How was your weekend? We celebrated Easter w a little homemade Sunday brunch.
We have had a lot of one-pot meals so this “fancy” smorgasbord brought a lot of smiles. We even dressed up (and matched!) in our Easter dresses.
To celebrate, I wanted to share w you a favorite pancake recipe I inherited from my sister-in-law in Wisconsin.
I love that the cousins get to stay connected over their love of pancakes and the mamas that love them!
It’s simple, one mixing bowl joy. We subbed the vegetable oil for coconut oil today and it ended up runnier but also a lot yummier! It’s sweet so you can even get away without any maple syrup.
You can half the recipe for a smaller batch but my favorite #kacaumamahack is to do all the work and dirty the kitchen once so I make a large batch then freeze the leftovers for easy breakfast and snack options!
The other hacks are that I cook the bacon and sausages at the same time in the oven (bacon on a rack, sausages at the bottom 400f for 20-25mins) no need for oil splatters and clean up or watching it so it doesn’t burn and the tomatoes, spinach, mushrooms all go in the same pan too. Cut up some fruit and throw it on a cutting board and TADAH!!! 🎉🎉
My husband also created a pancake avo taco this weekend and is very proud of himself. 😂❤️

ShuangLi’s Yummy Homemade Pancakes
2 cups flour
1/4 cup sugar
1tbsp baking powder
1/2 tsp salt
2 eggs
1/4 cup vegetable oil
1 1/2 cups milk
1. Whisk all the dry ingredients together before adding in all the wet ingredients and mixing it together.
2. Over medium to low heat, melt a little butter and swish it around the pan.
3. Pour pancake mix into the pan. I usually use a 1/8 cup for silver-dollar sized pancakes. You can also pour into an empty ketchup bottle to make intricate designs or just slap some on there with a ladle if you don't really care. 🙂
4. Pancake is ready to be flipped when lots of bubbles form on the surface.
5. Let the other side brown and of course, taste test as you cook. 😉
Ps. It’s a little bit messier but sometimes I even add in dark choc chips 😍😍 or blueberries!

Goya Chanpuru (Stir-Fried Bitter Melon) is a very popular Okinawan dish. The dish is eaten very often in Summer in Japan when Goya (bitter melon/gourd/squash) is in season!
By washing or boiling it, you can remove the bitter taste BUT I know some of you still don't like the bitter flavor of Goya. Sure this is the recipe for those who love it ;) hehe

Goya Chanpuru / Stir-Fried Bitter Melon
Difficulty: Easy
Time: 25min
Number of servings: 4
Ingredients:
1 (250g=8.8oz.) Goya (bitter melon)
180g (6.4oz.) thinly sliced pork *ham, bacon, or SPAM is okay but you may want to less the amount of soy sauce when you season at the end
400g (14oz.) Shima-dofu (cotton / firm tofu)
2 eggs
A
* salt and pepper
* 2 tsp. corn or potato starch
1/2 tbsp. cooking oil
1/2 tbsp. sesame oil
B
* 1 tbsp. soy sauce
* salt and pepper
1 (5g) package Katsuobushi (bonito flakes)
Directions:
1. Cut both ends of Goya, then cut in half lengthwise. Scrape off the seeds with a spoon and slice into thin half rounds. Put them in a bowl, sprinkle with 1/2 tsp. of salt, then leave for 5 minutes until tender. Wash and drain well. *in this way you can remove the bitter taste of the Goya.
2. Tear Tofu into bite-size chunks and drain well in a strainer.
3. Cut sliced pork into bite-size pieces if necessary, then season with A.
4. Heat cooking oil in a frying pan and cook Tofu until golden brown. Then set aside.
5. In the same pan, heat sesame oil, then stir-fry the pork and Goya until done. Then add back the Tofu and season with B. *if you are using ham, bacon, or SPAM you may want to less the amount of soy sauce
6. Pour in the beaten egg, wait for 10 seconds until slightly cooked, then toss lightly.
7. Quickly mix in Katsuobushi (bonito flakes) to finish.
