米奶 vs 米水
近年植物奶大行其道，米奶亦是其中一種，米奶和米水哪一種比較好？來了解一下吧！
🥛 甚麼是米奶？
米奶是由白米及水製成的仿奶製品，不含奶類成份，其營養來自白米，相比牛奶熱量較低，不含動物性脂肪，適合素食人士、乳糖不耐症患者及減肥人士飲用；惟注意升糖指數高，糖尿病人士慎飲。
自製米奶
材料：白米1杯、開水5杯
做法：白米洗淨，放雪櫃浸泡一晚。倒走浸泡的水，將米及開水以高速攪拌機攪成糊狀，如顆粒比較大，可用隔渣袋過濾米渣，即成米奶。
*米和水的比例可按個人喜好而定
*用白飯可省卻浸米時間
🍚 甚麼是米水？
米水是用紅米、白米及生薏米煲成的養生飲品，從中醫角度看，白米及紅米皆有補氣養脾胃功效，亦能除煩渴、長肌肉、止腹瀉，加入少量生薏米取其健脾袪濕功效，加強去水能力。米水可紓緩容易疲倦、食慾不振、面色偏黃欠光澤及身體浮腫等問題，由於屬性平和，男女老幼皆適合，唯薏米會令子宮收縮，建議孕婦不下薏米服用。
自製米水
材料：紅米2湯匙、白米半湯匙、生薏米半湯匙
做法：將材料洗淨，鍋內加入約800-1000毫升水，以武火煮滾後調文火煮20-30分鐘。
備註：天天煲，一天飲完，不要過夜

Rice milk vs rice water
Plant based milk has become trendy in recent years, and rice milk is an example. Is rice milk better than rice water? Let’s get to know them a little better!
🥛 What is rice milk?
It is a milk substitute made of white rice and water. In other words, it does not contain dairy product. The nutrient of rice milk comes from white rice, and it is lower in calories. Since rice milk does not contain animal fats, it is suitable for vegans, lactose-intolerant individuals, and those who wish to lose weight. Diabetic patients, however, should watch out for its sugar content.
Homemade rice milk
Ingredients: 1 cup of white rice, 5 cups of boiled water
Method: wash the white rice and soak it in water overnight in the refrigerator. Pour away the water, and replace it with boiled water. Pour the mixture into a high-speed blender to turn them into a paste. Use a sieve to remove the large bits of rice and retrieve the rice milk.
*Adjust the ratio of the rice and water according to personal preference
*Using cooked rice can reduce the hours of soaking
🍚 What is rice water?
Rice water is a healthy drink made from red rice, white rice, and coix seed. White rice and red white can both replenish qi, strengthen the spleen and stomach, relieve excessive thirst, promote muscle growth, and alleviate diarrhea. Coix seed can strengthen the spleen and dispel dampness. Rice water can improve fatigue, poor appetite, yellowish complexion that is lacking shine, and bloating. Due to its mild nature, it is suitable for the entire family with the exception of pregnant women as coix seeds can cause uterus contraction.
Simple healthy rice water
Ingredients: 2 tablespoons red rice, half tablespoon of white rice, half tablespoon of coix seeds
Preparation: rinse all ingredients thoroughly. Combine all ingredients with 800-1000ml of water and cook on high heat until boiling. Turn to low heat and simmer for 20-30 minutes.
*Rice water should be made fresh daily and should not be stored overnight as it will spoil easily.
*For pregnant ladies, they can omit coix seeds.
*Those with diabetes should consult a nutritionist accordingly.

Alhamdulillah, all praise is due to The Almighty…our kitchen is finally done! Just a few tiny bits and bobs left to do here and there - but at least it is now up and running! We are all super excited, especially the kids after having to live without a kitchen for more than 3 months since we officially moved to #TheOldForgeCottage 🏡
Well to be honest, it was more than 3 months actually. Cos since the renovation work started way back in January, we’ve been extremely busy and haven’t had much time to cook. But now the wait is over and we can finally enjoy home cooked food again. I must say that I really admire the patience of The Omar Mukhtar, Fatimah & Ali right from the beginning of our reno-journey up until now - never did they complain about food nor anything at all - bless them!
We can never thank Allah enough for the countless bounties He blessed our family with. Alhamdulillah for everything and every little thing too. Up to the lovely scent of that little bouquet of freshly picked lavenders from our neighbour’s garden. We are beyond blessed 💜

For this video, we headed back to Little Sheep Hot Pot at Orchard Gateway to again DESTROY a premium Wagyu hotpot! Little Sheep is a hot pot-style restaurant chain that specialises in various prime cuts of meat, especially lamb. It does not offer a buffet option as many hotpot places do, but provides high-end ala carte choices for the hungry customer. We brought with us a special guest star, Yuqing (@b1gqing), a mega IG personality and budding Youtuber.
We ordered their main 2 broths: a traditional herbal broth, which comprised of over 20 spices and aromatics, with numerous whole cloves of garlic floating on top and designed to eliminate any “gamey” flavour and smell from lamb, and a spicy mala broth that was deep red due to a thick layer of chilli oil on top and with bits of dried chillies and Szechuan peppercorns with every ladleful.
I found that the meat went best with the traditional broth which was wonderfully flavourful, complementing the meat well and it was worth alternating with the mala broth which had a decent kick to it but was not overpoweringly spicy.
The star of the feast was of course, the choice cuts of meat given, including the supremely marbled wagyu beef and the invitingly aesthetic lamb. Every piece of meat was gorgeously presented and thinly shaven, so they cooked within seconds in the simmering cauldron of ambrosial broth with barely any chewing needed to swallow the cooked pieces. To round off the meal, we again washed down the meat with Draft Denmark, a beer which was mildly flavoured and easy on the palate.
As always, it was a fantastic experience and I would recommend it to all whose wallet permits.
