The recipe for making mixed nuts mooncakes is versatile, you can mix and tweak as many types of nuts and dried fruits combinations as you desired. I have added some black sesame paste in the fillings to replace the use of oil. This is a healthier alternative to mooncakes that uses oil, lard, and sweetened bean paste fillings.

今年中秋我想了好久到底要做哪一款月餅
想了好久最後決定用紫薯與拉絲乳酪完美結合❤️
非常久之前就已經訂了月餅模具
終於派上用場了🤣
其實我也很想要嘗試看看蛋黃酥
但是說真的
我不想要一次買20個鹹蛋黃🤣
研發了這一個Q彈拉絲的低卡月餅
愛吃麻糬的你一定會喜歡
✅高纖低卡
✅蛋奶素
✅無加糖&油
✅免烤箱
✅零失敗超簡單
料理新手一定也可以做成功!
吃起來沒什麼罪惡感🤣
當然跟高糖油的月餅美味沒得比
但是中秋節想吃月餅又怕胖的
就很適合做做看
裡面的餡料
其實大家可以發揮自己的創意
一片一片的那種起司片
也是可以的
紫薯的色澤配上玫瑰花紋
真的超美的(滿意滿意
(我是使用之前團購的那款金山紅紫薯做的,紫薯蒸熟剝皮的就行了

🥮材料:
A
無糖杏仁奶40ml
洋車前子殼粉7克
阿洛酮糖20克(一種零卡代糖)
B
杏仁粉30克
熟紫薯200g
無味蛋白粉15g(是無糖無味的,也可以用香草代替)
樹薯粉30g
C
內餡:
一片瑪茲瑞拉起司
註:也可以包低脂奶油乳酪或茅屋起司
我這次還有做另一款是起司加地瓜餡也很好吃!

🥮作法
1⃣️把杏仁奶、洋車前子與阿洛酮糖混合後,放置二十分鐘使之膨脹
2⃣️碗裡加入剝皮的紫薯、蛋白粉、剛剛的洋車前子混合液、樹薯粉與杏仁粉攪拌均勻
3⃣️把乳酪分成七等分的小球或方塊
4⃣️把麵糰分成七顆40克的小球,搓成圓球,記得在檯面上灑一點樹薯粉才不會沾手
5⃣️紫薯麵糰包入乳酪餡,還做了另一款是包了地瓜泥的,搓成小球
6⃣️拿出月餅模具,模具要灑一點樹薯粉防沾粘,放入麵團壓成月餅
7⃣️上鍋蒸15分鐘即完成,可以趁熱吃也可以放涼或冷藏後食用
🌟密封保存一星期內食用完畢
🌟內餡可以替換成奶油乳酪、茅屋起司或是起司片都可以唷
🥮Ingredients:
Almond milk 40ml
psyllium husk powder 7g
Allulose20g
Super fine almond powder 30g
UBE 200g
Plain protein powder 15g
Tapioca flour 30g
almond flour 30g
30g mozzarella cheese
1⃣️Mix almond milk, psyllium husk powder and allulose, wait for 20mins
2⃣️Put ube into a bowl, add protein powder. Psyllium husk mixture, apioca flour and almond flour, mix well
3⃣️divide the cheese into 7 equal parts
4⃣️Roll into 7 even balls (40g each)
5⃣️Place cheese filling in the centre
6⃣️then place the mold on top of the dough to form the mooncake.
7⃣️steam for 15min⋯⋯then enjoy!💕
