《食材》
✔️五花肉少許、海鮮(花枝、蝦、任何你喜歡的海鮮)
✔️蒜末、薑末、杏鮑菇、Leek (or 蒜苗)、胡蘿蔔、黑木耳、青菜(或任何你愛的蔬菜)
✔️麵條
《高湯》
昆布兩片約手掌大+魚干10尾(去內臟,不然湯會苦)+2000cc水; 中火熬煮20分鐘。
*也可以用自來水高湯、雞湯。
《調味料》
(1) 韓式辣椒粉(可省略)、醬油、蠔油、黑胡椒
(2)(可省略)黑醋、芝麻油、白胡椒、少許木糖醇 (或糖)
《作法》
1. 五花肉炒至金黃、加入所有蔬菜炒軟,葉類蔬菜先不放,不然會煮爛!
加入(1)調味料拌炒個1分鐘
2. 加入高湯,蓋鍋中火煮10分鐘
3. 加入葉類蔬菜、海鮮、黑醋1大匙、芝麻油、白胡椒、蓋鍋煮2分鐘
4. 加入煮好的麵條
《Ingredients》
✔️Pork belly 50 g, Squids, Prawn (Or any seafood you prefer)
✔️Minced garlic & ginger, Leek, mushrooms, carrots, black wood ear, or any veggies you like
✔️wheat noodles
《Stock》
Dried kelps (2 X Palm size) + 10 Dried anchovy (remove the guts)+ Water 2000ml ;cook for 20 mins with medium high heat. Then keep the stock and remove all the ingredients.
*You can just use water, chicken stock or fish stock.
《Seasoning》
(1) Korean chill powder(can skip)
(2) Soy sauce
(3) Oyster sauce
(4) black Pepper
(5) You can skip : black vinegar, sesame oil, white pepper and little of xylitol (or sugar)
《Method》
1. Fry pork belly until a bit golden brown then add veggies (Except leafy veggies) & seasoning 1˜4, fry for 1 min until everything combines together.
2. Add stock and cook for 10 mins with medium high heat, lid on.
3. Add seafood, leafy veggies and (5) seasonings. Cook for 2 mins
4. Serve with wheat noodles.

近年大家對韓國美食的印象都被炸雞、即食麵、燒肉、部隊鍋文化淹沒,全部都是油炸、味濃的不健康食物,其實傳統韓國菜深受中國陰陽五行概念的影響,著重醫食同源、順應四時、講究平衡,所以傳統韓國菜會五色兼備:青、赤、黃、白、黑,五種顏色的食材對應身體五個臟腑:肝、心、脾、肺、腎,達致調和五臟的效果,韓式拌飯(Bibimbap)就可以輕鬆做到!這道韓國傳統美食要準備及處理多種材料,步驟看似繁複,但其實材料選擇很具彈性,沒有菠菜就換成青瓜,忘了買鮮冬菇換成紫菜亦可,是一道很方便的「清雪櫃」菜式。
韓式拌飯
材料:菠菜半斤、紅蘿蔔1/2條、雞蛋2隻、芽菜半斤、鮮冬菇3隻、牛肉200克、蒜頭(磨蓉)1瓣、白飯2碗、韓式拌飯醬適量
做法:
1. 材料洗淨,菠菜汆水燙熟,擠乾水份,加入蒜蓉、適量麻油及鹽拌勻備用;牛肉切絲,加適量豉油、糖、麻油醃20分鐘,下鑊炒熟備用;雞蛋煎成荷包蛋備用;鮮冬菇切片,與紅蘿蔔及芽菜分別加適量麻油及鹽炒熟,盛起備用。
2. 準備一隻大碗,鋪上白飯,再排上各種材料。
3. 進食前加入適量韓式拌飯醬拌勻即可。

