【LA life day 12: The Tonkotsu Ramen that connects the past, present and future】

Tonkotsu Ramen always reminds me of middle school– there’s a nice little ramen place near my school and I went there after the summer classes with my classmates almost every day. The Tonkotsu Ramen there was so creamy, rich, and flavorful– it was definitely the highlight in the dull middle school years.

I have never had Tonkotsu Ramen after I turned vegan. The essence of the Tonkotsu Ramen lies in the broth– bones are cooked at a rolling boil for a long period of time until the collagen dissolves into gelatin that adds richness to the broth. My landlord's happy face when describing the taste of her Tonkotsu Ramen inspired me to search for vegan Tonkotsu Ramen recipes– and I had a fruitful discovery! I found that kombu and shitake mushroom boiled in vegetable stock makes perfect soup base– it adds umami and extra depth to the broth. To create the richness and creaminess, we use oat milk and mix it with sesame paste– this creates a subtle sweetness and savoring nuttiness to the soup!

On a chill Saturday afternoon, I invited my friend to try out this Tonkotsu Ramen recipe with me. We weren't able to get kombu and shitake mushrooms in the grocery stores here in LA, but we found a secret ingredient that works wonders– the fermented bean paste. The fermentation process adds depth to the umami and blends harmoniously with the oat milk, creating a savoring sensation when you sip the noodles.

We drizzled hot chili oil on top of the ramen for seasoning. The moment the chili oil diffuses into the soup, suddenly I was back in the little ramen place again– it is strange how your sense of smell roots deep inside your memory lane once you allow your mind to return into the grooves which lead back.

School starts tomorrow and I can literally feel the butterflies in my stomach, yet it's exciting to be able to talk to my professors and classmates face to face after COVID has distanced us for so long. Walking around the campus, the back to school vibe energizes me and I think I am ready for a brand new start!

One type of cuisine that I could never get tired of is shabu shabu. It’s just cooking thinly sliced beef in a boiling pot of kombu water, served with two types of dipping sauces, ponzu with spicy daikon & negi, and roasted sesame dipping sauces, that’s it. We are definitely not going for the creativity nor special recipes when we go for shabu shabu, it’s all about the quality of beef & how perfectly thin the beef is sliced. The beef they serve here is Omi Beef, it’s wagyu originating from Shiga Prefecture. So evenly marbled, with a good balance of tenderness in the meat texture. We are making Tofu Don, a tofu bowl, which is a delicious way to enjoy plenty of chilled, smooth tofu. We'll also introduce how to make delicious dashi soy sauce. This is an easy and very tasty rice bowl that you don't need to cook during the hot season. You can just arrange what you have in the refrigerator on the rice bowl.
How to Make Tofu Don

(serves 1) Cook Time: 20 minutes
[Tofu Don (Tofu Bowl)]
Steamed Rice, as much as you like
Used Katsuobushi (Bonito Flakes), saved after making the dashi stock
200g Soft Silken Tofu, 1/2 pack (7.1 oz)
1 Egg Yolk, optional
20g Soft Shirasu Whitebait, kamaage shirasu (0.7 oz)
20g Takanazuke, pickled takana leaves fermented with lactic acid, substitute: suguki, nozawana or hiroshima pickles (0.7 oz)
Tenkasu, crunchy bits of deep fried flour-batter
Spring Onion Leaves
Toasted White Sesame Seeds
[Dashi Soy Sauce] (about 150 ml/5.1 fl oz, substitute: regular soy sauce or mentsuyu, noodle soup base)
80ml Mirin (2.7 fl oz)
100ml Soy Sauce (3.4 fl oz)
50ml Water (1.7 fl oz)
3g Dashi Kombu Seaweed, shredded used kombu can be used in miso soup (0.11 oz)
10g Katsuobushi (Bonito Flakes) (0.35 oz)
Recipe Notes:
As a substitute for the takana pickle, there are lactic acid fermented pickles such as Kyoto's Suguki, Hiroshimana, and Nozawana pickles.
When using this dashi soy sauce as a dipping sauce for soba or udon noodles, dilute 1 part dashi soy sauce with 2 parts cold water.
When making the dashi soy sauce, you can add sake to the mirin instead of the water and evaporate the alcohol together. The sake will add a savory flavor to the dashi soy sauce, making it even more delicious.
You can store the chopped spring onions in the refrigerator for 3 to 4 days. Line a paper towel in a food storage container and place the spring onions in it.

