我嘅Herpetophobia(唔係heterophobia but well this deserves another post) 可能來自我好唔鍾意wriggle wriggle又動作迅速嘅事物(reptiles),唔係reptile嘅衣魚都係其中一種。咁e個時候therapist就可能會問,”where does the dislike come from?” 諗一陣我可能就答 “because the fact that they are so swift means that I lose control over my household, somewhere I thought I enjoy peace and maximum protection in.” 跟住therapist 就會話「咁係咪合理?」
咁我就maybe會話「其實唔合理因為我唔可以控制所有嘢,其他動物or昆蟲or爬爬嘅free will我無法即時控制(but wouldn’t it be great),我只能夠在能力範圍內改變四周環境去curate what i want in life。
Therapist:Go on
Me:但係我嘅恐懼or焦慮應該係來自一切難以控制嘅事物,事物嘅威脅又隨其物理體積、行動力(aka權力)及其隱藏能力exponentially增加。例如一d unstable 嘅former affiliation、唔知邊度出現嘅父母親新朋友、遠房親戚etc
Therapist:咁可以理解以你好「唔鍾意」以上例子,同埋你所謂嘅「ew直佬」、隨便同你影相嘅人,都係因為似乎你控制唔到佢地?
Me:咁簡單like唔好講sexist jokes 或尊重私人時間都唔自己get到咁我就覺得好distressed

Me:係因為佢地唔跟我個習慣or 價值觀?
Therapy:do they necessarily know what’s in your mind?
Me: no, and probably no one in their lives have ever expressed distress or told them it’s NOPE。我覺得ew嘅嘢都可能係因為我即時控制唔到佢地習慣or 價值觀?
Therapist: it’s ok to feel upset. Now back to the gecko…
Me: 我可能唔鍾意「the Other」、「a stealthy other」,都係因為我習慣心安來自full control,咁我可能要知道1. 無可能full control 2. 唔係full control都可能有inner peace 3. 能夠能力範圍內改變自己和周遭已經不錯 4. lost control 嘅時候最重要有support network,例如開ig live 或者post status

The self-criticised, not-good-enough, self-doubting, vulnerable days can be dreadful especially during this difficult times.
When these moments hit, I’ll always take a pause, acknowledge the feelings, be understanding and be patient.
And very often, I have also found myself practicing few things that drastically improve my well beings.
Here, are the 5 things I do regularly to nourish my inner self. Hopefully they will work on you too! ☺️
1. Read.
This sounds cliche, but with all the work and house chores, reading has become one of the few ways I could learn and get inspired. It calms me on a chaotic day, and it trains me to be more focused. My mind could be freed and creative, it’s a form of meditation when I’m lost.
2. Social media detox.
Things can be fun and glamorous here. But at the same time, the negative impacts are real if I spend too much time on social media. I disconnect myself when I just want to reconnect with my inner peace or stay in the present.
3. Sweat.
Blood flow and endorphin boost. For me, four times a week and an hour each time. Exercising and sweating can be great on freshening up my mood.
4. Eat mindfully.
On the weekdays, I practice the rule of “You’re what you eat.” Take lots of greens and avoid non-healthy food which can lead to inflamation and fatigue. By doing so, I could better control my emotions and stay productive the whole day. Well, on the weekends, I do eat naughty food to feed my soul. Ultimately, getting a balance between soul and mental haha.
5. Get a good sleep.
Sometimes I take for granted for being able to sleep. A proper sleep helps me to recharge and take on the next day challenges positively.

I’m finally out! Not too happy to celebrate yet, more like i’m living with more contentment and appreciation for life now. 21 days #hotelquarantine has been a lot of time for silence, self-reflection, and self-care. Mostly learning how to take good care of myself, my mind and my body. Maybe it’s okay to feel upset sometimes, lonely at times, unproductive/productive at other times. It’s okay to take small baby steps to get where you want to be, my mom kept telling me. #thxmom❤️
Especially on the third week of hotel quarantine, the feelings really got to me, I brokedown in tears. Once in the morning, second time during my meditation practice. It didn’t feel good at the time but it was a good release. Onto the last week, feeling bad doesn’t change anything in my situation so all I could do was learn to accept, understand those emotions and just let it go. I know that all of you, every one of you have been coping with these 2 years of covid differently, some have lost their jobs, some lost their loved ones, and others just got to do what they can to survive. I have watched enough youtube videos since Day 1 to know, i want to say I understand, I sympathize with you. We are all just doing what we can.
Your stories inspire me to become more positive and grateful for my own situation. That’s the reason I could pick myself back up mentally and physically. #21dayscompleted
I’m glad to say I overcame my fears of the dark, unknown unseeable things, loneliness, restlessness, germs and covid. I’m eating a lot healthier and clean. I also can’t believe i did 6 pcr exams this time coming back from Taiwan🥲👌🏻 We can only do as much as we can and be conscious of what choices we are making. Take care of your loved ones, your family and friends will always be there for you. We are all in this together. Thanks for stopping by.
I am sure most of you have watched countless sourdough videos available out there, and most are mix by hand tutorials.
If you find joy in touching your dough and don’t mind the mess, well, good for you ??
But if you prefer a no-fuss and less messy way without compromising the end result, this recipe is for you!
See, I am impatient. I work a mentally demanding full time job, and when I make sourdough, I don’t like to fuss over them.
Normally, I maximise my yield for each batch by making 4-6 (sometimes 8!) loaves of sourdough, because making 1 or 10 loaves to me takes the same amount of preparation and effort.
Anyway, here’s the recipe.
Enjoy!
Ingredients:
300g Bob’s Artisan Bread Flour (or any high protein bread flour, at least 12-13% protein)
65g starter (tripled, use at peak)
233g water (room temperature)
6g Pink Himalayan Salt (or regular salt)
Method:
1. Autolyse 30 minutes
2. Add starter, mix, wait 15 minutes (I sometimes add salt together with starter when I am not in the mood and still get great results)
3. Add salt, mix, wait 15 minutes
4. Transfer to a bulking dish
5. Coil fold x 1
6. Coil fold x 2
7. Coil fold x 3
8. Coil fold x 4 - skip this step if your dough is strong
9. Leave to bulk
10. Total bulk 4 hours at 28C
11. Final shape
12. Cold retard overnight at 3C - make sure your fridge temperature no more than 3C!
13. Preheat oven at 250C, fan mode, for 1 hour
14. Bake at 250C, fan mode, for 35 minutes, lid close
15. And 250C, fan mode, for 5 minutes, lid off
16. Let bread cool completely before cutting, at least 1 hour

Notes:
Always begin with a strong and healthy starter.
Make sure your dough has increased 50% in size.
As beginners, I know it is very hard to determine if your dough has finished its bulk fermentation based on the look and feel, due to the lack of experience. I know that feeling very well, because I was once that lost, clueless beginner myself.
After tinkering with sourdough for about a year, I have come up with a rough timing guide for bulk fermentation based on room/kitchen temperature, well, sort of like a cheat sheet, so you can get the hang of sourdough bread making and get good results every time.
Remember, bulk fermentation starts when starter is mixed into the dough.
