Swedish Meatballs
Ingredients:
2 slices fresh white bread
¼ cup milk
3 tablespoons clarified butter, divided
½ cup finely chopped onion
A pinch plus 1 teaspoon salt
750gm ground beef
2 large egg yolks
½ teaspoon black pepper
¼ teaspoon ground allspice
¼ teaspoon freshly grated nutmeg
¼ cup all-purpose flour
3 cups beef broth
¼ cup heavy cream
Method:
1. Preheat oven to 200°C.
2. Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
3. Sweat the onion with 1 tbs butter until soft. Remove from the heat and set aside.
4. Combine the bread and milk mixture, ground beef, egg yolks, salt, black pepper, allspice, nutmeg, and onions in a mixer and beat on medium speed for 1 to 2 minutes.
5. Weigh 30gm portions of each meatball and place on a sheet pan. Shape the meatballs into rounds.
6. Heat the remaining butter in the saute pan over medium-low heat. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
7. Decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken.
8. Add the cream and continue to cook until the gravy reaches the desired consistency. [RECIPE]
Preparation time: ~ 8 minutes
Cooking time: ~ 1 hour
Total duration: ~ 1 hour 8 minutes
Ingredients:
1) Lean pork meat, 800g
2) Fish paste, 400g
3) Cabbage, 1kg
4) Seafood soy sauce, 2 tablespoons
5) Light soy sauce, 2 tablespoons
6) Sesame oil, 3 tablespoons
7) OKI Premium Corn Oil, 8 tablespoons
8) Minced garlic, 3 tablespoons
9) Pepper, 1 tablespoon
10) Abalone sauce, 2 tablespoons
11) Corn flour, 1 tablespoon
12) Water, 1/2 cup
Instructions for preparing the meatballs:
1) Mix lean pork with fish paste in a bowl.
2) Add in 1 tablespoon of pepper, 2 tablespoons of light soy sauce and 3 tablespoons of sesame oil.
3) Mould the mixture into 4 balls.
Instructions for making Lion’s Head Meatballs:
1) Pour 4 - 5 tablespoons of OKI Premium Corn Oil into heated pan.
2) Place the meatballs onto the pan and fry until each side is slightly browned.
3) Put meatballs onto a plate and place it onto of a rack placed in a pot of boiling water and steam for 20 - 25 minutes. After steaming, pour the gravy from the meatballs into a separate bowl and set aside.
4) Pour 3 - 4 drops of OKI Premium Corn Oil into a pot of boiling water. Blanch cabbage for 20 minutes and set aside.
Instructions for making sauce:
1) Pour 3 tablespoons of OKI Premium Corn Oil into frying pan.
2) Add 1 tablespoon of minced garlic and fry until slightly brown.
3) Add 2 tablespoons of abalone sauce, 2 tablespoons of seafood soy sauce, 1 tablespoon of corn flour and the gravy from the meatball.
4) Pour sauce onto meatball and cabbage.
5) Serve immediately with coriander.

Classic Hungarian Goulash
Ingredients:
600 g stewing beef- cut into 2×2 cm cubes
2 tablespoons oil
2 medium onions, chopped
2 cloves of garlic
1-2 carrots, diced
1 turnips, diced
1-2 celery stalks, cubed
2 medium tomatoes, peeled and chopped or 1 tbs. tomato paste
2 fresh green peppers, cubed
2-3 medium potatoes, cubed
1 tablespoon Hungarian paprika powder
1 teaspoon ground caraway seed atau thyme
2 bay leaves (daun ketum jangan!)
Ground black pepper and salt to taste
Water/beef stock
Method:
1. Heat up the oil in a pot and braised the chopped onions in it until they get a nice golden brown colour.
2. Sprinkle the braised onions with paprika powder while stirring them to prevent the paprika from burning.
3. Add the beef cubes and sauté them till they turn white and get a bit of brownish colour as well.
4. The meat will probably let out its own juice, let the beef-cubes simmer in it while adding the grated or crushed and chopped garlic, ground caraway seeds/thyme, some salt and ground black pepper, bay leaves, pour water/beef stock enough to cover the content of the pan and let it simmer on low heat for a while.
5. When the meat is half-cooked, add the diced carrots, turnip and the potatoes, the celery leaf and some more salt if necessary.
6. When the vegetables and the meat are almost done add the tomato cubes and the sliced green peppers. Let it cook on low heat for another few minutes. You can remove the lid of the pan if you want the gravy to thicken.
7. Served it over pasta, buttered rice or even roti! 😋😋

