台灣｜路邊找素

這次去台中，我是在板橋站坐火車去的，當然要買點吃的上路吧！「嚐鱻壽司」雖不是素食店，但也有照顧到素食者呢，有幾款素壽司可以選擇，包括香菇、豆皮、玉米、海藻等，當中最喜歡一定是香菇啊，我是菇迷好不好 😂 味道不錯吃，價錢實惠！一般在車站可以找到～

另外，大家有留意一般素食店的營業時間都很正常嗎？（跟京都一樣），意思就是下午不是吃飯時間，店都會午休，不像香港一天12個小時都營業。所以像我這種旅行也要睡懶覺睡到中午的話，很容易就沒得吃！😥

不用擔心，我發現台灣有很多「涼麵店」，一般都有素食提供，很喜歡配麻醬吃，麻醬有很重的蔥蒜味，看個人口味要不要加囉，涼麵店幾乎都沒有午休，價錢便宜，而且到處都有喔，超方便！

Taiwan｜Vegan Options at Roadside
I took the train at Banqiao Station to Taichung this time. Of course, I want to buy some food on the road! Although "Fish Sushi" is not a vegan shop, it also caters to vegans. There are several types of vegan sushi to choose from, including mushrooms, bean skin, corn, seaweed, etc. The most favorite one goes to mushrooms because I am a mushroom fan. 😂 Good taste, affordable! You can find Fish Sushi at some of the station generally~

In addition, do you notice that most of the vegan restaurants/shop opens during normal business hours? (Like in Kyoto) Meaning that it will be closed when it's not a meal time, unlike Hong Kong, which is open 12 hours a day. If you are like me, always waking up after lunch hour even during travel, you may miss many vegan restaurants! 😥

Don't worry, I found that there are many "cold noodle shops" in Taiwan. They are generally provided vegan option. I like to have cold noodles with sesame sauce. The sesame sauce has a heavy onion and garlic flavor. Those Cold Noodles Shops almost has no lunch break. The price is cheap, and you can find it everywhere, super convenient!

This simple Chicken Soup with Oyster Sauce was inspired by my late dad. My parents divorced when I was 14 and my brother was 9. At what I consider a tender age of 38, my father had to singlehandedly raise two young kids by himself. Although my brother and I were fairly independent, my dad tried to shower us his love in his own ways and one of his ways was to cook for us over the weekends. This soup was one of his most frequently cooked dishes because I told him I loved this soup. Unfortunately, I cannot remember fully the recipe my dad told me but I just briefed Roland based on what I can remember. This soup may be a simple soup to you but it carries so much meaning and fond memories for me.

Takoyaki (たこ焼き or 蛸焼?) is a ball-shaped Japanese snack made of a wheat flour-based batter and cooked in a special moulded pan. It is typically filled with minced or diced octopus (tako), tempura scraps (tenkasu), pickled ginger, and green onion. Takoyaki are brushed with takoyaki sauce (similar to Worcestershire sauce) and mayonnaise, and then sprinkled with green laver (aonori) and shavings of dried bonito. There are many variations to the takoyaki recipe, for example, ponzu (soy sauce with dashi and citrus vinegar), goma-dare (sesame-and-vinegar sauce) or vinegared dashi.

Takoyaki was first popularized in Osaka, where a street vendor named Tomekichi Endo is credited with its invention in 1935. Takoyaki was inspired by akashiyaki, a small round dumpling from the city of Akashi in Hyōgo Prefecture made of an egg-rich batter and octopus. Takoyaki was initially popular in the Kansai region, and later spread to the Kantō region and other areas of Japan. Takoyaki is associated with yatai street food stalls, and there are many well-established takoyaki specialty restaurants, particularly in the Kansai region. Takoyaki is now sold at commercial outlets, such as supermarkets and 24-hour convenience stores.

Yaki is derived from "yaku" (焼く) which is one of the cooking methods in Japanese cuisine, meaning "to fry or grill", and can be found in the names of other Japanese cuisine items such as teppanyaki, yakitori, teriyaki, okonomiyaki and sukiyaki.
