有時飲剩嘅白酒都好有用嘅. 一路炒蜆一路落白酒件事好Make sense 同埋效果超好味. Leftover wine is quite useful, added to Typhoon Shelter clams, and you will thank yourself!
Clams 蜆
Spring onions 大量嘅蔥
Garlic 蒜蓉
Fried Garlic 炸蒜
Chili slices 辣椒絲
A small bit of black bean sauce (optional)
Leftover white wine 白酒
Butter 牛油
Onions 洋蔥
用牛油煮啲洋蔥同埋啲蒜蓉
跟住爆少少蔥花同埋辣椒絲
加啲顯跟住啲白酒冚蓋
煮到啲顯開
你鍾意可以加少少豆豉
加啲蔥辣椒絲同埋炸蒜咁就食得㗎啦!
Sweat the onions and garlic in some butter.
Add half of the spring onions and chilli.
Add the clams and white wine and cover the pot cook until the clams open. When the clams are open you can add a little bit of black bean sauce if you like. Add some more butter to create an emulsion. add a lot of fresh spring onions some fresh chilies and a lot of fried garlic. It with a happy smile on your face 😊

Impressive dish indeed, Chef Alex Chin has incorporated a variety of favourite shellfish into the dish. Sun-dried oysters, Mexican Clams, Pacific Clams, bamboo piths and shiitake mushroom are wrapped in bean curd drizzle with black moss sauce.

He did a marvellous job with this classic festive CNY dish with premium dried seafood cooked with 'Fatt Choi' (Black Sea Moss) which sounds like getting rich in Cantonese, packing a punch & melted in my mouth! 👍👍👍

三十克粉絲 30g Vermicelli
一百克豆豉 100g Salted Black Bean
十九粒蒜頭 19 cloves of Garlic
一茶匙糖 1tsp Sugar
兩茶匙生抽 2tsp Soy Sauce
兩茶匙紹興酒 2tsp Shaoxing Wine
一茶匙麻油 1tsp Sesame Oil
一湯匙生粉 1tbsp Potato starch
一百克紅椒 100g Red Chilli
兩棵蔥 2 Scallions

You might have tried drunken prawns 醉虾 but how about making some clams drunk as well :p~~~
To be fair, clams have got to be one of the easiest main ingredients to use and no matter how you cook it (oh well, kinda), you will never get wrong with them. This dish of drunken vongole 醉啦啦 is basically an idea adaptation of the popular Chinese Drunken Prawns except that we're not using any Chinese herbs to prepare this dish.

Ingredients:
Serves 4
1kg of vongole or white clams
4 pieces of shallots - sliced
4 pieces of garlic - minced
1 teaspoon of sugar
1 tablespoon of salted soya beans
1 tablespoon of black soya bean paste
1 tablespoon of Chinese cooking wine or Shaoxing huatiao wine
2 cups of water
1 teaspoon of sesame seed oil
2 tablespoons of Chinese rice wine
2 tablespoons of light soya sauce
1 thumb size ginger - sliced thinly
3 - 4 stalks of spring onion (cut into about 4cm long)
2 pieces of red chilli (cut into strips)
