Yesterday I saw my friend eating hotpot at home so syoik wei, I beh tahan, so my decided to DIY my Spicy Sukiyaki Hotpot. Actually, hotpot is one of the easy one-pot-meal to prepare at home, delicious to eat, a definite family pleaser, and you can eat from day to night. Just boil the soup, throw everything in, and let’s eat! 👩🍳👩🍳

🌟 Tofu Fa with Ginger 薑汁豆腐花 $12. Very smooth despite eating the cold version, with some natural soy beans taste too, which is rare in HK nowadays. Definitely up there in HK Top 3 in recent years. No need to add the red sugar, I just put some in for the photo contrast 📸
🌟🌟 Refrigerated Milk Tea 無冰凍奶茶 (1 glass) $15. It comes as either plain or with ginger juice, also available as whole bottles. Super strong yet smooth 👍🏻👍🏻
🌟 秘製咸檸茶 $20 Proprietary Salted Lemon Tea. Also super greatly balanced, natural tasting. Buy one for the hiking!
🤷🏻♂️ Sea Urchin Fried Rice 海膽炒飯 $118. Inevitably this won't be that amazing, but it does use local HK Sea Urchins, unlike the shops near central Sai Kung 西貢碼頭 which in recent years switched to US or Canadian urchins (unless u find the Urchin Boat parked outside, then order from it directly 🛶).
🌟 椒鹽魷魚 Fresh Local Calamari Salt & Pepper style $118 (not ordered this round). The version here carries a 'secret', but no one writes about it somehow. Their proprietary recipe carries some curry flavor 咖哩味, so it's actually a 咖哩椒鹽魷魚 but it's not recorded down officially 🤔 Not sure if I am even suppose to write this online but there u go?

【Tap Mun 塔門 Island, Sai Kung, Hong Kong】is famous for eating these items plus more, it isn't new. But there are some catches that u need to write an explanation book of 📖. Since there are only 5 to 6 shops on the island selling any form of food, and 3 shops converged to sell similar items. But there are indeed differences:
📍新漢記海鮮酒家 = 唔係粉嶺客家菜嗰間 🤣 was always here, selling local Seafood dishes. But they also sell the above. U come for local prawns & squid cuttlefish, fishes, etc
📍新惠和 = *here, is considered the Best for overall recipes of the above, plus their drinks are equally thoughtful
📍新有記 = was originally only a store 士多. But later on they opened a new kitchen at back, then started copying food from the other 2 shops. It's not meant to be as good, but somehow their 鮮炸墨魚丸 is considered the best

Today, I whipped up a delicious Agua Fresca that I know you will love. Keep reading for the recipe below! ✨Don’t forget to like my page for more tasty recipes ✨
🍉🍃Watermelon & Mint Agua Fresca 🍉🍃
What You’ll Need:
•Watermelon
•(1) Lime
•Ice
•Water
•3 Tbsp Raw Honey
•Fresh Mint
•Glass or plastic pitcher
•Muddler (or anything to crush the mint)
Directions:
1. At the bottom of your pitcher, break up small pieces of fresh mint. I love mint, so I used about 8 leaves 🍃
2. Cut up your lime into 4 wedges & squeeze the juice on top of the mint leaves. Put your lime wedges to the side, we’ll throw them in later ✨
3. Add 3 Tablespoons of raw honey on top of the mint and lime juice mixture, followed by a cup of watermelon.
4. Using a muddler (if you don’t have one, use anything you can find to crush the watermelon & mint mixture) crush all of the ingredients together. The watermelon doesn’t have to be completely crushed, little chunks are okay!
5. Add more watermelon & leftover lime wedges! Don’t crush.
6. Add ice until you reach the halfway mark of your pitcher, fill the remaining pitcher with water & mix!
7. Allow Fresca to chill in the fridge overnight. Enjoy!!!

Hello friends! Today we're going to share with you how to make juicy oven-baked smoked BBQ ribs at home.
Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.
To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. You can use the barbecue sauce suggested in the recipe below or use your favorite homemade or store-bought sauce. Hope you like it. Enjoy. :)

How to make Oven-Baked Smoked BBQ Ribs
✎ Ingredients
pork ribs 950g
☞ for dry marinades
coarse salt 70g
black pepper 15g
ground white pepper 4g
cayenne pepper 2g
granulated sugar 3.5g
garlic powder 1.5g
onion powder 1.5g
☞ for BBQ sauce
chipotle peppers in adobo 7g
regular soy sauce 32g
tomato paste 70g
ketchup 20g
chicken broth 30g
apple cider vinegar 35g
dark beer 45g
fresh orange juice 87g
minced garlic 10g
chili powder 1.5g
onion powder 5g
salt 3g
black pepper 2.5g
light brown sugar 130g
1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
2. Line a baking tray with foil or parchment paper.
3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
4. Using a sharp knife to take off excess fat. Just keep a little fat.
5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
7. Cover with another foil, shiny side out.
8. Preheat the oven to 135C, bake for 2.5~3 hours.
9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.
10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until ribs have been caramelized.
12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.

