【LA life day 12: The Tonkotsu Ramen that connects the past, present and future】

Tonkotsu Ramen always reminds me of middle school– there’s a nice little ramen place near my school and I went there after the summer classes with my classmates almost every day. The Tonkotsu Ramen there was so creamy, rich, and flavorful– it was definitely the highlight in the dull middle school years.

I have never had Tonkotsu Ramen after I turned vegan. The essence of the Tonkotsu Ramen lies in the broth– bones are cooked at a rolling boil for a long period of time until the collagen dissolves into gelatin that adds richness to the broth. My landlord's happy face when describing the taste of her Tonkotsu Ramen inspired me to search for vegan Tonkotsu Ramen recipes– and I had a fruitful discovery! I found that kombu and shitake mushroom boiled in vegetable stock makes perfect soup base– it adds umami and extra depth to the broth. To create the richness and creaminess, we use oat milk and mix it with sesame paste– this creates a subtle sweetness and savoring nuttiness to the soup!

On a chill Saturday afternoon, I invited my friend to try out this Tonkotsu Ramen recipe with me. We weren't able to get kombu and shitake mushrooms in the grocery stores here in LA, but we found a secret ingredient that works wonders– the fermented bean paste. The fermentation process adds depth to the umami and blends harmoniously with the oat milk, creating a savoring sensation when you sip the noodles.

We drizzled hot chili oil on top of the ramen for seasoning. The moment the chili oil diffuses into the soup, suddenly I was back in the little ramen place again– it is strange how your sense of smell roots deep inside your memory lane once you allow your mind to return into the grooves which lead back.

School starts tomorrow and I can literally feel the butterflies in my stomach, yet it's exciting to be able to talk to my professors and classmates face to face after COVID has distanced us for so long. Walking around the campus, the back to school vibe energizes me and I think I am ready for a brand new start!

"I miss my confinement.... food!!!"
Yup, although I don't miss the part on having yucky hair, waking up umpteen times a night or having to waddle around, I honestly miss all the nutritious food I had during that first month.
It's all thanks to Tian Wei Signature who delivered the meals to my doorstep daily so I didn't have to depend on anyone else to take care of me. Not only did it save me the convenience of cooking, it also ensured that I was eating well-balanced, nourishing meals designed to boost my recovery.
Did you know? Tian Wei offers a fusion menu with over 90 meat and vegetable dishes, resulting in a wide range of delectable cuisine with minimal repetition. No MSG is used and instead, the emphasis is on fully natural flavours. The food is also perfect for breastfeeding mums due to the addition of milk-boosting lactogenic ingredients, yay!
Although I was able to view the menu online and find out what dishes I was going to receive each day, I love the element of surprise in opening the thermal bag and not knowing that was inside. The kids were always eager to help too and like what I shared previously, they all gave their thumbs up for the food and said they liked it! Swipe to see some of the dishes we tried.
From traditional confinement food like pork liver, red fermented wine chicken and braised pork trotters in black vinegar to fusion dishes like grilled chicken, seared salmon and kurobuta pork loin, I tried all of it and found it such an interesting and enjoyable mix of cuisine. Oh, and I love all the different herbal soups too which helped to accelerate postpartum recovery and replenish "Qi", my favourite being the fenugreek green papaya fish soup. Love it!
Yup, so you can tell I really enjoyed the food and the entire fuss-free, pleasant experience which gave me a much needed peace of mind, something which I totally appreciated as a newly minted mum of 4. I will be doing a giveaway this week so keep a lookout for that! Happy Monday, people!

Martabak telur dan sayur.
Adunan kulit
2 kg Tpg gandum
2 ½ cwn minyak masak
Sedikit garam
Air ais dari peti sejuk.. Ikut lembut tepung..
Uli sampai sebati mcm kulit karipap.
Inti:
1 labu kobis dlm 1.3kg (potong hancur) lupe ambik gambar
2 batang lobak merah ( sagat)
Sedikit daun sup di potong kecil
4 biji kentang kopek rebus dan lenyek
6biji telur di kacau bersama kentang lenyek tadi.
2 biji bawang besar
4 ulas bawang putih
2 kiub ayam
4 sudu besar lada hitam ditumbuk.
Mintak utk menumis
Garam dan sedikit gula.
Tumis bawang sampai kuning. Masukkan telur dan kentang tadi kacau. Boh garam kiub ayam dan sedikit gula.. Masukkan sayur kacau masukkan lada hitam tumbuk dan daun sup.. Kacau .. Siap..
Tepung tadi dinipiskan guna pencanai dan intikan... Akak guna mesin mee je.. Kemudian tekan2 guna garpu.. Boleh digoreng.. Cara goreng sama mcm goreng karipap..

