. Complete.
5. Put a red date on top of rice cake.
6. Wait for cooling down. Put cling wrap on the cake tray.
7. Put in refrigerator for 36~48 hours. Complete.
8. Cut the rice cake well. Fry it at medium flame. Serve.
