今天下午剛剛交了兩篇稿,輸出太多,決定聊一些有點 input 的東西。
睡前的讀書時光,其實是我每天最感幸福的時刻。不管有哪些文章還沒寫、哪些照片還沒拍、哪些甜點還在冰箱裡,都可以暫時放在腦後。因為平時為了工作讀太多食物相關書籍,通常我會選擇和食物完全無關的推理小說、20 世紀的英美或民國作家經典等,有時也看日本文學,前陣子甚至翻出了許多武俠小說。直到最近大部分時間在家,書稿也交了,心理上稍微有點餘裕,這才久違地將食物相關讀物拾起,當成非研究用書來欣賞。
前兩天被 博客來OKAPI 點名分享宅家書單,當時有留言在下方,現在依照 #第一屆宅家啃書大賽 格式重新整理過貼給大家:

1. 《#小吃碗上外太空》 有鹿文化.閱讀有路
推薦原因:一邊讀一邊讚嘆 #包子逸 對地理歷史、人事變遷極為深入的研究,以及能夠裁減凝鍊如此厚度,且每個字都透著深情的筆法。在歷史罅隙中窮盡追索,拼出小人物與被忽略的常民物件在時代洪流中的身影。非常喜歡!
2. 《#老派少女購物路線》遠流粉絲團
推薦原因:雖然前陣子各界名人都已瘋狂推薦過,但我還是想說,如果你還沒讀的話,趕快找來一讀吧!同樣文字簡練、熱愛生活,對身邊人事物充滿眷戀,作者 #洪愛珠 和包子逸的風格迥然不同。極為節制的筆法寫極為深厚的的感情,尤其是對已逝母親的追想,留白之處特別動人。我看完當時適逢該書大賣缺貨,走遍台北市誠品,才好不容易另外搜羅三本,分送媽媽、阿姨與好友。
3. 《#The_Food_of_Sichuan》W. W. Norton & Company Bloomsbury Publishing UK
《#Sharks_Fin_and_Sichuan_Pepper》(#魚翅與花椒)作者 Fuchsia Dunlop 一直是我心目中的飲食作家該有的樣子。傾注數十年的時光研究一個主題,其實就是許多學者的人生道路,也沒什麼特別,但她最令我崇敬的一點,是始終保持著無窮的好奇與熱情,無論是對飲食文化研究、還是做菜本身。我從《Shark’s Fin and Sichuan Pepper》開始對川菜產生興趣,接著在《Every Grain of Rice》裡讀到許多外婆和媽媽的拿手家常菜。西方食譜精確的計量與製作技術讓我能分毫不差地重現記憶中的味道,Fuchsia 以英國人的眼光看到的中國與中國菜,更是有滋有味,鮮活無比。
宅在家除了為食物攝影添購相關道具外,我也買了許多書。過去多年中顧忌頻繁搬家,許多書只能以電子版解饞,包括 Fuchsia Dunlop 的一系列著作。最近終於決定還是收藏實體版本,目前正在等候 Amazon 的書箱,包括The Food of Sichuan、Land of Fish and Rice 和 Revolutionary Chinese Cookbook 的實體版。一起來的還會有 Regula Ysewijn / Miss Foodwise 的 Oats in the North, Wheats from the South 和 Luke Nguyen's Vietnam 的 The Songs of Sapa: Stories and Recipes from Vietnam。

Be Open to Supernatural Solutions
“When evening had come, his disciples came to him, saying, “This place is deserted, and the hour is already late. Send the multitudes away, that they may go into the villages, and buy themselves food.” But Jesus said to them, “They don’t need to go away. You give them something to eat.” They told him, “We only have here five loaves and two fish.”” (Matthew 14:15-17 WEB)
When you have lived many years according to natural rules of this world, you tend to think in a natural-minded way.
When Jesus asked His disciples to feed the multitudes, they were thinking about natural way to provide supply, which is to look at what you physically have in your hands.
They were about to learn the supernatural way through Jesus’ miracle of multiplying the loaves and fishes.
When you think naturally, in the face of a big challenge, you become so aware of the huge demands and the limited supply.
However, there is a source of infinite supply that you can draw from.
The next time you encounter a tough situation, train yourself to be spiritual-minded. Ask yourself, “What is the supernatural way to provide the solution?”
Then, when you have the answer, dare to pray for it. When you pray, you access the riches of God’s Grace.
“But as it is written, “Things which an eye didn’t see, and an ear didn’t hear, which didn’t enter into the heart of man, these God has prepared for those who love him.” But to us, God revealed them through the Spirit. For the Spirit searches all things, yes, the deep things of God.” (1 Corinthians 2:9-10 WEB)
Let this word, “impossible”, be erased from your dictionary. The natural mind has not seen nor heard the things that God has prepared for us who are His beloved children.
The Holy Spirit in you will show you the deep things of God—that all things are possible through Him!