Skin mix

2 ½ cups of cooking oil
A little salt
Ice water from the fridge.. Follow the flour softly..
Again until it's mixed with curry puffs.

A little soup leaf cut small
4 pieces of boiled and flattened peeled potatoes
6 eggs were stirred with the flattened potatoes just now.
2 large onions
4 review of garlic
2 chicken cubes
4 tablespoons of black pepper punched.
Asking to fry
Salt and a little sugar.
Stir fry onions to yellow. Put in the egg and potatoes just now. Boh chicken cubes salt and some sugar.. Put in vegetable stir and insert black pepper and soup leaves.. Stir it up.. Done..
The flour just now is thinning using fundamental and intake... I only use the noodles machine.. Then press using the fork.. It can be fried.. The same way to fry curry puffs..

石黒家のモーニング〜親子丼サンドイッチ〜
1人分
材料:
食パン (8枚切り) 2枚
卵2個
鶏もも肉 40g
玉ねぎ 20g
糸三つ葉 1本
めんつゆ 大さじ1
水 大さじ1
サラダ油 少々
マヨネーズ 大さじ1
作り方:
食パンは耳を落とし、卵は割りほぐす。鶏もも肉を刻み、玉ねぎは薄切りに、糸三つ葉も刻んでおく。
耐熱容器に鶏肉、玉ねぎ、水、めんつゆを入れてラップをして、600Wで50秒加熱する。
割りほぐした卵に三つ葉と(2)を加えて混ぜ合わせる。
卵焼き器にサラダ油をひいて、(3)を焼く。
パンにマヨネーズを塗り、(4)を挟んで切り分けたら、完成!

Breakfast at The Ishiguros! Oyakodon-sandwich
Servings: 1
INGREDIENTS
2 slices of a loaf bread (8 sliced pack)
2 eggs
40g chicken thigh
20g onion
1 string mitsuba
1 tablespoon noodle soup base (mentsuyu)
1 tablespoon water
Some vegetable oil
1 tablespoon mayonnaise
PREPARATION
1. Cut the crust off the bread. Beat eggs in a bowl. Cut chicken thigh into small pieces. Slice onion.
2. Put the chicken, the onion, water and noodle soup base in a heat-proof bowl. Wrap with a food wrap and microwave for 50 seconds at 600w.
3. Add mitsuba and (2) into the bowl with beaten eggs. Mix well.
4. Cook the egg mixture (3) in a lightly oiled square pan (tamagoyaki-pan).
5. Spread mayonnaise onto the bread. Place the omelet (4).
6. Enjoy!

フワフワ豚キムチオムレツ
2人分
材料:
キムチ 200g
豚こま切れ肉 100g
塩 少々
粗挽き黒コショウ 少々
ごま油 小さじ2
コチュジャン 小さじ1
しょうゆ 小さじ1/2
白いりごま 小さじ2
卵 3個
めんつゆ 小さじ1
ピザ用チーズ 50g
サラダ油 適量
Aレタス(一口大にちぎる)6枚
Aマヨネーズ 小さじ2
Aしょうゆ 小さじ1/2
白ねぎ(白髪ねぎ)20g
きざみ海苔 適量
作り方:
1.フライパンに、ごま油をしき、豚こま切れ肉を、塩、粗挽き黒コショウで炒める。
2.キムチの半量、コチュジャン、しょうゆ、白いりごまを加え、豚肉に火が通るまでしっかりと炒め、器に取り出す。
3.ボウルに、Aを入れ、和える。
4.別のボウルに、卵を割り入れ、めんつゆ、ピザ用チーズを加え、しっかりと混ぜる。
5.フライパンに、サラダ油をしき、(4)を流し入れ、中火で加熱しながら箸で数回かき混ぜ、半熟状になるまで加熱し、火を止める。
6.中央に、(2)をのせ、再び中火で加熱し、フライパンを奥に傾け、卵を手前から折り、反対も折り、フライパンを手前に傾け、オムレツの形に形を整える。
7.器に盛り、周りに(3)を散らし、残りのキムチ、白ねぎ、きざみ海苔を散らして完成。

