For this video, we headed down to Kwee Zeen at Sofitel Sentosa to DESTROY a Massive Royal Indian Food Platter! Kwee Zeen offers a host of Pan-Asian cuisine with a touch of Western and an emphasis on French-style hospitality and décor. Kwee Zeen has a Taste of Singapore promotion where they take you through different types of cuisine depending on the day of the week. On Saturday nights, they offer a special Indian platter called the Royal Maharaja Feast that comfortably feeds 4. There is a GIVEAWAY, details below.
Served on a ginormous banana leaf, the staff plated a ridiculous variety of different Northern Indian food, including naans, tandoori meats, salads and gulab jamun. The presentation from the chef was something to behold. The selection of dishes was also exceptional, very well balanced in terms of meat to carbs to vegetables.
The standout foods would be the tandoori lamb chops, which was well-seasoned and tender, the cauliflower, which was slightly charred on the outside while moist inside after being roasted whole and the pomegranate and potato salad, which was cooling and refreshing, working well to counteract any residual heat. The chutneys served were also a step above most chutneys I have tried. On top of that, I really enjoyed the 2 desserts served, especially the carrot halwa which was unique to me and not overpoweringly sweet.
Due to the balance of food and the overall deliciousness, this almost did not feel like a challenge. I felt pretty decent afterwards which is particular rare to occur. True to its name, you and your family can eat like Kings if you order this platter at Kwee Zeen. It would be well worth your money at $192++ for 4. Do check out Kwee Zeen for this magical feast!

Biryani is a super super yummy Indian rice dish. If you never had biryani before, just imagine combining curry and rice together. You can make biryani with different types of meat such as chicken, beef, goat, pork, lamb, prawn, fish, or even with eggs. Biryani is surprisingly easy to prepare, especially if you're making this in a rice cooker. If you don't have a rice cooker at home, you can cook this dish in a pot over your stove. Just follow the steps exactly and then cook the rice over medium to medium low heat for about 10 - 12 minutes. Really very easy.

Chicken Biryani ingredients
Serve 2 - 3 pax

Marinated chicken - marinate for at least 30 minutes

2 chicken legs (total 500g) - make some slits on the chicken
1 teaspoon of chilli powder
1/2 teaspoon of turmeric powder
1 teaspoon of salt
Other ingredients
--------
2 tablespoons of cooking oil
1 cinnamon bark
3 bay leaves
6 - 7 cloves
10 cardamom pod (seeds)
1 star anise
2 red onions - sliced
1 tablespoon of garam masala
3 tablespoons of water (mix with garam masala into a paste)
30g butter
2 chopped tomatoes (medium sized)
A handful of coriander leaves - chopped
A handful of mint leaves - chopped
300ml of water
4 tablespoons of coconut milk
2 teaspoons of salt
280g of basmati rice
Add 1/2 teaspoon of salt or to taste before serving

「無水料理」是製作時間相對快速方便,且能鎖住食材原汁原味的料理方式,而料理精神正如其名,充分善用食材本身的水份,讓食材本身的甘甜滋味顯著表現,此道示範料理中,所用到的紅蘿蔔、番茄泥、蘋果、洋蔥、黃甜椒、馬鈴薯等,除了賦與烹調所需要的水份之外,其中紅蘿蔔的胡蘿蔔素(β-carotene)、番茄泥的茄紅素(lycopene),大量蔬果的膳食纖維,增加此道料理營養的豐富度。而且國人普遍缺乏鈣質,在料理中所用到的優格、優酪乳恰好能夠補充鈣質來源;另外,喜愛無添加全天然的朋友,也可以將番茄泥替換成大番茄,料理中用到調味料紅糖以及鹽,也可以選擇不添加喔!

Ingredients:
450g chicken thigh
A little salt
A little white pepper
1 tbsp curry powder
1 tbsp of yogurt
3 potato
1 carrot
1 yellow bell pepper
1 red bell pepper
2 big tomatoes
1 onion
1 apple
2 garlic
3 tpsb mix 2 types of curry powder
2 tsp salt
1 tsp of sugar
1 can tomato puree
200 cc yogurt

雞肉醃料:
雞腿肉450g
鹽少許
白胡椒少許
咖哩粉1大匙
優格1大匙
食材:
馬鈴薯3顆
紅蘿蔔1條
黃甜椒1個
紅甜椒1個
大蕃茄2個
洋蔥2個
蘋果1個
蒜頭2個
混合2種咖哩粉 各3大匙
鹽2小匙
糖1小匙
蕃茄泥1罐
優酪乳 200 cc
步驟:
1.雞腿肉醃好煎至焦香備用。
2.將食材切丁先炒出香味,加入調和咖哩粉與奶油,鹽,糖及胡椒調味,加入蘋果後加蓋悶煮10分鐘。
3.開蓋加入蕃茄泥之後用調理棒打至濃稠,再加入優酪乳。
4.加蓋悶煮約20分鐘。
