Tui đến Ana Villas Dalat Resort & Spa vào một chiều tiết trời ẩm ương, khu biệt thự cổ kính trú mình nơi đây gần trăm tuổi đón chào bằng cơn mưa phùn se lạnh, mấy hàng thông khẽ reo ca, từng mảng tường vàng của mười bảy căn biệt thự dần hiện ra trước mắt một cách trang nghiêm lạ kì. Tự dưng, ngay lúc đó tui còn tưởng mình đang chuẩn bị quay ngược thời gian, sống thử một cuộc sống đầy xa hoa, tráng lệ của giới thượng lưu Pháp của trăm năm trước nữa chớ,
Tui nhận phòng lúc hai giờ, rồi nằm yên trong phòng tới tận chiều tối để quen dần mấy thanh âm xa lạ chốn này. Ngắm nhìn khắp căn phòng, từ cái lò sưởi, công tắc đèn, chiếc bồn tắm, ô cửa sổ với hoa văn từ rất lâu rồi, tất thảy khiến tui thả lòng nhẹ tênh từ lúc nào chẳng hay. Trước mắt mình bỗng chốc quên mất chốn xô bồ quen thuộc ngoài kia và đang tự thả mình bay giữa chiều hoàng hôn Đông Dương cổ kính.
Thiệt ra là tui tính dành hết hăm bốn giờ ở đây luôn, mà cái thói lỡ thèm bánh tráng nướng, sữa đậu nành, bánh căn, cà phê cóc trên mấy con dốc phố sương quá nên buổi tối chạy xe ra trung tâm chơi, chớ nghe bảo buổi tối ở đây lãng mạn và tịnh yên lắm,
Có một điểm đặc biệt rất thích ở Ana Villas Dalat đó là kiến trúc của mười bảy căn biệt thự đều có những câu chuyện lịch sử khác nhau, kiến trúc và tên gọi khác nhau: biệt thự Mậu dịch Đông Dương, Nhà Khảo Cổ, Những người trồng trọt của biệt thự Brigitte… Bởi vậy nên ngay sáng hôm sau, tui dành thời gian dậy thiệt sớm và đi dạo hết từng cung đường, từng căn biệt thự chốn này. Thiệt khó có thể diễn tả cảm xúc đó, nhưng nó kiểu giống như bạn bị lạc ở một đồi thông lớn nhưng bạn chẳng hề quan tâm đến việc tìm đường ra, mà chỉ quan tâm mình đã khám phá hết chốn này hay chưa và muốn ở lại với nó thiệt lâu thôi,
À, còn một điểm khá thú vị ở đây, có lẽ duy nhất tại xứ lạnh Đà Lạt này là chiếc hồ bơi nước nóng ngoài trời. Đảm bảo đây là một trải nghiệm cực kì thú vị khi được hoà mình giữa dòng nước ấm, ngước cổ lên là những tán thông lớn cùng mớ trời mây trong veo, thi thoảng nắng lên rồi tắt lại, chẳng tiếng ồn nào ngoài mùi hương thi thoảng theo làn gió thổi đến từ căn nhà hàng Le Petit sát bên. Mà nhắc mới nhớ, ẩm thực trong đây cũng ngon và ấn tượng lắm hen, tui có dùng thử set menu trưa 470K dành cho 2 người, rất vừa vị với người khó tánh và hơi ái ngại đồ tây như tui, một điểm cộng cực kì lớn, hehe,

When watching @cultivate.hk developing before its Soft Opening, I was a little uncertain of the direction it was going to take. You see, anyone who has followed @leonidas_xcii 's food for a while would have noticed 2 things: One, is that he's rather unconventional & inventive, sometimes borderline 'unpredictable' with his flexibility, with each dish taking many micro steps.
2ndly, he actually developed a bit of reputation for having a knack for making Vegetables taste great, but still, all these spring veggies photos popping up on my screen 🤔. In fact there are Vegetables based Dishes still remaining on HK Restaurant menus, which was co-invented by Leonard when he was working there, the famous Brussels Sprouts salad is one if u know what I am speaking of.

Taste of Spring Bites:
🔸Roasted Vidalia Onion with Lemon Verbena Ricotta, Petit pois, Freeze Dried Tangerines, etc. The flavor explosion from this bite surprised me, as it is much more complex than it seems on paper. The Vidalia onions are highly seasonal, & US Georgia's answer to the French Cevennes Onions or other sweet onions in Japan, etc.
🔸A little very well cooked piece of Eel beneath
🔸Nasturtium with Green Apple, Sorbet, Whey & Lemon confit. This was very interesting, as there's a mixture of sourness, bitterness and leafiness from the herb & flower itself. It reminds me a bit of the Sorrel & Omija sorbet initially at Hansik Goo, which is quite 'out there' & great for palate training, exploratory, on the sour bitter spectrum
🔸Salted Celtuce with Creme Fraiche, Dill & Fennel presented on a fork, to start, also was more flavorful than the outlook suggested

We recommend this french pudding strongly, it’s really delicious, you'll be amazed how the simplest ingredients can make such a rich and creamy texture. By the way, it’s gluten-free.
This french pudding is rich, creamy and wonderful. The silky and rich texture is a little like chocolate mousse and chocolate custard. Chill in the fridge for at least 2 hours or overnight before serving is the best way to enjoy it. A tasty addition is to top with a dollop of whipped cream and garnished with some chocolate shaving. This recipe’s idea is from French chef Joël Robuchon, but we’ve reduced the amount of sugar and added rum to make it more flavor. Hope you like. Enjoy. :)

