【西班牙,不只海鮮飯 ~ 世界 tapas 日】
今天是六月的第三個星期四,是世界 tapas 日,導遊趁機跟大家談談 tapas。
在西班牙美食中,tapas 佔有一個非常重要的地位,而 tapas 餐廳更是大家隨時餓隨時可以吃的地方,如果你不習慣西班牙人中午兩點午餐,晚上八點半晚餐的時間,沒關係,找一家 tapas 店,隨時都可以吃。
Tapas是「蓋子」的複數。但是,為什麼「小菜」叫做「蓋子」呢?
據說,tapas的起源有三種說法:
1️⃣ 十三世紀時西班牙國王 Alfonso
十世接受御醫的建議,以葡萄酒治病,但是,為了避免空腹喝酒,就叫御廚準備一小碟的小菜配葡萄酒,後來國王病愈後,下令卡斯提亞地區的酒館不能單賣葡萄酒,客人點酒一定必須加點其他的東西配酒,以小菜「蓋住」酒精的影響力。
2️⃣ 十五世紀時西班牙的天主教雙王,因為車夫從酒館喝酒出來,酒後駕車常發生意外,因此規定酒精類飲料一定要配小菜,以小菜「蓋住」酒精的影響力。
3️⃣ 西班牙國王 Alfonso 十三世巡視 Cádiz
時,想品嘗當地有名的雪莉酒,偏偏那一天颳風,酒館主人為了怕風沙掉進酒杯裡,拿了一片火腿蓋在杯口,成了酒杯的「蓋子」,國王很欣賞這種吃法,喝完一杯
雪莉酒後,在要一杯「有蓋子」的雪莉酒,從此以後,「蓋子」就成了「小菜」的通稱了。
一直發展到現在,小菜的種類就越變越多,Tapas(複數)成了獨特的典型小吃,由眾多別出心裁的小菜Tapa組成,就衍變成主食了。在西班牙裡,El
tapeo是西班牙享受美食的特別風俗。
常見 Tapas 分成冷盤跟熱食。
🍷 冷盤:橄欖(Aceitunas)、火腿(Jamón)、醋醃鯷魚(Boquerones en vinagre)、乳酪(Quesos)、海鮮沙拉(Salpicón de Marisco)、俄羅斯沙拉(Ensaladilla rusa)
🍷 熱食:炸小青椒(Pimientos de Padrón)、香煎蕈菇(Setas a la plancha)、香炸朝鮮薊(Alcachofas fritas)、油封朝鮮薊(Alcachofas confitadas)、蒜蓉馬鈴薯(Patatas alioli)、辣味炸馬鈴薯(Patatas Bravas,馬鈴薯佐美奶滋和辣醬)、馬鈴薯蛋餅(Tortilla de Patatas)、碎蛋(Huevos rotos/Huevos estrellados)、醃肉串(Pincho Moruno)、不同口味的香炸可樂餅(Croquetas,不是用馬鈴薯做的,是用麵糊做的)、炸紅椒香腸(Chistorra frita/Chorizo frito)、番茄肉丸子(Albondigas)、香煎米血腸(Morcilla)、紅酒燉紅椒香腸(Chorizo al vino tinto)、蘋果西打酒燉紅椒香腸(chorizos a la sidra)、燉牛尾(Rabo de toro)、馬德里式燉牛肚(Callos a la Madrileña)、香炸培根片(Torrezno)、香辣蒜蝦(Gambas al ajillo)、烤蝦串(Brochetas de langostinos)、香煎大蝦(Langostinos a la plancha)、香煎紅蝦(Gambas rojas a la plancha)、加利西亞風味章魚佐馬鈴薯(Pulpo a la gallega)、加利西亞式章魚(Pulpo«á feira»)、清蒸淡菜(Mejillones al vapor)、番茄醬汁淡菜(Mejillones a la marinera)、白酒醋汁淡菜(Mejillones a la vinagreta)、香炸魷魚(Calamares fritos/Calamares a la romana/Calamares a la andaluza)、香炸小魚(Pescaditos fritos)、香炸蝦餅(Tortillitas de Camarones)、香炸中卷(chipirones fritos/chipirones a la andaluza)、香炸鱈魚球(Buñuelos de bacalao)、香煎墨魚(Sepia a la plancha)、香煎蛤蜊(Berberechos a la planch)、香煎竹蟶(Navajas a la plancha)、加利西亞式餡餅(Empanada gallega)、紅椒塞肉/魚(Pimientos del piquillo rellenos de carne/de pescado)、炒麵包屑(Migas) .... 等。