How to make lemon bars
☞ Baking pan size:18x18x5 cm
✎ Ingredients
📍 crust
all-purpose flour 120g
powdered sugar 40g
frozen unsalted butter 90g, cut into small cubes
salt 1g
📍 lemon filling
medium size egg 2
granulated sugar 160g
fresh lemon juice 80g
all-purpose flour 50g
✎ Instructions
1. Butter the pan, and line the bottom and sides with parchment paper.
2. Sieve the flour and powdered sugar, then add them and cold butter and salt to the food processor. Pulse the mixture until you have a crumb like mixture.
3. Place crumb dough in a baking pan and use fingers or any tools to flatten into the prepared pan.
4. Preheat the oven to 170°C, bake for 20 minutes or until the edges are lightly browned.
5. While baking, In another mixing bowl, beat together 2 eggs and granulated sugar until combined.
6. Sieve the flour into the bowl until mixed well.
7. Pour the fresh lemon juice and whisk until all combined.
8. Once the crust is done. Pour lemon filling mixture into the prepared crust directly out of the oven. Return to the oven and bake for 10 minutes. (170°C), then cover the pan with foil and bake for an additional 10 minutes.
9. Once baked, Let cool completely on a wire rack. Then fridge for at least one hour.
10. Before serving, cut the outer edge off of each side, dust with powdered sugar and cut into bar shape or square shape as you like.

作り方:
1. 沸騰させた湯にとうもろこしを入れ、3分茹でる。
2.サラダ油を入れたフライパンを中火で熱し、茹でたとうもろこしを入れる。前面に焼き色がつくまで焼く。
3. 小さめのボウルに醤油と砂糖を入れ、混ぜ合わせる。(2)に入れ、刷毛でとうもろこしに塗る。皿に移したら、完成!

材料:
とうもろこし 3本
無塩バター 大さじ1
トマト(角切り)1個
セラーノペッパー(青唐辛子)1個
コリアンダーパウダー 小さじ1
グリーンチリパウダー 小さじ1
ターメリックパウダー 小さじ1/2
ココナッツミルク 800ml
レモン果汁 大さじ2
パクチー 少々
作り方:
1. 沸騰させた湯にとうもろこしを入れ、3分茹でる。まな板に移し、少し冷ます。
2. とうもろこしを4等分に切る。
3. 鍋にバターを入れる。溶けたらトマトを加え、柔らかくなるまで炒める。セラーノペッパー、コリアンダーパウダー、グリーンチリパウダー、 ターメリックパウダーを入れ、よく混ぜる。
4. ココナッツミルクを入れて煮る。とうもろこしとレモンを加えて混ぜる。
5. ボウルに注いでパクチーでトッピングしたら、完成!

1 ½ teaspoons salt
Preparation:
1. Blanch the corn in a large pot of boiling water for 3 minutes. Remove the corn from the pot.
2. Heat the ghee in a medium pan over medium-high heat. Add the corn and cook, turning occasionally, until nicely browned on all sides. Transfer to a serving plate.
3. Squeeze the lime juice all over the corn.
4. In a small bowl, combine the chili powder, cumin, cayenne, garam masala, and salt. Sprinkle all over the corn.

■Yaki Tomorokoshi (Japan)
for 3 servings
Ingredients:
3 ears corn, shucked
1 tablespoon canola oil
3 tablespoons soy sauce
1 tablespoon sugar
Preparation:
1. Blanch the corn in a large pot of boiling water for 3 minutes. Remove the corn from the pot.
2. Heat the canola oil in a medium pan over medium-high heat. Add the corn and cook, turning occasionally, until nicely browned on all sides.
3. In a small bowl, combine the soy sauce and sugar. Pour over the corn in the pan and brush over the corn until well coated. Transfer to a serving plate.
4. Enjoy!
■Makai Paka (East Africa)
for 3 servings
Ingredients:
3 ears corn, shucked
1 tablespoon unsalted butter
1 medium tomato, diced
1 serrano chile, minced
1 teaspoon ground coriander
1 teaspoon green chile
½ teaspoon ground turmeric
27 oz coconut milk(800 mL)
2 tablespoons lemon juice
1 bunch fresh cilantro, chopped
Preparation:
1. Blanch the corn in a large pot of boiling water for 3 minutes. Remove the corn from the pot.
2. Let the corn cool slightly, then slice crosswise into 2-inch (5 cm) pieces, about 4 per cob.
3. In a medium pot, melt the butter over medium heat. Add the tomato and cook until softened. Add the serrano chili, ground coriander, green chile powder, and turmeric and stir well.
4. Add the coconut milk and bring to a simmer. Add the corn and lemon juice and stir well.
5. Transfer the corn and sauce to a serving bowl and garnish with cilantro.
6. Enjoy!