How to make Crème Au Chocolat French Pudding
Here is the Crème Au Chocolat French Pudding Recipe
☞ Yield: Serve 5, we use 140ml pudding cup
✎ Ingredients
milk 150ml
whipping cream 200ml
70% bittersweet chocolate 100g
egg yolk 3
granulated sugar 60g
rum 5g
*You can garnish with whipped cream and shaving chocolate
✎ Instructions
1. Cut the chocolate into small chunks.
2. In a saucepan, slowly cook the whipping cream and milk over medium-low heat, and stir continuously until simmer but not boiling. Remove from heat.
3. Add chocolate chunks into the saucepan, stir occasionally until the chocolate is melted and the mixture is smooth and fully incorporated.
4. In a large mixing bowl, add 3 egg yolks, sugar and rum ,whisk together until mixed well.
5. Pour 1/3 chocolate mixture into the egg mixture, gently whisk.
6. Slowly add the rest of the chocolate mixture while continuously whisking.
7. Sieve the mix into a jug. Then fill the pudding mixture to 2/3 height of the cup. It’s about 80ml.
8. Next, fill room temp water into the baking dish to the level of 1/2 of the height of the chocolate mixture.
9. Preheat the oven to 160C, bake for 35~40 minutes.
10. Once baked, carefully remove the cups from the baking dish. Let cool completely before covering with wrap and refrigerating.
11. Chill for at least 2 hours before serving or overnight. For serving, you can top with whipped cream and chocolate shaving.

Fruit galette is so gorgeous in its rustic form. It’s a French pastry similar to a tart or a pie, the famous one is Galette des rois (king cake). The fruit galette is another free form pie with fruit filling, and the crust folded partway over the top of the filling, looks like a flat round pie. The best part is the pastry dough is simple to make for even beginners, it's quite a bit less effort than puff pastry, but the result is amazing.

French Style Strawberry & Blueberry Galette Recipe
☞ Yield: Serve 3~4
✎ Ingredients
📍 Pie dough
all purpose flour 100g (plus more for dusting)
granulated sugar 15g
a pinch of salt
unsalted butter 80g (Iced, cut into cubes)
iced water 30g
one egg
crystal brown sugar Q.S
📍fruits filling
strawberries 180g
blueberries 40g
granulated sugar 30g
corn starch 6g
half lemon zest
lemon juice 2g
✎ Instructions
1. In a medium bowl, mix flour, sugar and salt together until well combined.
2. Add very cold butter cubes and toss in the flour and until each piece is coated. Just take a piece of butter, using your fingertips to press it flat, then complete all. If your fingers warm up the butter too much, you can chill for 10 minutes
3. Add ice water and mix with your fingertips until the dough holds together enough to form a ball. If too dry, drop the remaining water. Lumps of dough are OK.
4. Put the dough onto a piece of plastic wrap, and flatten into a disk and refrigerate for 1 hour.
5. Make the fruit filling. Pinch off the green and slice the strawberries.
6. In a large bowl, combine the strawberries and blueberries with sugar and cornstarch. Zest half of lemon and squeeze a little lemon juice. Toss the fruit mixture together, set aside.
7. Lightly flour your working surface, so the pastry doesn't stick. Unwrap the dough and roll it into a 26cm/10-inch round circle about 3mm~4mm thick.
8. Pile the fruit filling onto the center of the dough and leave at least 2 inches border around the edge. Fold the edges of the dough up and over the filling.
9. Brush the edges with the egg wash and sprinkle with sugar.
10. Preheat the oven to 220C and bake for 25 minutes. Once baked, transfer onto a wire rack and cool completely.
10. Let cool before slicing and serving with an ice cream or a dollop of whipped cream to take it to the next level!

How to make Classic French Financier
Classic French Financier Recipe
☞ we use 6 cavity mold, each cavity size: 8 x 4.5 x 2cm
✎ Ingredients
powdered sugar 70g
almond flour 30g
walnut 10g
egg white 80g (about 2 large eggs)
all purpose flour 20g
baking powder 0.5g (a pinch)
brown butter/beurre noisette 42g (need about 60g unsalted butter)
honey 6g
✎ Instructions
1. Butter the pan, and chill in the refrigerator for at least 20 minutes.
2. Grind the walnuts in a food processor, pulse until the nuts are as finely ground, be careful not to grind them to paste.
3. Separate the eggs and weigh 80g of egg white.
4. To make the brown butter. Add 60g of unsalted butter in a small saucepan over medium low heat for minutes until the milk solids have sunk to the bottom and have begun to turn light brown. Once the color begins to turn amber color, remove from heat.
5. Pour the brown butter through a strainer, and weight 42g of butter, set aside and keep warm.
6. In a large bowl, sift the powdered sugar, then sift the flour, almond flour and baking powder.
7. Add grind walnut with all dry ingredients, mix well.
8. Add honey and egg white, whisk until combined.
9. Pour the very warm brown butter, whisk together until the butter is incorporated and the batter is smooth
10. Pour the batter into the pans, filling them about 2/3.
11. Preheat the oven to 200°C,bake for 13-14 minutes or until the tops and the edges are golden brown.
12. Once baked, cool the financiers for minutes, and then turn them onto a wire rack to cool completely.