Omelet with BUTAKIMU (pork with kimchi)
Servings: 2
INGREDIENTS
200g kimchi
100g thinly sliced pork
Some salt
Some black pepper
2 teaspoons sesame oil
1 teaspoon gochujang
1/2 teaspoon soy sauce
2 teaspoons toasted white sesame seeds
3 eggs
1 teaspoon noodle soup base (mentsuyu)
50g shredded cheese
Some vegetable oil
A
6 lettuce leaves (tear into bite-sized pieces)
2 teaspoons mayonnaise
1/2 teaspoon soy sauce
20g leek (shredded)
Some dried seaweed.
PREPARATION
1. Heat sesame oil in a pan and cook pork with salt and pepper.
2. Add half of the kimchi, gochujang, soy sauce, and toasted white sesame seeds into the pan. Stir fry until pork is cooked. Transfer into a plate.
3. Mix all A ingredients in a bowl.
4. Beat eggs in another bowl. Add noodle soup base and shredded cheese, then mix well.
5. Pour the egg mixture (4) into a lightly oiled (vegetable oil) pan. Cook over medium heat. Turn off the heat when it is still undercooked (runny).
6. Place kimchi with pork (2) on the omelet (5). Turn on the heat back to medium. Fold in the omelet to wrap kimchi.
7. Place the omelet on a plate. Add some (3) and rest of the kimchi. Place shredded leeks and some dried seaweed on top.
8. Enjoy!

Harusame' are the noodles made from potato starch or mung bean starch. Low in calories and great for salad and soup. This dish is something we always crave for when weather is warmer.It’s so refreshing and yummy. 'Harusame' can be replaced with Rice Vermicelli.
たまに食べたくなる「春雨のサラダ」
春雨は短く切るよりもちゅるちゅる食べたくて、長いまま使っています。胡瓜はもっと沢山入れますが、今日は冷蔵庫に1本しかなくてがっかり、、バッタの私としてはあと1本は入れたいところ、、、。
薄焼き卵もたっぷり入れて、栄養満点^^
赤が入ると綺麗なので、カニカマか人参の千切りを加えますが、赤パプリカでも美味しいです。

【Ingredients】
2.8oz Harusame Noodles
1 Cucumber
1.4oz Kanikama
(crab stick)
*shred with your fingertips
3-4 slices Ham
●Dressing Ingredients
1tsp Chicken bouillon powder
1-2 tbsp Sesame Oil
2-3 Soy Sauce
2 Rice Vinegar
For Sprinkle:
1 tbsp Roasted Sesame Seeds
*Make Thin Omelette(Usuyaki Tamago)
2 Eggs
1 pinch Salt
1 tsp Katakuriko
2 tsp Water
* Vegetable oil
【Directions】
①Make Thin Omelette
Beat the eggs in a bowl. Add the katakuriko dissolved in water, and salt, then mix well.
Thinly grease a frying pan with oil, and Pour in the Step 1 mixture, and evenly spread it out. When the surface starts to harden, flip.
When cooked, remove from the pan, and let it cool and cut them into.
②Cook Harusame Noodles as instructed.
③Cut cucumber. microwave at 600w for 40sec.
Squeeze the Cucumber to remove excess water.
④Ham into thin strips.
⑤Combine all the Dressing Ingredients in a bowl and mix well.
⑥Place everything in a large bowl, add the Dressing and mix well.
⑦Sprinkle Sesame on salad.
To Store
You can store the leftovers in an airtight container and keep it in the refrigerator for up to 3 days.

【材料】
春雨 80g
胡瓜 1本
かにかま 40g
ロースハム 3-4枚
●Dressing Ingredients
鶏ガラスープの素 小さじ 1
ごま油 大さじ 1-2
醤油 大さじ 2-3
米酢 大さじ 2
For Sprinkle:
白ごま 大さじ 1
*薄焼き卵
卵(M) 2個
塩 ひとつまみ
片栗粉 小さじ1
水 小さじ 2
* サラダ油
【作り方】
①薄焼き卵を作る。
卵を溶いて、塩と水溶き片栗粉を加えてよく混ぜる。
フライパンを熱し油を薄く引いてフライパンを回しながら卵液を均等になるようしながら焼く。表面が乾いたら裏返して数秒焼き取り出して冷ましておく。
***水溶き片栗粉は錦糸卵と同様、卵を破れにくくするために少量加えます。
②春雨は袋の指示通りにゆでる。
私は熱湯につけて5分ほどそのまま置いてからお湯を切り、よくお湯を切って使います。
③胡瓜は細く切り、袋に入れて600wで40秒レンチンしたら、水分を良く絞っておく。
***そのまま加えると胡瓜から水分が出て味が薄くなるので、最初に水分をよく絞っておくと良いです。
④ハムも細く切っておく。
⑤ボウルにドレシングの材料を入れてよく混ぜ合わせる。
⑥ここに材料を全部入れてよく混ぜ合わせる。
⑦器などに盛ったら上に白ごまをふりかけて出来上がり!
●保存
タッパーなどに入れて冷蔵庫で保存。作った日を含めて3日ほどで食べきりましょう。
容器から取り分ける時はその都度必ず綺麗なお箸を使いましょう。
