Bonjour tout le monde!
This has been an unprecedented period of intense anxiety and disruption across all industries, and the arts especially had taken a heavy toll. Hence, I am elated to lend my voice to vOilah! France Singapore Festival 2020, and to be a part of this cultural heritage exchange that thrives between our two countries. Although grand festival events and red carpet may no longer be possible, but nothing should stop us from sharing the charm and finesse of French culture and arts.
I currently reside in Paris, having moved here three years ago. We too experienced a two months country-wide confinement from March to May this year, during which only essential shops were allowed to remain open, namely, supermarkets and boulangeries. A week into the lockdown, President Macron announced that not only was food for the body important to the people, food for the soul was equally critical to a civilization. What followed was that bookshops were given the permission to resume business, as long as rules of social distancing were observed. This was what struck me the most, that when life is stripped to the bare minimum, bread and books are all we need. After all, “culture is what remains, when everything else is forgotten” French statesman Edouard Herriot once wrote. Indeed, in the most robust economy, the market provides everyone with everything, except the power to determine what people should value. It is thus heartening to see culture held at such high regards, especially in times of crisis.
Back in our literary and philosophical past, only a small percentage of people had the privilege to be exposed to great traditions of arts and intellect. Now we are fortunate to live in a world where the cultural divide is no longer as deep, where global communities come together on creative platforms, where thinkers reunite for meaningful dialogues. Culture should travel, even when we can’t.
De gustibus non est disputandum. I look forward to the calendar of great works in this year’s vOilah! Festival, and meeting all of you through the upcoming online activities.
Let’s safeguard the future of our arts and innovation together.

[Trends / 甜點潮流] 面對疫情,線上大師課將會成為最新趨勢?/ Will online masterclasses be the new hit? (English below)
隨著全球疫情逐漸緊繃,越來越多人被限制在家不得出門。法國從3/15凌晨開始,所有餐廳、酒吧、咖啡館等「非必要」商業全數停止營業;3/17中午開始全境禁閉(confinement)之後,許多店家受到嚴重的打擊。有些甜點店與麵包店「照常營業」,因為某些商品(例如麵包)是必需品,甜點師與麵包師必須冒著感染風險去上班。也有些高級甜點店宣布停止營業,譬如才剛剛開幕不到四個月的 Cédric Grolet Opéra 。餐廳與依靠大量旅客的飯店旅館業自然更慘,復業遙遙無期。法國政府雖然立即宣布挹注450億歐元援助企業,馬克隆總統更宣稱「再小的企業都不用擔心」,但若這是一場超過三個月以上的長期戰役,此類措施顯然無法持久、也會對經濟造成毀滅性的打擊(法國財政部長已經宣布預期今年經濟負成長 1%)。
有些主廚為了因應全國禁閉的措施,開始在線上分享食譜,也有主廚與電視台合作、或在自己的社群媒體上進行直播,讓大家在家中能夠自給自足、也能稍微減緩不能出門的苦悶。今天只是全國禁閉第六天,且由於過多民眾不遵守禁制令、疫情發展難以控制,預期禁閉時間將往後延長。現在主廚們只是在線上直播分享食譜,大概過後沒多久,我們將會看到各種線上課程、宅配食材包的生意興起。

With the outbreak of COVID-19 pandemic, many countries now toughens restriction and measures against travels and social gatherings, France is of no exception. The government has announced to close all "non-essential" businesses such as restaurants, bars, cafés, etc. since the 12th. Starting from the 17th, the country has been on lockdown. Like many other industries, food industry has been hugely affected. Many shops are forced to close although some are exempted. Restaurants and hotels face an even more severe threat as much of their income relies on tourists. Although the French government has announced a €45 billion aid package to help entreprises and employees, this apparently won't sustain unlimitedly.
Some French chefs and pastry chefs started sharing recipes and doing masterclasses online as their businesses are closed and people are confined at home. However, as the pandemic crisis continues, it is expected that the lockdown will be prolonged. We'll soon witness the rising of online pastry classes and the business of packaged food ingredients (as already the case in Taiwan).
Here're some of the pastry chefs that are sharing their recipes or even step-by-step videos online (or on TV) for your reference. If you are staying at home feeling anxious, not knowing what to do, maybe it's time to pâtisser!

Crushed by the wheels of urban development and political agenda, traces of colonial legacy have been wiped bit by bit from the face of Hong Kong. Not only more and more locals are dedicating great efforts to preservation, Camille Levert, a French artist who moved to the territory five years ago, has also developed a unique way to keep the collective memories from fading.
Unlike most expatriates in the city, Levert sees Hong Kong much more than a global financial hub with glittering skyscrapers. The 46-year-old frequents old neighborhoods such as Sham Shui Po and Mong Kok to take a closer look at the lives and cultures of locals. She loves watching shops and stalls do business with their doors open, as retail outlets in France generally have a storefront like the branches of luxury brands on Canton Road in Hong Kong.
