[Recipe]Dairy-free Easy Pumpkin Soup 🎃
Pumpkin soup is one of my favourite Western soups and it is so easy to whip up a pot without any milk or cream but simply with chicken broth. I bumped it up with ingredients like chicken and mushroom to make it a wholesome meal but you can leave it out and the soup itself still tastes as good. No salt is added here because the chicken broth contains salt.
Ingredients (serves 3-4)
4 @hayley_singapore brioche burger buns (I got these from ntuc)
Pumpkin (about 500g with skin)
1 Tb @newmoonsg Cooking Oil
1 New Moon Premium Chicken Broth (400ml)
1 Yellow Onion, diced
8pcs whole Mili Champignons, sliced
1 portion cooked chicken breast, shredded
Chopped roasted almonds (for garnish)
English Parsley (for garnish)
Black Pepper (for seasoning)
Steps:
1. Steam the pumpkin till soft and scoop the pumpkin flesh into a pot. Discard skin
2. Add chicken broth and blend till smooth
3. In another pan, heat up oil. Sauté diced onion, followed by sliced champignons mushrooms and shredded chicken breast in a saucepan
4. Boil pumpkin soup. Once boiled, transfer the above into the pumpkin soup and simmer on low heat.
5. Season with black pepper.
6. Prepare bread bowl: slice the top of brioche bowls and remove as much bread until you are left with a hollow bread shell. Don’t throw the bread crumbs away as they can be made into croutons.
7. Toast everything in a preheated oven at 100 degrees for 10min.
8. To serve, fill the toasted bread bowls with pumpkin soup. Garnish with roasted almonds and English parsley

ARMY STEW RECIPE
You will need:
2 Packet of Army Stew
100 grams firm tofu
Spam
Sausage
200 grams shiitake mushrooms
200 grams enoki mushrooms
150 grams Korean rice cake
Green onion
Cheese
Egg
STEP 1
Create a broth by adding Army Stew Ramyun seasoning and a vegetable satchet to boiling water.
Add in Korean chilli paste.
STEP 2
Once that is stirred through slowly, add tofu, kimchi, mushroom, sausage, spam and rice cake. Place the lid on and simmer for a few minutes.
STEP 3
Once the ingredients are cooked, place the noodles in and simmer again for 3 minutes.
STEP 4
Add green onion, cheese and crack an egg!
CARBONARA STIR FRIED SHIN RAMYUN RECIPE
You will need:
Shin Ramyun 1 bag
1 Cup of Whipped Cream
½ Cup of Milk
1 Teaspoon of Shin Ramyun Soup Base
Bacon 3 strips
Mushroom 5 pieces
3½ oz of Broccoli
Onion ½
1 Teaspoon of Garlic
2 Teaspoons of Parmesan Cheese
½ Teaspoon of Salt
½ Teaspoon of Black Pepper
Young Leaves 10g
STEP 1
Stir-fry garlic, onion and bacon in an oiled pan.
STEP 2
Add whipped cream, milk, and Shin Ramyun soup base into the pan.
STEP 3
Boil Shin Ramyun noodle for 2 minutes and drain the noodles.
STEP 4
Add the boiled-noodle, salt, black pepper, parmesan cheese, and broccoli into the pan.
STEP 5
Put noodles on a plate, and top with young leaves