Bahan-Bahan Ayam Goreng
1/2 ekor ayam (dipotong)
Serbuk kunyit secukupnya
Garam secukupnya
Bahan-Bahan Kisar
4 biji bawang merah
5 ulas bawang putih
2 inci halia
2 inci lengkuas
2 batang serai
20 tangkai cili kering (dibuang biji & direbus)
Air secukupnya
Bahan-Bahan Kuah
1/2 biji bawang besar (dihiris tebal)
2 tangkai daun kari
1 1/2 biji gula melaka
3 sb sos tiram
1 sb asam jawa
1 biji bawang besar (dipotong bulat)
1 biji cili merah (dihiris memanjang)
Bahan kisar
2 sk garam
Cara memasak
1. Gaulkan ayam bersama kunyit dan garam sehingga sebati.
2. Panaskan minyak di dalam kuali dan gorengkan ayam sehingga sedikit garing & warna bertukar perang. Angkat ke tepi & toskan minyak.
3. Kisarkan cili kering, bawang merah, bawang putih, halia, lengkuas dan serai sehingga lumat.
4. Dengan sedikit minyak gorengan ayam tadi, tumiskan dahulu hirisan bawang merah dan daun kari sehingga naik bau.
5. Tumiskan pula bahan kisar sehingga pecah minyak.
6. Masukkan gula melaka dan gaul sehingga semuanya larut.
7. Masukkan pula sos tiram dan asam jawa.
8. Kemudian, masukkan ayam goreng dan gaulkan sebati.
9. Tambahkan bawang yang dipotong bulat dan masakkan seketika.
10. Perasakan dengan garam. Hiaskan ayam masak merah dengan hirisan cili merah dan ia siap untuk dinikmati.

1/2 chicken (cut)
Turmeric powder sufficiently
Salt sufficiently
Blend Ingredients
4 red onions
5 cloves of garlic
2 inch of gingers
2 inch of galangal
2 stalks of lemongrass
20 pcs of dried chilies (deseeded & boiled)
Water sufficiently
Gravy Ingredients
1/2 large onion (roughly sliced)
2 sprigs of curry leaves
1 1/2 palm sugar
3 tbsp of oyster sauce
1 tbsp of tamarind
1 large onion (ring sliced)
1 red chili (Julienne cut)
Blend ingredients
2 tsp of salt
Cooking methods
1. Season chicken with turmeric powder and salt.
2. Heat oil inside pan and fry the chicken until the color turns golden brown. Put aside first.
3. Blend well dried chilies, onions, garlic, gingers, galangal and lemongrass.
4. Using some of the fried chicken oil, saute' sliced onion and curry leaves until fragrant.
5. Saute' blended ingredients until the oil separates.
6. Add palm sugar and stir well.
7. Add oyster sauce and tamarind.
8. Next, add fried chicken and mix well.
9. Add onion rings and cook for a while.
10. Season with salt. Garnish Malay-style red cooked chicken with red chili and it is ready to be served.

5 sb tepung goreng serbaguna
1/3 cwn air
Bahan-Bahan Kuah Buttermillk
4 sb mentega
1 biji bawang merah (dihiris)
3 ulas bawang putih (dihiris)
5 biji cili api (dipotong kecil)
2 tangkai daun kari
1 cwn susu cair
2 keping keju cheddar
Minyak masak
Cara memasak
1. Untuk ayam goreng, campurkan tepung goreng serbaguna dan air di dalam satu mangkuk, gaulkan is sehingga sebati.
2. Masukkan dada ayam dan gaulkan sehingga semuanya sebati.
3. Panaskan minyak di dalam kuali dan gorengkan ayam sehingga warna bertukar coklat keperangan.
4. Untuk kuah buttermilk, cairkan mentega terlebih dahulu di dalam kuali.
5. Tumiskan bawang merah, bawang putih, cili api dan daun kari sehingga naik bau.
6. Tuangkan susu cair ke dalam kuali dan masak sehingga mendidih.
7. Masukkan pula keju cheddar dan gaulkan semuanya sehingga sebati dan pekat.

