(3-step Lobster Risotto recipe)

Available on their own in 1L packs, or in bundle kits and hotpot essentials, the signature broths are void of preservatives and msg. I tried the Sichuan Poached Fish Bundle Kit($42.90) first. I was really impressed by the deep natural flavours of the broth, and the pristine freshness of the giant grouper slices. I used 500ml of the broth and half a packet of the preserved mustard and half of the grouper slices to whip up a fuss-free and absolutely delicious fish soup that went perfectly with just a bowl of steaming white rice. I’ve been recommending this to all my friends!! I really love it! The next day, I used the remaining broth and grouper slices to cook up an easy meal by throwing udon into the mix. Simple as ABC, but incredibly delish!!
I have the Lobster Pao Fan Bundle Kit ($45.90) too but I thought I would get creative and churn out a Lobster Risotto instead! The tasty broth was a godsend and this was the easiest risotto I’ve ever made (a good stock is really tedious to make so I’m glad that the lobster broth made my endeavour super easy!)
Serving for 1 pax :
1) Heat up some olive oil. Add 80g of Arborio rice to hot oil. Heat up about 400ml of lobster broth and 100ml water in another pot
2) Once rice is slightly brown, turn down the heat, add a ladle of lobster broth to the rice and let it simmer, stirring occasionally. Add another ladle of broth once the rice has absorbed most of it, till broth is used up.
3) Once rice is cooked to your desired texture, place 1/2 or whole Boston lobster on rice, and cover pan to heat up the already cooked lobster

Staying home doesn't mean boring meals! Spice up your home cook repertoire and impress the family with this Sichuan fiery dish.
水煮鱼 literally means “water boiled fish” - but it's an explosion of flavours with marinated fish slices packed full of spice! This Sichuan Boiled Fish is completed with hot oil, coriander and fried peanuts, it's red fiery appearance may deter some but after a bite, many come back for seconds.
With all the spice and chilli going into this dish, you might get some acid indigestion and heartburn (trust us, we ate the whole bowl!). In such uncomfortable situations, Gaviscon Singapore serves up a fast and soothing release. Now, you can get back to feasting!

Ingredients:
800g boneless fish fillet (skinless and sliced)
1 tsp salt
1 tsp white pepper powder
1 tbsp shaoxing wine
1 tbsp cornstarch
2 tbsp cooking oil
20 dried chillies (rehydrated and cut into small pieces)
4 tsp sze chuan peppercorns
6 cloves minced garlic
10g ginger (sliced)
2 stalks scallions (chopped, green part only)
3 tbsp doubanjiang
1 litre water
400g Chinese cabbage (sliced into smaller pieces)
150g Bamboo shoots
150g Bean sprouts
1 tsp salt (adjust to taste)
1 tsp sugar
1 tbsp chicken powder
¼ cup cooking oil
Garnish with coriander and fried peanuts

Steps:
1. In a mixing bowl, add fish slices, salt, white pepper powder, shaoxing wine and cornstarch. Mix well and leave to marinate for 15 minutes.
2. In a small pot, blanch bamboo shoots for 3-4 minutes. Drain and leave to cool, then cut into slices.
3. In a wok pan over medium low heat, add 2 tbsp of cooking oil. Add half the amounts of dried chillies, szechuan peppercorns, and all the minced garlic and ginger slices. Stir fry until fragrant.
4. Add in doubanjiang and continue to stir fry.
5. Once fragrant add in water and bring to boil. Leave to cook for 3-4 minutes.
6. Strain off all the aromatics from soup. Add salt, sugar and chicken powder, adjust salt and sugar according to taste.
7. Add in chinese cabbage, bean sprouts and sliced bamboo shoots. Bring to boil and cook for 3-4 minutes until cabbage is cooked. Strain and transfer into a large serving bowl.
8. Add in marinated fish slices into soup and cook for about 1 minute or less until fish slices are cooked. Drain and add over vegetables in a serving bowl.

Chef Hou Zhi Long from Chengdu, Sichuan has 20 years of experience. He started to learn to cook at the age of 14, and he became the head chef of the international chain Sichuan restaurant ‘South Beauty’ at a young age. Hence, he accurately masters the three flavours, three ingredients and three peppers of Sichuan cuisine.
In addition to mastering the essence of hometown cuisine, Hou Zhi Long talked about Sichuan's cuisine and beauty in the program, and how these subtly bring him the nutrients of cooking. From the historical and civilized Dujiangyan Irrigation System and Mount Qingcheng, the fairyland of Jiuzhaigou National Park on earth, the Chengdu snacks in Kuanzhaixiangzi Alley, and the adorable national treasure pandas, all these make him especially miss Sichuan.
Now he is traveling to another country to start a business in a foreign country. From a chef to an operator, he introduces the essence of authentic Sichuan cuisine to more Malaysians to know and taste.
In the 6th episode of "Taste of Home", we followed the host Huang Minghui, tasted spicy and fragrant boiled beef and Chengdu fish in chili bean sauce, and visited Sichuan to feel the charm of the land of abundance.

醬油30g soy sauce
花椒辣油40g sichuan chili oil
香油5g sesame oil

蒜末20g garlic
蔥花10g scallion
作法:
將所有材料混合均勻即可。
泰式酸辣醬

材料:
香菜碎15g coriander
紅辣椒末20g chili
蒜末20g garlic
檸檬汁40g lemon juice
魚露40g fish sauce
白砂糖20g sugar
作法:
將所有材料混合均勻即可。
和風胡麻醬
小標:芝麻香清爽不膩
材料:
芝麻醬50g sesame paste
醬油40g soy sauce
白醋20g white rice vinegar
味醂15g mirin
糖10g sugar
冷開水15㏄ cooled boiled water
作法:
將所有材料混合均勻即可。
蒜味醬
小標:萬用醬 拌的沾的都OK
醬油60g soy sauce
醬油膏20g thick soy sauce
烏醋1/2大匙 black rice vinegar 2tbsp.

作法:

1) 腐乳醬
材料:
A
豆腐乳2塊 fermented bean curd 2pcs.
辣豆瓣醬2大匙 chili bean sauce 2tbsp.
糖1大匙 sugar 1tbsp.
溫開水2大匙 warm boiled water 2tbsp.
B
香菜末適量 coriander qs.
蔥末適量 scallion qs.
作法:
將所有材料A混合均勻,最後加入材料B即可。
2) 胡麻醬
材料:
A
芝麻醬1大匙 sesame paste 1tbsp.
花生醬4大匙 peanut butter 4tbsp.
魚露1大匙 fish sauce 1tbsp.
米酒1大匙 cooking rice wine 1tbsp.
蒜泥1/2大匙 garlic 1/2tbsp.
醬油1大匙 soy sauce 1tbsp.
糖1茶匙 sugar 1tsp.
白胡椒粉少許 white pepper powder qs.
花椒油少許 sichuan pepper oil qs.
B
香菜末少許 coriander
作法:
將所有材料A混合均勻(順時針攪拌),最後加入材料B即可。
3) 味噌辣醬
材料:
辣椒醬2小匙 chili sauce 2tsp.
味噌1大匙 miso 1tbsp.
糖1小匙 sugar 1tbsp.
烏醋1小匙 black vinegar 1tsp.
涼開水2大匙 cold boiled water 2tbsp.
作法:
將所有材料混合均勻即可。
4) 生辣椒醬油
材料:
辣椒醬1/2大匙 chili sauce 1/2tbsp.
辣豆瓣醬1大匙 chili bean sauce 1tbsp.