What are you Feeding on?
“The mixed multitude that was among them lusted exceedingly: and the children of Israel also wept again, and said, “Who will give us meat to eat? We remember the fish, which we ate in Egypt for nothing; the cucumbers, and the melons, and the leeks, and the onions, and the garlic; but now we have lost our appetite. There is nothing at all except this manna to look at.” The manna was like coriander seed, and its appearance like the appearance of bdellium. In the wilderness, the children of Israel lusted for the imperfect produce of the cursed ground in Egypt when they had perfect food from Heaven every day. God’s anger burned fiercely against them, and this was done and written for our learning.
“For whatever things were written before were written for our learning, that through perseverance and through encouragement of the Scriptures we might have hope.” (Romans 15:4 WEB)
Are you feeding on the wisdom of the world which is sensual and even demonic, or are you getting sustenance from wisdom from God’s word which is spiritual and heavenly?
“This wisdom is not that which comes down from above, but is earthly, sensual, and demonic. For where jealousy and selfish ambition are, there is confusion and every evil deed. But the wisdom that is from above is first pure, then peaceful, gentle, reasonable, full of mercy and good fruits, without partiality, and without hypocrisy.” (James 3:15-17 WEB)
The taste of manna was like fresh oil. Oil is a picture of the anointing—the Holy Spirit.
When you feed on God’s word, you’re strengthened by the power of the Holy Spirit.
On the other hand, feeding on worldly wisdom only exalts the flesh and teaches you to rely on what is fallen and cursed.
After the fall, Adam only ate food after much toil and sweat from cultivating the cursed ground.
However, before the fall, Adam sowed seeds easily and fruit-bearing trees sprang up without his toil. He only needed to harvest the fruits when he felt like eating.
Do you want to enjoy restful increase and fruitfulness through the power of the Holy Spirit, or do you want to earn limited results that you have to stressfully upkeep through the strength of your flesh?
It’s either you live as a son under Grace, or like a slave under the works of the flesh. Do you want to sow to the Spirit and reap life, or sow to the flesh and reap the fruit of Death?
It all depends on what you’re feeding on. What you feed on affects what you believe, and that in turn influences what you say and do, producing what you have.
If you want to enjoy the God-kind of results, feed on the Gospel of Grace! Don’t get your sustenance from the world, or from the Law of Moses.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)
Difficulty: Very Easy
Time: 15min
Number of servings: 1
Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds
Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

We love steam cooking because it allows us to cook dishes without much effort. If your rice cooker is as big as like ours, you can easily steam the dish at the same time while cooking rice. This method not only will you save energy, but you'll also have lesser pots and pans to wash. We intentionally only used 7 ingredients to cook this steamed chicken recipe so that you can recreate this dish easily. If you want to make it into a balanced dish, you can also add some vegetables, such as carrots, enoki mushrooms, cauliflower or broccoli to the dish. If you are using carrots, cook the chicken and carrots at the same time. If you're using broccoli, enoki mushrooms or cauliflower, add them towards the last 5 minutes of cooking the chicken.

How you make the batter is the key. My mom uses Takoyaki flour and tasty Dashi broth, then makes the batter bit loose and less salty. In this way we can eat Takoyaki forever with No Sauce 😂👍
Serving Takoyaki with Dashi broth is our typical family style. Sometimes we put sauce then pour over the Dashi but this time, no one used the sauce because the batter was a success. Takoyaki is a popular Japanese ball-shaped snack made of batter, diced octopus, tenkasu (tempura scraps), beni shoga (red pickled ginger), and aonegi (green onion), topped with okonomiyaki sauce, mayonnaise, aonori (green laver), and katsuobushi (bonito flakes). How to Make Takoyaki
Difficulty: Easy
Time: 30min
Number of servings: 40 pieces
Necessary Equipment:
Takoyaki pan
spouted measuring cup
oil brush (you can make it with paper towel, chopsticks, and rubber band)
steel pick (long bamboo pick is ok)
Ingredients:
200g (7oz.) takoyaki flour
2 egg
600cc water
cooking oil
Fillings
* diced boiled octopus
* chikuwa (fish cake) if you like
* beni shoga (red pickled ginger)
* tenkasu (tempura scraps)
* aonegi (green onion)
Sauce
* okonomiyaki sauce
* mayonnaise
* katsuobushi (bonito flakes)
* aonori (green laver)
Directions:
1. In a bowl, mix takoyaki flour, eggs, and water (add little by little).
2. Heat takoyaki pan and grease the molds with cooking oil.
3. Pour batter into the molds to the full.
4. Put beni shoga, tenkasu, aonegi, and octopus or chikuwa in each mold.
5. Wait a little until batter on the edge of the molds become cooked.
6. Flip takoyaki with a pick, fix the form by flipping, and cook until golden brown.
How to serve:
1. Place on a plate and top with okonomiyaki sauce, mayonnaise, katsuobushi, and aonori.
2. With dashi broth. (boil 200cc water and 2 tbsp. Kamada dashi soy sauce**)
3. With grated radish and ponzu sauce.
4. With sausage. (cut sausage into half. finely cut outer curve of the sausage and cook. place takoyaki and draw face with nori and ketchup.)