白汁蘑菇芝士牛仔骨意大利粉
材料:
急凍牛仔骨1磅半(6件)
磨菇湯1罐
磨菇片1罐
芝士2片
意大利粉(500克)1盒
青瓜2條
蕃茄2個
處理/程序:
1. 大火煲滾1鑊水。
2. 牛仔骨:
a. 清水解凍,用廚紙輕手索乾。
b. 加入黑椒蒜鹽1茶匙,兩面搽勻,醃3分鐘。
3. 水已煲滾,加入鹽1茶匙。
4. 扇形放意粉,冚蓋,大火滾起後,轉慢火煮大約3分鐘,打開蓋,攪動一下,冚蓋再煮2分鐘。
5. 另一邊,大火在鑊中燒熱油1茶匙。
6. 放牛仔骨在鑊內,煎1分鐘,反轉另一面再煎1分鐘。
7. 牛仔骨已煎好,放上碟。
8. 意大利粉已烚好,擎乾水。
9. 在鑊內,蘑菇湯加入半罐清水,大火煮滾及攪勻。
10. 在意大利粉上,放2片芝士。
11. 蘑菇汁已煮好,加入已擎乾水分的蘑菇片,煮至大滾。
12. 蘑菇汁已煮好,淋在意大利粉上。
13. 加入已預先冷凍的切片蕃茄及青瓜伴碟。
14. 完成,可享用。
Beef short ribs spaghetti in cheese mushroom sauce
Ingredients:
Frozen beef short ribs 1.5 lb (6 slices)
Mushroom soup 1 can
Sliced mushrooms 1 can
Cheese 2 slices
Spaghetti (500g) 1 box
Cucumber 2 logs
Tomatoes 2 Nos.
Preparation/Steps:
1. Heat up a wok of water at high flame.
2. Beef short ribs:
a. Defrost with tap water. Lightly dry with kitchen towels.
b. Add in black pepper garlic salt 1 tsp. Mix well and season for 3 minutes.
3. Water boils up. Add in salt 1 tsp.
4. Put spaghetti and cover up the wok. Boil up at high flame, turn to low flame cook for 3 minutes. Stir it. Cover up the wok again and cook for 2 minutes more.
5. On the other side, heat up oil 1 tsp at high flame in wok.
6. Put beef in wok. Fry for a minute. Flip it over and fry for a minute more.
7. Beef shorts ribs have been cooked well, put on plate.
8. Spaghetti has been cooked well, drain.
9. Mushroom soup, add in half can of water. Heat up at high flame in wok and mix well.
10. Put 2 slices of cheese on top of spaghetti.
11. Mushroom sauce has been cooked well, add in drained sliced mushrooms. Heat it up at high flame.
12. Mushroom sauce is ready, pour on top of spaghetti.
13. Put the frozened sliced tomatoes and cucumber next to the beef.
14. Complete. Serve.

How to make Classic French Mushroom Soup Recipe
Soupe Aux Champignons Recipe
☞ Yield: 3-4 bowls
✎ Ingredients
☞ For broth
half onion
fresh thyme 2 bunches
fresh parsley 1 bunch
bay leaf 1
carrot 1
celery 1 stalk
black peppercorn Q.S.
water 500ml
☞ For mushroom soup
mushroom 270g, remove the stem, net weight is about 250g
olive oil 15g
unsalted butter 15g
half onion
whipping cream 120g
salt Q.S.
a knob of butter for pureeing
✎ Instructions
☞ For the broth
1. The best way to clean mushrooms is to not wash them, but if they are dirty, you can wash them gently one by one and immediately pat dry with paper towels, don't keep them in water too long.
2. You can cut off the stem or remove the stem by fingers, but don't throw it away, use them to make broth. Place the mushrooms caps on the cutting board and slice them. Set aside.
3. Peel the carrot and trim off the top, cut carrot and celery into a few big pieces.
4. Trim the ends of the onion, cut in half, peel off skin both halves and discard the skin. One halve cuts into big pieces for broth. Another halve chops into small pieces for frying with mushroom slices.
5. Throw onions, carrots, celery, peppercorns and herbs in a pot. Cover with 500ml of water, set the pot over medium high heat and bring it to a boil, then turn the heat down to low heat and cook for 30 minutes. The cooking time depends on how much stock you make.
6. Remove the pot from the stove, and set a strainer over a bowl, pour the stock through, pressing on the solids to extract any extra liquid and discard the vegetables.
☞ For the mushroom soup
1. Cook onions in olive oil and butter in a soup pot over medium high heat, then reduce heat to low and cover to cook for 8 minutes until soft but not browning.
2. Add the mushroom slices and salt, stir evenly, cover with lid and cook for 10 minutes until liquid from mushrooms has mostly evaporated.
3. Pour the vegetable broth and whipping cream and stir constantly, keep the heat on low and cover to cook for 30 minutes.
4. Transfer 3/4 soup to a blender and puree until smooth, creamy and thick.
5. Return soup to pot and stir well. Season with salt and black pepper if needed, and serve in bowls, garnish with mushroom slices or drizzle a few drops of olive oil. Enjoy!