Buttermilk Gravy Ingredients
4 tbsp of butter
1 red onion (sliced)

5 bird's eye chilies (cut into smaller size)
2 strands of curry leaves
1 cup of evaporated milk
2 pcs of cheddar cheese
Cooking oil
Cooking methods
1. For fried chicken, mix all-purpose frying flour and water in a bowl, mix it thoroughly.
2. Add chicken breast and mix it well.
3. Heat cooking oil in a pan and deep fry chicken until it turns into golden brown color.
4. For buttermilk gravy, melt the butter first inside pan.
5. Saute' red onion, garlic, bird's eye chili and curry leaves until fragrant.
6. Pour evaporated milk into pan and cook until it boils.
7. Add cheddar cheese and mix it well until becomes thicken.
8. Then, add fried chicken into the gravy and mix it well.
9. Chicken buttermilk is ready to be served.

Sambal Ikan Bilis | Sambal Anchovies

Bahan-Bahan Kisar
1/4 cwn ikan bilis (dikisar)
4 biji bawang merah (dikisar)
3 ulas bawang putih (dikisar)
1/2 cawan air
200gm ikan bilis
2 helai daun pandan (diikat)
2 keping asam keping
160gm cili kisar
2 ketul gula melaka (saiz kecil)
1 ketul kiub ikan bilis
1 1/2 sk garam
1 biji bawang Holland (hiris)
Minyak masak
Nota:
Asam keping juga boleh digantikan dengan air asam jawa.
Boleh tambahkan jumlah cili kisar sekiranya anda menggemari sambal yang lebih pedas.
Cara memasak
1. Kisarkan bawang merah, bawang putih dan sedikit ikan bilis sehingga semuanya lumat sebati.
2. Panaskan minyak dan gorengkan ikan bilis sehingga bertukar rangup dan warna menjadi keperangan.
3. Setelah itu, panaskan sedikit minyak di dalam kuali dan tumiskan bahan kisar sehingga warna bertukar sedikit perang.
4. Masukkan pula daun pandan dan tumiskan sehingga naik bau.
5. Tambahkan asam keping ke dalam kuali.
6. Kemudian, masukkan pula cili kisar dan tumiskan ia sehingga pecah minyak.
7. Masukkan gula melaka dan gaulkannya sehingga semuanya larut.
8. Setelah sambal pecah minyak, masukkan ikan bilis yang telah digoreng tadi dan gaulkannya sehingga sebati.
9. Masukkan pula hirisan bawang holland ke dalam sambal dan gaulkan.
10. Sambal ikan bilis sedia untuk dihidang.

1/2 cup of water
200gm anchovies
2 pieces of pandan leaves (knotted)
2 pcs of tamarind slices
160gm of blended chili
2 pcs of palm sugar (small size)
1 pcs of anchovies stock cube
1 1/2 tsp of salt
1 Holland onion (sliced)
Cooking oil
Note:
Tamarind slice can be replaced with tamarind paste.
If you like it more spicy, you can add more blended chili.
Cooking methods
1. Blend onion, garlic and anchovies until it mix well.
2. Heat oil in pan and fry the anchovies until it become crunchy and the color turns into golden brown.
3. Then, heat oil in pan and saute' the blended ingredients until the color turns golden brown.
4. Add pandan leaves and saute' until fragrant.
5. Add tamarind slices into pan.
6. Next, add blended chili and stir fry it until the oil separates.
7. Add palm sugar and mix it until all dissolved.
8. Once it is done, add fried anchovies and mix it thoroughly.
9. Add sliced Holland onion into sambal and mix it well.
10. Sambal anchovies is ready to be served.