經典西班牙海鮮飯🥘100%成功簡易版🤩

聖誕前重新整理了一下這個皇牌食譜給大家🥰早前還因為這個西班牙海鮮飯被飲食男女邀請了做人物專訪🤣現在回想起也很有趣~
真的所有人都對這個西班牙海鮮飯的香味和味道讚不絕口~希望大家喜歡😍
𝑴𝒆𝒓𝒓𝒚 𝑪𝒉𝒓𝒊𝒔𝒕𝒎𝒂𝒔🎄✨
🔸材料(2-3人份)🔸
1. 西班牙米 3杯(約240毫升)
2. 大蝦 6條
3. 大青口 6隻
4. 魷魚 1條
5. 蕃茄 2個
6. 迷你小紅黃椒 3粒
7. 洋蔥 1/4個
8. 西班牙臘腸Chorizo 50克
🔸調味料🔸
1. 水 30毫升
2. 牛油 8-10克
3. 大蒜 2-3瓣
4. 雞汁 10毫升
5. 魚露 10毫升
6. 鹽 1茶匙
7. 甜椒粉 Paprika 1-2茶匙
8. 白酒 50毫升
9. 番紅花 1撮(可用3-4茶匙薑黃粉代替)
10. 香葉 3片
🔸伴碟🔸
1. 檸檬
2. 蕃茜
🔸做法🔸
1. 把一撮番紅花和香葉泡水。
2. 海鮮洗淨,蝦眼蝦刺蝦腳蝦尾剪掉,挑走蝦腸。需要吐沙的貝類海鮮請提前準備。
3. 魷魚處理乾淨後切圈。
4. 海鮮瀝乾水後用鹽和胡椒醃好備用。
5. 蔬菜及米洗淨,蔬菜切粒並瀝水待用。蕃茄上下𠝹十字,用熱水焗幾分鐘然後去皮。
6. 把番紅花和香葉水用小火加熱。出現水泡後關火。稍稍待涼後加入甜椒粉、雞汁、魚露、牛油拌勻成為已調味的番紅花水。
7. 下油開鍋。
8. 加入蝦頭煎香,同時用工具按壓蝦頭擠壓蝦膏和蝦汁,大約煎5分鐘。
9. 加入洋葱和蒜蓉煎香及煎至金黃色帶點焦糖化。
10. 加入白酒煎香。
11. 把蝦頭放入篩內,用力把蝦汁和白酒按壓出來。
12. 加入西班牙臘腸碎煎香。
13. 再把蝦頭按壓多一次出蝦汁。
14. 加入蕃茄和紅黃椒粒炒香,這時候蔬菜會出水,成為高湯。
15. 加入已調味的番紅花水拌勻。
16. 加入米,輕輕拌勻。這時米和水應該剛好拌成濕米,用工具撥開米的時候不見有任何水跡。
17. 熄火,鋪上海鮮及香葉並合上蓋子。按照以下焗爐/ 爐頭版繼續加熱。
🔹焗爐版🔹
1. 放入已預熱的焗爐用180度焗30分鐘。
2. 最後加上香草和檸檬伴碟。
🔹爐頭版🔹
1. 小火加熱20分鐘,熄火焗10分鐘。
2. 最後加上香草和檸檬伴碟。
🔹小TIPS🔹
1. 薑黃粉是番紅花的替代品,味道相近。
2. 懷孕的女生不能吃番紅花。
3. 如果有蘑菇及貝類海鮮,本身水份高,可以不用額外加水。米:水=1:1.2。
4. 如果用蝦/魚高湯代替水,再加月桂葉和番紅花煮會更佳。

🔸Ingredients (2-3 servings)🔸
1. Spanish rice 3 cups (around 240g)
2. Prawns 6
3. Mussels 6
4. Squid 1
5. Tomatoes 2
6. Mini Red and Yellow Pepper 3
7. Onions 1/4
8. Spanish Chorizo 50g
🔸Seasoning🔸
1. Water 30 ml
2. Butter 8-10g
3. Garlic 2-3 petals
4. Chicken essence sauce 10 ml
5. Fish sauce 10 ml
6. Salt 1 teaspoon
7. Paprika 1-2 teaspoons
8. White Wine Chardonnay 50 ml
9. Saffron 0.5-1 teaspoon
10. Bay leaves 3 pieces
🔸Garnish🔸
1. Lemon
2. Parsley
🔸Steps🔸
1. Soak saffron and bay leaves in water.
2. Clean and devein the prawns. Peel it if necessary.
3. Clean the squid and cut into round pieces.
4. Sautee the seafood with salt and pepper.
5. Clean the veggie and rice if necessary and set aside. Cut the top and bottom of tomato and soak in hot water before peeling the skins.
6. Chop the chorizos into pieces.
7. Heat the saffron and bay leaves water in low heat. Turn it off when there is water bubbles. Add paprika, chicken essence sauce, fish sauce and butter inside after cooling down.
8. Heat the pan with oil.
9. Fry the prawns head around 5 minutes and squeeze the prawns head juice with tools.
10. Fry the onions and garlic into golden color.
11. Add white wine.
12. Squeeze the prawns head in the sieve for the last time.
13. Fry the chorizos.
14. Fry the tomatoes and mini peppers until the veggie juice mix with the sauce.
15. Add the seasoned saffron and bay leaves water.
16. Add the rice and stir it evenly with the sauce lightly. The rice and the sauce are well mixed together and there is no water on the pan when you stir the rice.
17. Turn off the fire, put the seafood and bay leaves on the rice. Cover it with the lid.
18. Cook it with oven or cast iron pot.
🔹Oven🔹
Preheat the oven at 180‘C and bake with 30 minutes.
🔹Cast iron pot🔹
Cook the paella in low heat for 20 minutes. Turn it off and leave it for 10 minutes.
19. Garnish with herbs and lemon and then you are ready to serve your guests 😀

