[Recipe] 炊き込みご飯 Takikomi Gohan

This is a classic Japanese Rice dish that can be prepared in advance using rice cooker, electric pot or claypot. It’s typically made with chicken or salmon but here, I’m making it more luxurious by using @newmoonsg abalones. Instead of short grain rice, I use @newmoonsg Australian glutinous rice which makes it resemble rice dumplings.
Ingredients (makes 4 servings) :
1 can New Moon South Africa 4-5 pcs Abalone
4 pcs Milli Po-Ku Mushrooms
5pcs Milli Water Chestnuts
1 pc Aburaage or Taupok
60g carrot
2 stalks green onion, chopped
300g glutinous rice
360ml broth (combine 180ml abalone brine and 180ml mushroom water)
1.5 Tb New Moon Light Soya Sauce
1.5 Tb Mirin
Steps:
1. Prepare rice: Wash rice and soak it in water for at least 30min. Drain completely.
2. Prepare ingredients: Cut carrots, mushrooms, chestnuts, abalones, taupok into slices.
3. Add soy sauce and mirin to the rice. Stir well with chopsticks
4. Pour broth
5. Layer ingredients starting from abalones, water chestnut, taupok, carrots and mushrooms
6. Cook per rice cooker settings
7. When done, sprinkle spring onion while it is still hot and mix well. Serve.

Japanese gratins グラタン has always been my favourite 洋食 dish (even though it’s so sinfully rich 😛) and glad I attempted this salmon potato gratin recipe from @masa_cookingram cuz it’s simply too oishii.
There’s no eggs and cream cheese involve, but simply the use of milk + heavy cream + cheddar cheese. Oh yes, this is another way to enjoy salmon.

Hey y'all! Today i'm sharing 4 poke bowl ideas that you can make at home starting from less than $1! They are so delicious, so easy to make and super healthy! Yum!
Tofu is really affordable so that made the bowl really cheap to make! You can dress it up with your favourite vegetables that are in season right now. Some of these ingredients are probably even more affordable in US or maybe otherwise but these are some of easiest to add to a poke bowl!
☆ Crispy Tofu ☆
Make sure you buy a firm tofu and not silken soft tofu. Drain the water from the tofu by wrapping it with a kitchen towel/paper and put a heavy object on top of it. Leave it for at least 30 minutes.
Then chop it up into cubes of your desired size. Take a zip lock bag and chuck all the tofu in there. Add a tablespoon of Soy sauce then shake it. A teaspoon of sesame oil and shake again! Then let the tofu absorb the sauces for about 10 minutes or more. Then coat it with some potato starch. Add little by little. Then shake it so that it is evenly coated and make sure that it is thinly coated!
Now put it in the oven at 180 degree celsius/360 degree fahrenheit for about 25-30 minutes. You may need to go up to about 200 degree celsius/400 degree fahrenheit if you have a big oven or your oven is not as hot. Adjust it based on your oven.
The tofu will turn out to be VERY crispy. Very tasty!

You can choose to buy the pre made ones from a Japanese or Korean store.
400g Seaweed
2 TBS of Apple Cider
2 TBS Soy Sauce
1 TSP of Sesame Oil
Ginger Powder
Toasted Sesame Seeds
Cayenne Pepper
1 TSP of Monk Fruit
1 TSP of Mirin
☆ Sesame Dressing ☆
6 TBS of Toasted Sesame
3 TSP of Sesame Oil
2 TBS of Apple Cider Vinegar
2 TBS of Soy Sauce
1 TSP of Mirin or Sake
Sweetener
Filtered Water
Adjust the ingredients based on your liking.
Chuck them all in a food processor and blend it until smooth

Creamy Christmas Tree Salad
Difficulty: Very Easy
Time: 20min
Number of servings: about 10 (5cm/2inch) Bento cups
Ingredients:
250g (8.8oz.) potatoes
100g (3.5oz.) avocado
A
* 3 tbsp. whipping cream or milk
* 2 tbsp. mayonnaise
* salt and pepper to taste
30g (1oz.) smoked salmon
30g (1oz.) cream cheese
2 tbsp. drained canned whole corn kernels
1 tbsp. finely chopped fresh parsley
gold powder or whole corn kernels to top with
Directions:
1. Thinly cut the potatoes, put the slices in a microwavable dish, wrap with plastic wrap, and microwave at 500W for about 5 minutes until soft.
2. Mash the potatoes and avocado together while still hot (heating avocado will prevent it from changing color). Add A and mix well until creamy.
3. Add the finely chopped smoked salmon, cream cheese, sweet corn, and parsley flakes, then mix.
4. Put the mixture into a pastry bag and pipe out into Bento cups in cone shapes so they look like Christmas trees. Top with gold powder or a whole corn kernel.
