Yong Tau Fu 酿豆腐 is a well known dish in the Hakka cuisine. It is a unique Chinese dish that is made of pork(originally), mackerel fish, tofu, and a variety of soy products and vegetables. Today, I am going to show you how to make Mel's style Yong Tau Fu and the various ways to use the stuffing/paste.
Because Max doesnt like fish, I am preparing the chicken version for him. It is not normal at all, but it works. We have also made brown rice Chee Cheong Fun and bean sauce to go with them.
As a child, growing up seeing my Poh Poh heating the chop board so hard with the fish paste, I was curious what she was doing. Luckily I still remember how she did it. I tried some years ago and started to add ingredients to make them more interesting.
Ingredients for the stuffing/fish paste:
. 1 mackerel fish with head and tail
. 1 kg Minced Chicken (if you plan to stuff the fish and make fishless YTF)
. chopped water chestnuts
. chopped onion
. shredded carrots
. chopped spring onions
. mashed garlic
. mashed ginger
. chopped coriander
. chopped shiitake mushroom
. oyster sauce
. soy sauce
. white pepper
. sesame oil
. salt
. 1 strip of salted fish in oil
For the vegetable and tofu for stuffing, you can get any kind of fried tofu, beancurd skin, hard tofu, bell pepper, big red and green chilis, lady fingers, eggplants, normal size bittergourd (I didnt have it then), mushrooms and any possible vegetable that can hold the stuffing to try out.
You can actually get the black bean sweet sauce from the market or just make your own.
Simplest Recipe Ingredients:
. 2 tbsp hoisin sauce
. 2 tbsp oyster sauce
. a bit of hot water
- Mix them all up and serve.
Once you stuffed the vegetables and tofu, you can pan-fry them like I did or steam them and then fry in pan again. Either way works.

Saya masih ingat Kangkung adalah sayur yang mahal di Kanada. Kawan-kawan Taiwan sangat menyukai Kangkung. Mereka menyebutnya "macaroni veggie" (terjemahan langsung dari Google, LOL) aka Tong Xin Cai atau selada air Cina. Oleh itu, saya membeli sekali sekala dan dimasak dengan sambal belacan dan ikan bilis. OH kawan-kawan saya suka sangant resipi saya. Itu adalah sayur yang memanjakan. I still remember Kangkung is an expensive vegetable in Canada. Taiwanese loves Kangkung. They called it "macaroni veggie" (direct translation from Google, LOL) aka Tong Xin Cai or Chinese watercress. So I bought once in a while and cooked with sambal belacan and ikan bilis. OH I tell u they love the recipe. It was an indulgence vegetable! We are lucky to have plenty in Malaysia kan!

3)*臘味薑汁炒芥蘭

minced chicken
1 1/2 oyster sauce
1 tsp salt
Some white pepper
3)*Fried gai lan w/ ginger wine:
1 lb(453g)gai lan
2 pieces
Chinese sausage
2 oz(58g)
Chinese bacon
2 cloves garlic
Sauce mix:
1/2 Tbsp oyster sauce
1/2 tsp sugar
Some white pepper
Make ginger wine:
1 Tbsp minced ginger
2 Tbsp cooking wine

Vegetable Gyoza
Difficulty: Easy
Time: 20min
Number of servings: 24 pieces
Ingredients:
200g (7oz.) cabbage
100g (3.5oz.) onion
80g (2.8oz.) carrot
1/2 long onion
salt
1 tbsp. potato or corn starch
A
* 1/2 tbsp. soy sauce
* 1 tbsp. sake
* 1/2 tbsp. oyster sauce (or vegetarian stir-fry sauce)
* 1/4 tsp. salt
* 1 tbsp. grated ginger
* cracked black pepper
24 gyoza wrappers
1 tbsp. sesame oil
Directions:
1. Wrap the cabbage with plastic wrap and microwave at 500W for 3 minutes until tender. Finely chop the cabbage then squeeze in paper towels to remove excess water.
2. Finely chop the onion, sprinkle with a bit of salt, then wash and drain well with paper towels. *in this way you can remove the bitter taste and bring up the sweetness of the onion.
3. Finely chop the carrot and the long onion.
4. Mix 1-3 in a bowl, then mix in starch to let it absorb the water.
5. Add A and mix well.
6. Place the gyoza wrapper in your palm and place a spoonful of filling in the center. Put water along the edge of the wrapper by fingers, fold into semi circle, gather the front side of the wrapper and seal.
7. Heat sesame oil in a frying pan, place gyoza, cook on high heat until the bottoms become brown.
8. Turn the heat down to medium, add 50ml water (or about 1/3 of their hight), cover and steam the gyoza on med-high heat until cooked. Uncover and cook on high heat until the water is gone and crisp.
This Gyoza is already seasoned but you can serve them with a mixture of vinegar, a little soy sauce, and a few drops of la-yu if you like.

This recipe won a grand prize at the easy recipe contest organized by Ajinomoto. I received the prize from chef Wakiya Yuji (脇屋 友詞) who is famous for creative Chinese food in Japan.

For the seasoning, I used chicken stock and white miso. The chicken stock adds a nice and rich flavor and white miso makes the dish slightly sweet and tasty!
It can be very colorful and festive recipe for Chinese Lunar New Year's day. Also, it is perfect for every-day bento box :)
BTW, at our wedding, we could luckily cater chef Wakiya's fancy and healthy Chinese cuisine from "トゥーランドット遊仙境 - Turandot Yusenkyo" restaurant in Akasaka.

Chinese Style White Miso Stir Fried Seven Vegetables
Difficulty: Easy
Time: 20min
Number of servings: 2
Ingredients:
75g (2.6oz.) ham
100g (3.5oz.) onion
50g (1.8oz.) carrot
100g (3.5oz.) zucchini
100g (3.5oz.) bean sprouts
50g (1.8oz.) red bell pepper
6 dried cloud ear mushrooms (you can use 3 shiitake mushrooms)
A
* 2 tbsp. white miso (it tastes different but you can use 1 tbsp. regular miso)
* 1 tbsp. sake
* 1 tbsp. mirin (sweet sake)
* 1/2 tbsp. chicken stock powder
* 1 tsp. sugar
1/2 tbsp. cooking oil
cracked black pepper
Directions:
1. Soak the dried cloud ear mushrooms in hot water for at least fifteen minutes. Then drain and cut into strips. Trim the bean sprouts at both ends if you prefer. Cut ham, carrot, zucchini and red bell pepper into strips. Thinly slice onion.
2. Mix A.
3. Heat cooking oil in a frying pan, stir-fry onion, carrot, zucchini, bean sprouts, red bell pepper, cloud ear mushrooms, and ham in order. Add A and stir-fry until the seasonings blend. Serve on the dish and sprinkle cracked black pepper.