Korean-style mixed rice (bibimbap) can nourish the five organs
In recent years, people’s impression of Korean food often revolves around fried chicken, instant noodles, grilled meat, and troop pot. They are mostly fried and heavily seasoned food that are often unhealthy.
Traditional Korean cuisine is actually heavily influenced by the Chinese’s concept of Yin Yang and Five Elements, which emphasize the medicinal values and the origins of the ingredients, its adjustment to the four seasons, and the importance of balance. This is why traditional Korean cuisine often contains five colors: green, red, yellow, white and black, which correspond with the five organs of the human body: liver, heart, spleen, lungs and kidney.
This also means Korean mixed rice, or bibimbap, can be made easily at home! This delicacy requires quite a number of ingredients and the processes seemed to be complicated, but in fact, the preparation is rather flexible. You can always replace spinach with cucumber, or use seaweed instead of fresh mushrooms. It is an excellent dish to help clear the leftovers in your refrigerator.
Bibimbap
Ingredients: 300g spinach, half a carrot, 2 eggs, 300g beansprouts, 3 fresh Shitake mushrooms, 200g beef, 1 clove of minced garlic, 2 bowls of cooked rice, bibimbap paste
Preparation:
1. Rinse all the ingredients. Boil the spinach in hot water and rinse it off the excess water. Add garlic, an appropriate amount of sesame oil and salt, and mix well.
Slice the beef and marinate with soy sauce, sugar, and sesame oil for 20 minutes, then fry the mixture in a pan.
Fry the eggs; slice the fresh Shitake mushrooms, fry them together with carrot and beansprouts, then season the mixture with sesame oil and salt.
2. Fill up a large bowl with cooked rice, and lay all the ingredients that have been prepared in Step 1 on top of it.
3. Add bibimbap paste to serve.

《 Spicy Tofu with Buckwheat Noodles salad bowl / 辣豆腐蕎麥麵沙拉健康碗 》
這幾天吃太多肉了,想說來meal prep 無肉的沙拉,當然還是要有蛋白質! 於是就變出這道無敵好吃的Salad bowl!!! 很適合夏天吃噢!!!
👉做法: (4份餐的量)
1.先醃豆腐(約900克),醃至少10分鐘
將豆腐切成ㄧ口大小(按個人喜好)再和醬汁混合
醃醬:3匙湯匙醬油+3湯匙芝麻油+2湯匙水+2湯匙任何辣醬(我用韓國辣醬)+蒜末(3瓣)
2. 豆腐放一邊醃,開始備料,蘆筍5根切段,酪梨取1/4出來切塊(ㄧ碗沙拉碗的量),紅蘿蔔(ㄧ根中等大小)切絲,Kaleㄧ大把切段(記得洗嘿),
P.s 備料到一半,先預熱烤箱200度
3. 烤箱預熱好後,把豆腐鋪平不要重疊,旁邊放蘆筍(灑上鹽胡椒和一點橄欖油攪拌均勻),ㄧ起烤20分,200度
4. 煮一把蕎麥麵(要吃的時後在煮),煮大概4-5分或按包裝上的時間煮,煮好瀝乾,將麵倒入冰水裡
5. 豆腐烤好後,將所有材料分配好,再淋上1湯匙醬油和一湯匙芝麻油,即可享用囉!✌

👉All you need for this yummy healthy bowl is whatever vegetables you like, tofu, avocado, and buckwheat noodles.
1. Marinate the tofu(cut into bite size, 900g) with 3 tbs soy sauce+ 3 tbs sesame oil+ 2tbs water + 2 tbs any spicy sauce (I use the Korean spicy sauce you can use siracha as well) for 10 minutes at least. Then bake it with chopped asparagus seasoned with salt and pepper and a bit if olive oil for 20 minutes in 200 degrees.
2. Prep the vegetables. Cut the carrots into thin sticks. Cut 1/4 avocado(for one serving) into cubes. Chop kales into desired size.
3. Cook buckwheat noodles in the boiling water and follow the cooking time on the package. After cooked, transfer it to a bowl with cold water and ice cubes. Let it sit for 5 minutes.
4. Assemble everything in your bowl. Make the dressing- 1 tbs soy sauce+1tbs sesame oil. Pour it on top of your healthy bowl 🍽
Boom dinner is ready! The rest of the vegetables and tofu will be enough for another 3 meals! How good is that!🤟

[特製のやみつき漬けダレ]

