This Nyonya Chap Chye is a classic from the Peranakan cuisine. Peranakan food is touted to be a blend of South East Asian culinary cultures - often hitting the spice, sweet and tang notes deliciously.
Chap Chye loosely translates to mixed vegetables, which is very accurate in this case. Fresh vegetables tossed with crispy beancurd strips and broth-soaked tang hoon (glass noodles) is a flavour explosion in your mouth you won't want to miss!

30g Dried Mushrooms (whole) (pre-soaked with 600ml hot water and reserve soaking liquid)
25g Lily buds 金针 (pre-soak & knot)
30g Black fungus (pre-soak & cut into bite sizes)
30g Glass noodles (pre-soak)
60g Dried bean curd (cut into 1” long strips)
40g Dried sweet bean curd 甜竹 (cut into strips)
250g Napa cabbage (cut into bite sizes)
2 tbsp Preserved soy bean paste (tau cheo)
8 cloves Garlic (chopped)
1 Carrot (peeled and sliced)
Salt to taste
700ml Water (excludes mushroom water)

This Steamed Chicken with Fermented Tofu is a very delicious dish that you can easily prepare for lunch or dinner. If you are a working mom, consider marinating this early in the morning and put the chicken in the fridge then when you get back home from work, just cook rice and steam the chicken. You can then quickly stir fry a plate of vegetables and one meal is settled. Give it a try.

Steamed Chicken with Fermented Tofu 腐乳蒸鸡
Ingredients:
Serves 4 pax

3 pieces of fermented tofu (you can use spicy fermented tofu too)
2 tablespoons of the accompanying sauce from the fermented tofu
1 tablespoon light soy sauce
2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
3 cloves garlic (chopped)
0.5 teaspoon sugar
1 thumb size young sliced ginger (julienned)
Stem from 2 stalks of spring onion (lightly smashed)
1kg (35oz) chicken (you can use any parts of a chicken)
2 tablespoons cornflour
1 tablespoon sesame oil
