西式主菜🥘卡真烤春雞 Cajun Roasted Spring Chicken
每次在外吃烤春雞
總覺得不太好吃
不是太乾就是不夠入味
所以自己研了這個卡真烤雞食譜
烤雞非常香和嫩滑
再加上酸酸甜甜小小辣的沾醬
味道非常小清新
不得了😋
我比較喜歡用鹽麴醃肉同魚
因為鹽麴可以帶出鮮甜及令肉更嫩滑
味道更加有層次感
一般大型超市都可以買到
不過由於用得多
自己發酵一大樽比較划算🤩
如果家裡冇鹽麴
又想有類似效果
可以加鹽後加一點點米酒
材料:
1. 春雞
基本調味料:
1. 鹽麴/ 鹽 Salt
2. 卡真調味粉 Cajun Seasoning
3. 蒜粉 Garlic Powder
4. 黑胡椒 Black Pepper
其他調味料:
1. 紅椒粉 Paprika
2. 白胡椒 White Pepper
3. 魚露 Thai Fish Sauce
沾醬:
1. 檸檬汁 Lemon Juice
2. 小紅蔥 Shallots
3. 辣椒 Chili Peppers
4. 魚露 Thai Fish Sauce
5. 糖 Sugar
步驟:
1. 春雞清理好用基本調味料醃1-2日,喜歡重口味的可以加其他調味料(由於春雞有大有小,調味料份量自行斟酌)
2. 提前預熱焗爐
3. 春雞以180度焗30-40分鐘;如有需要,自行反轉雞
4. 提高至230度焗5分鐘令雞皮變金黃
5. 如果牙籤吉入雞脾仍有血水要加時5-10分鐘
6. 個人喜好,可以焗180度的時候追加2分鐘蒸氣烤焗令烤雞更嫩滑,不過會沒那麼乾身和脆
最後烤雞是一門藝術
除了雞有大有小,焗爐受熱程度亦唔同
所以提醒大家焗雞時要看好爐😛
不然就要吃燒蕉雞了

BREAKFAST - Mushroom Egg Muffins (6 muffins)
1) 6 Eggs - 468cals
2) 1/2 Red Bell Pepper, diced
3) 1/4 cup Mushroom, diced
4) 1/2 can of Tuna
5) 1/2 tsp. Cajun Seasoning
6) Salt & Pepper to taste
Per Egg Muffin - 94Cals
LUNCH - Asian Salmon Stir Fry (serves 2)
1) 1 Salmon Fillet, cut into cubes
2) 1/2 cup Green Beans, trimmed & sliced
3) 1 cup Mushrooms, sliced
4) 2 garlic Cloves, minced
5) 1 tbsp. Soy Sauce, divided
6) 1 tsp. Sesame Oil
7) Spring Onions, chopped
Soba Noodles & Edamame Salad (Serves 2)
1) 90g uncooked soba noodles
2) 1/4 cup Edamame, unshelled
3) 1/2 tbsp. Sesame Seeds
4) 1 tsp. Sesame Oil
5) 1 tsp. Chilli Flakes
6) Spring Onions
TOTAL LUNCH CALORIES - 470Cals
DINNER - Steamed Soy Ginger Barramundi (serves 2)
1) 1 Barramundi Fillet (about 12oz), or other white fish of your choice
2) 1/4 cup Ginger, finely sliced
3) 1/4 cup Spring Onions, sliced
4) 2 Small Chillies, chopped
5) 1 tsp. Sesame Oil
6) 1 tsp. Soy Sauce
Stir-Fried Mixed Vegetables (serves 3)
1) 1 Head Broccoli, cut into florets
2) 1 Carrot, thinly sliced
3) 1/2 Red Bell Pepper, sliced
4) 2 Garlic Cloves
5) 1/2 tsp. Sesame Oil
6) 1/2 tsp. Soy Sauce
7) 1/2 tsp. Chili flakes
Total Dinner Calories (including 1 bowl of white rice) - 500Cals