#豆奶拿鐵喝起來像蠟筆融化在裡面
但西班牙服務生很漂亮+服務很好,而且風景無敵,所以姊就當今天白天斷食,晚上一個人爽吃了一整份蜂蜜檸檬雞🧡
Thanks God the view was fantastic and the service of this café was great as I was very disappointed with my breakfast, the Spanish Omelette! The eggs were over cooked, very dry! Also it was extremely salty as the eggs was salty, chorizos were salty and blue cheese too!!! Not too mention the soy flat white tasted like a crayon melted in it.
But I still appreciated the Spanish staff was very accommodating for listening my feedback and also provided me another cup of coffee. Thank you. 🧡

Below are some recipes. Some are really simple so I didn't include them in here. Let me know if there is any specific recipes you want and I'll add it down here.
Recipes:
Chia Seed Pudding (serves 2)
60g of Chia seeds
1 Large Mango (around 300g) - Puree it using a food processor
1 1/2 cup of Almond Milk (or more if you like to)
1 teaspoon of Vanilla Extract
Dash of Cinnamon Powder
I made the Chia seed pudding first. Let it set for about 10 minutes. then pour it into a cup/jar.
Green Curry Chicken
--------
100g of the Green Curry Paste
1 can of Coconut Milk (400ml)
1kg of Chicken Thigh
3 Zucchinis
2 Broccolis
1 or 2 Red Bell Peppers
1 tablespoon of Coconut oil
I fry the paste with coconut oil first, then I add chicken thigh to the pan. Then add red bell peppers and zucchini, and then coconut milk.
Simmer for about 20 minutes or so then add broccolis as broccolis cook really fast. Let it simmer for another 5 minutes and you're done.
Super EASY and tasty! Now I think about this is probably my fav dish of the week
Chorizo Cous Cous

2 Chorizos (200g)
250g of dry Israeli Cous Cous (Boil it for about 10 minutes)
800g - 1kg of Pumpkin
2-3 Zucchinis (around 300g)
1 Red Bell Pepper
1 Yellow Bell Pepper
Cut vegetables into 2cm cubes . Roast pumpkins for about 20 minutes, Roast zucchinis and Bell Peppers for about 15-20 minutes.
Now boil the cous cous for about 10 minutes. While waiting pan fry cut up chorizos for about 3-5 minutes.
Drained the cous cous and add it to the pan. Add some dried parsley, salt and pepper.
Once all the vegetables are cooked. Mix all the ingredients together! Thats it!
Chicken Quinoa with Asparagus (I just realised that I made a typing error in the video. It was not salmon, It was chicken breast!)

1/2 cup of Quinoa (or less)
100g of Aspragus
Grilled Chicken Breast (I usually make them in bulk. So make according to how many you want to eat)
Follow the instructions on the quinoa package. Cook it for around 25 minutes.
Now season chicken breast with paprika, ginger, cayenne pepper, salt and then fan grill it for around 10 minutes at 200 degree celsius (395 degree fahrenheit)
Once your quinoa is cooked. Pan fry asparagus with some coconut oil and salt. It will take about 5 minutes or so for it cook. Then add quinoa in the pan and mix it!
Acai Berry Smoothie with loads of dried fruits and fresh fruits and nuts! (add your favourite toppings)

2 frozen bananas (usually around 150g-200g)
1 acai berry pack
Almond milk (I just eyeball it)
Blend it and top it off with your favourite fruits, nuts, seeds, coconut flakes, etc.
Sashimi Salad
------------
100g of Salmon Sashimi
20g of Japanese seaweed salad
Salad leaves
Tomatoes
20g of Scallop salad
Japanese egg (sweetened egg)
Tobiko
Japanese picked ginger
Just adjust the ingredients portion to your liking!
