Pic 1-while soaking. Pic 2 - noodles are ready. Pic 3 - my noodles recommendations if you’re in Holland. How to prepare noodles! Here in Europe we don’t have that advantage of getting fresh noodles easily so the dried ones are the best form of noodles to use as I would recommend for my recipes.
Apart from it’s good as you can keep it long in your kitchen cupboard I also like it as I prefer my noodles to be a bit #aldante but many people still got it wrong how to prepare the dried noodles. All you need to do is bring enough water to the boil then turn the heat off and put in your noodles and leave them fully soaked for 8 minutes only.
Most people still let the heat running and boil them like spaghetti which is wrong. As soon as 8 minutes is up, run the noodles with the cold water right away to kill of the heat from still cooking the noodles. If you want to cook the noodles later then you can pour a splash of vegetable oil to keep them from sticking otherwise you can cook the noodles right away. While soaking the flat rice noodles I will advise to stir with fork or tong as the noodles can easily stick to each other.

Katong Laksa, like chicken rice and Char Kway Teow, is one of the dishes that almost all Singaporeans know. So after eating it for so many years we decided to find out how it is made. (Something we discovered: the coconut milk should simmer gently as boiling it too harshly causes the soup to thicken up really fast). Aside from that, I would say that we manage to replicate the familiar taste of Katong Laksa. of course, with more practice, it should get really close to the original taste. This is a dish which proves that patience pays off. Especially while frying the rempah paste and simmering the laksa soup. So guys, give it a try and share your home cooked Laksa with your friends and family.
note. we wanted to use fresh coconut milk but couldn't get hold of it that day. If you managed to get fresh ones, try it and let us know your results!

Ingredients
Rempah/ Spice Paste
2 thumb size pieces of fresh turmeric/ kunyit, peeled
10 slices of galangal
25 pieces dried red chilies, soaked in water to soften (or 1/2 to 3/4 packet of the ground chili paste of a large packet)
7 candlenuts (buah keras/ kimiri)
2 tablespoon of belachan/ terasi
400 gm shallots (small onion)
6 stalks of lemongrass/ serai, tender white part only, chopped
1 tbsp of ground coriander
Salt to taste
60 gm of dried prawn / hay bee
Laksa Soup
1.5 litre of coconut milk
2 cup water (use part of it to soak the dried prawn / hay bee)
4 stalks of Laksa leaves
Toppings
500 g bean sprouts
1 kg fresh rice vermicelli (Laksa noodles)
1 kg prawns (cooked and shelled)
4 fish cakes (sliced)
Finely chopped Laksa leaves for granish
10 tau pok

We've been taught since young to embrace racial diversity and maintain social harmony. Sichuan (Szechuan or sometimes spelt as Schezwan) food has a unique bold and lip-numbing spiciness in most of their dishes because of the liberal use of garlic, Sichuan peppercorns and other spices. One of their most popular dishes is this Spicy Fish Hot Pot or Chong Qing Grilled Fish. The soup base of this dish is good to go with rice and noodles. You can also add any side ingredients, such as beancurd skin, tofu, mushrooms, prawns, instant ramen noodles, etc to this dish. If you have a party coming up, you can consider serving this over a portable stove and have the side ingredients placed on the side so that your guests can cook while they eat. It's a really nice experience. Just prepare extra stock because we can guarantee you that a top-up is required. If you've never tried this yummy dish before, do give it a go.

Sichuan Spicy Fish Hot Pot (Szechuan Chong Qing Grilled Fish) 重庆烤鱼

We love Kimchi Jjigae (also known as kimchi soup or stew in English). This soup is super easy to make and you just need to cook some rice to go with it and call it a day. So easy! A big shout-out to Lady Boss Choi of Hanwoori Korean restaurant in Singapore. This restaurant is in our neighbourhood and her kimchi jjigae is really really good. If you don't like seafood, you can also use shabu shabu pork belly or beef. You don't have to season the meat, just add them around the same time as we added the seafood.

Seafood Kimchi Jjigae 韩国海鲜泡菜汤 (Kimchi Soup / Stew)
Ingredients:
Serves 4 - 5 pax

1.5L water
6 tablespoons light soy sauce
4 cloves of chopped garlic
1 teaspoon grounded black pepper
6 tablespoons Korean chilli powder (gochugaru)
3 tablespoons gojuchang (Korean chilli paste)
450g kimchi
300g silken tofu
1 red onion - sliced
4 fresh shitake mushrooms - sliced
3 potatoes - sliced
50g sweet potato vermicelli (can be replaced with glass noodles)
2 stalks of spring onion (can be replaced with scallion)
1 teaspoon salt (season to taste)
200g prawns
200g baby octopus (can be replaced with squid)
300g venus clams
150g enoki mushrooms
Add some white vinegar at the end of the cooking if you like the soup to be more tangy.