●ナンプラー(魚醤):大さじ1
●お酒:70ml
●みりん:50ml
●胡麻油:大さじ1
●豆板醤:小さじ1(コチュジャンでもOK)
●赤味噌:小さじ1(普通の味噌でもOK)
●炒りごま:お好み量
●おろしにんにく:小さじ1
●おろし生姜:小さじ1
●砂糖:小さじ2(ラカントにするとさらに糖質抑えられます)
●唐辛子:1本
●お好みで韓国唐辛子粉、ラー油、ブラックペッパー
※辛いのが苦手な方は豆板醤を普通の味噌にしてもOK
※ナンプラーが苦手な方は醤油に変更してもOK
※最後に必ず味見をして味の濃さは決めてあげてね

とにかくyoutubeでも大好評でそれを香ばしく焼いた葱に合わせた
今回も最高にやべぇ自慢のレシピになってます♪
魚醤と和風出汁と味噌の旨味を吸ったシャキシャキ葱に
さっぱりさせてくれる大葉との相性がマジ抜群過ぎて…
無限に何個でも食べられる超やべぇやみつき感です🤤
ご飯のお供にはもちろんですがラーメンのトッピングにも最高に旨いですよ!
それ以外でも素麺、油そば、うどん、豆腐、焼肉、鶏のむね肉などなど色んな物に超合います♪
今回も作り方は焼いて特製ダレに漬けるだけ♪
とっても簡単なので是非是非作ってみて下さい。
ただ一つ困る事があるとしたら旨すぎて作り置きにならない!って事くらいですねw
[Ingredients] (preserve period: 3 to 4 days)
● Green onion: 2
● Sesame oil (for cooking green onions)
● Shiso leaves: 10
[Specially made addictive sauce]
● Noodle soup (3 to 4 times concentrated): 1 1/2 tablespoons (white soup stock can also be used)
● Soy sauce: 1 1/2 tablespoons
● Nam Pla: 1 tablespoon
● Sake: 70ml
● Mirin: 50ml
● Sesame oil: 1 tablespoon
● Dou ban jiang: 1 teaspoon (gochujang is also fine)
● Red miso: 1 teaspoon (you can use regular miso)
● Roasted sesame seeds: 1 teaspoon
● Grated garlic: 1 teaspoon
● Grated ginger: 1 teaspoon
● Sugar: 2 teaspoons (you can use lakanto for even less sugar)
● Chili pepper: 1
● Korean chili powder, raayu, black pepper to taste
※If you don't like spicy food, you can use regular miso instead of Dou ban jiang.
※If you don't like Nam Pla, you can replace it with soy sauce.
※Be sure to taste them at the end to determine the intensity of the flavor.

It's so addictive that you can eat as many as you want without limit.
Of course it's great as an accompaniment to rice, but it's also great as a topping for ramen!

作法:
1.韓式冬粉泡水30分鐘至軟化。
2.煮水將韓式冬粉放入,煮約5分鐘後撈起瀝乾,放入1大匙胡麻油拌開攤涼。
3.熱鍋放入牛肉絲炒至肉色變白,再放入蒜末和其他調味料炒香後盛出。
4.熱鍋放入少許油,放入蒜末炒香,再放入香菇絲、鹽炒軟後盛出。
5.熱鍋放入少許油,放入蒜末炒香,再放入胡蘿蔔絲,炒軟後加入鹽拌炒均勻盛出。
6.熱鍋放入少許油,放入蒜末炒香,再放入紅、黃甜椒和鹽炒軟後盛出。
7.熱鍋放入少許油,放入蒜末炒香,再放入洋蔥絲炒軟後盛出。
8.取一鍋煮水燙熟菠菜,在浸泡冷開水放涼,用手擠乾水分備用。
9.熱鍋,倒入蛋液,攤開成一層薄薄的蛋皮,再翻面將雙面煎熟,取出捲起切成蛋絲。
10.將韓式冬粉倒入鍋中,加入所有配料,再倒入所有調味料A,待湯汁拌勻吸收後,加入白芝麻、胡麻油攪拌均勻即可。