哈囉!大家好,我是 Cassandre, 今天的『食不相瞞』,我們要跟大家分享一款簡單美味的療癒湯品:法式蘑菇濃湯(Soupe aux champignons)。
法式蘑菇濃湯是一道很經典又家常的傳統湯品,也是每次去西餐廳必點的濃湯之一 (另一道是蛤蜊巧達濃湯) ,這道湯幾乎是百喝不膩,濃郁綿密的湯頭,充滿大地氣息的蘑菇香氣,搭配歐式麵包一起享用,真是美味。
蘑菇濃湯有很多的做法,不同於以奶油白醬和大量鮮奶油為基底的美式奶油蘑菇濃湯,我們今天要分享的法式蘑菇濃湯沒有額外添加麵粉,可說是無麩質,而它creamy的口感則是拜攪打所賜,但重點是保留更豐富的蘑菇風味。除此之外,湯頭採用了法式蔬菜高湯,以法式香草束 (bouket garni) 跟胡蘿蔔、西芹、洋蔥組成的 mirepoix ,加上蘑菇梗一起熬出鮮甜的湯頭,因此也可以做成蔬食素食版。天氣冷了,愛喝湯的朋友一定不要錯過這集哦!

法式蘑菇濃湯 怎麼作呢?
下面是這款法式奶油蘑菇濃湯的做法與食譜:
☞ 份量:3-4碗
✎ 材料 / Ingredients
☞ 法式蔬菜高湯
洋蔥 半個
百里香 2束
香芹或荷蘭芹 1束
香葉 1片
中小型胡蘿蔔 1個
西洋芹 1根
黑胡椒粒 適量
水 500ml
☞ 蘑菇濃湯
新鮮蘑菇 270g, 去梗後裸重約為 250g
橄欖油 15g
無鹽奶油 15g
洋蔥 半個
鹽 適量
鮮奶油 120g
✎ 做法 / Instructions
☞ 法式蔬菜高湯
1. 蘑菇用刷子或乾布拭去泥去髒污,如果很髒的話,可以用清水快速清洗,並儘快擦乾,切勿浸泡,碰了水的蘑菇也要儘快吃掉
2. 用手指輕輕旋轉並拔掉蘑菇的梗梗,但不要丟掉,蘑菇梗可以拿來熬湯;把蘑菇切成片狀備用
3. 胡蘿蔔去皮,切成數塊;西洋芹也是切成數塊,備用
4. 洋蔥去皮、切掉根部,再剖半,一半切大塊熬湯用,另一半切成洋蔥碎,要用來與蘑菇同炒
5. 鍋裡加入切大塊的洋蔥、胡蘿蔔、黑胡椒粒和法式香草束在鍋裡,倒入500ml的水後以中大火煮到滾,然後轉小火、蓋鍋蓋燜煮半小時,如果一次熬製的量較多,燉煮時間也會拉長
6. 煮好後,把高湯過篩,濾出的湯備用
☞ 蘑菇濃湯
1. 開中火,鍋裡加入橄欖油與奶油(butter),奶油融化後倒入洋蔥碎,拌炒後轉小火,並蓋子鍋蓋悶煮八分鐘,直到洋蔥變軟但不要有焦色
2. 加入蘑菇切片和適量鹽,稍微拌炒後,蓋子鍋蓋以小火持續悶煮十到十二分鐘
3. 倒入蔬菜高湯和鮮奶油,輕輕攪拌,蓋上鍋蓋燉以小火燉煮半小時,若是隔天才做,再加入冰過的高湯跟鮮奶油後,可用中火先把高湯加熱至微滾,再立刻轉小火燉半小時
4. 舀出約 3/4 的蘑菇湯,可以用均質機、果汁機或食物料理機打細,打過的蘑菇湯會變得很綿密滑順,亦可加一小匙橄欖油或一小塊奶油攪打,來幫助乳化讓湯頭更幼滑
5. 把打過的蘑菇湯倒回鍋裡,與剩下沒攪打過的蘑菇湯混合均勻,若有需要可以加鹽或黑胡椒調味,把做好的蘑菇濃湯舀進碗中,上面可以擺生的或煎過的蘑菇片或者烤麵包丁享用,吃之前可以淋一點橄欖油或鮮奶油增加風味