【材料】(保存期間:冷蔵で約3日)
●キュウリ:6本
●白だし(10倍濃縮):大さじ6(薄めがお好みの方は大さじ4くらい)
●醤油:大さじ2(薄めがお好みの方は大さじ1くらい)
●塩昆布:大さじ2
●酢:大さじ2
●豆板醤:大さじ1(コチュジャンでもOK)
●砂糖:小さじ2(ラカントとかにするとより糖質を抑えれます)
●唐辛子:お好み量
●生姜:お好み量
●お好みでおろしニンニクか刻みニンニクをプラスしてもよりやみつきに♪
※二度漬けは出来ません。
※今回の味の濃さだとお酒だけじゃなくご飯もすすむ感じの濃さです♪
味の濃さは動画でお伝えしている通り、お好みで調節してみて下さい。

今回は食べて貰った方に必ずレシピを聞かれるくらい大好評の
『超やべぇキュウリの1/2本漬け』を作りました。
何度も漬けてきて分かったんですけど1本より1/2本の方が漬けやすいw
市販品やお店でも食べる事はあるんですが
やっぱりこの味が一番大好きで
食べて貰った方にも他の味だと物足りない…
って何度も言われたくらい(これ言われるの凄く嬉しい♪)
暑い日や夏の季節になると僕も必ず作るんです(*^^*)
酸味や塩気もちょうど良くて(自分好みに出来るのも良いよね♪)
後からほんのりピリっとくる感じと生姜の清涼感が
暑さを吹き飛ばしてくれて最高なんです!!!
あとこのあごだし入りの白だしと塩昆布、それから豆板醤のお陰で
味にコクと奥行きが出てキュウリだけなのにお酒とご飯が超すすむんです♪
暑い日はこれとビールさえあれば他は何もいらないですよ!(おにぎりあったら尚よしw)
作り方も漬けるだけ!!とっても簡単なので
『超やべぇキュウリ』是非一度お試し下さい。
【Ingredients】 (Preservation period: about 3 days refrigerated)
● Cucumber: 6
● Clear soup base (10x concentrated): 6 tablespoons
● Soy sauce: 2 tablespoons (or about 1 tablespoon if you prefer a
lighter soy sauce)
● Sio-Kombu (seasoned seaweed): 2 tablespoons
● Vinegar: 2 tablespoons
● Dou ban jiang: 1 tablespoon(gochujang is also fine)
● Sugar: 2 teaspoons (you can use lakanto to reduce sugar content)
● Chili pepper to taste
● Ginger: As much as you like
● Ginger: to taste
※ You can't marinate it twice.
※ The flavor is so thick that it can be enjoyed with rice as well as alcohol ♪
You can adjust the intensity of the flavor to your liking as shown in the video

This time, I made "Amazingly Yummy Half Cucumber Pickles", which is so popular that people who have eaten it always ask me for the recipe.
I've been pickling cucumbers for a long time, and I've learned that it's easier to pickle 1/2 cucumber than 1 cucumber lol
I've eaten it in stores and stores, but this flavor is my favorite,
and I've been told many times by people who've eaten it that other flavors are not good enough (I'm very happy to hear this ♪)
Whenever it's hot or in the summer season, I make it (*^^*)
It has just the right amount of sourness and saltiness (it's also good that you can make it to your own taste ♪)
The slight spiciness afterwards and the coolness of the ginger blow away the heat!!
Also, the clear soup base with fish stock, salted kelp, and Dou ban jiang add a richness and depth to the flavor, and even though it's just cucumbers, it goes great with drinks and rice ♪
When it's hot, all you need is this and beer, and you don't need anything else! (If you have Onigiri (rice balls) it's even better lol)
All you have to do is pickle it! It's very easy to make, so please give "Amazingly Yummy Half Cucumber Pickles" a try.

Brussels Sprouts Ohitashi (Japanese Vegan Recipe)
Difficulty: VERY EASY
Time: 5min
Number of servings: 2
Ingredients:
200g (7oz.) brussels sprouts
salt
* 100ml water
* 1/3 tsp. Kombu kelp Dashi powder https://amzn.to/2Ysaqgv
* 1 tbsp. soy sauce
* 1/3 tsp. sugar
ground white sesame seeds
Directions:
1. Wash brussels sprouts, trim off the dirty end, then slice down the middle lengthwise.
2. Boil water in a large pot. Add a teaspoon of salt in the water, cook brussels sprouts for about 3 minutes. Drain well in a strainer.
3. In a sauce pan or microwave, heat water, Kombu kelp Dashi powder, soy sauce, and sugar mixture until it comes to a boil.
4. Soak brussels sprouts in Dashi soy sauce.
5. Sprinkle with some fresh ground white sesame seeds just before you serve.
You can keep it in the fridge for 3 days.
