(ENG sub & Tiếng Việt) Honeycomb cake is a very popular cake in many Southeast Asian countries such as Vietnam, Indonesia, Singapore, Malaysia... This honeycomb cake is made of tapioca starch, coconut milk and palm sugar, giving the cake a soft and chewy texture with wonderful flavor from coconut and palm sugar.
INGREDIENTS
150 g coconut milk (NOT coconut cream)
75 g palm sugar or brown sugar
100 g tapioca starch
1/2 tsp instant dry yeast
3 eggs (150 g)
NOTEs:
- This recipe requires exact amount of ingredients hence I don't include measurement in volume, i.e. cup, tbsp, etc. as usual.
- You can use canned or fresh coconut milk.
- Palm sugar or brown sugar gives the cake distinct sweet taste, don't substitute it with white sugar. The amount of sugar may vary depending on your taste.
- YEAST is instant dry, which does not require activation. Yeast can't be substituted by baking powder or baking soda
- You can add vanilla, pandan extract or use lime leaves, lemongrass... if you'd like to make traditional Indonesian Bika Ambon

Coconut honeycomb cake, or Bánh bò nướng in Vietnamese is a gluten and dairy free cake with a slightly chewy texture and an interesting honeycomb-like texture, due to air bubbles in the cake. It's fun to make and unique!

Ingredients:
1/2 can (200ml) thick coconut milk
3/4 cup (150g) sugar
6 eggs
1 cup (200g) tapioca starch/ flour
1 pack Alsa single acting baking powder
2 tsp fresh pandan leaf extract (*)
green food color (optional)
Preheat the oven to 350°F(180℃).
In a small sauce pan heat coconut milk, sugar until the sugar dissolves. Set aside to cool completely. Then mix with pandan leaf extract and food color (if using)
In a separate bowl, mix the tapioca flour and baking powder.
In another separate bowl, lightly beat the eggs.
Don't beat too hard, since we don't want bubbles and foam to appear. Beat until it's smooth and uniform.
At this time, put the greased pan into the oven to preheat.
Shift one third of the flour mixture in the egg & coconut mixture, and quickly, but gently, beat until combined. Shift another one third in, and mix again.
Remove hot baking pan from the oven.
Strain the batter through a sieve into the hot baking pan, and put in the oven for 30-35 minutes or until toothpick comes out clean.
Let the cake sit in the pan for about 10-15 minutes.
Place a dish on the pan, then turned it over to take the cake out.
It's only slightly sweet. and tastes the best just plain by itself.

1 pinch of salt
½ tsp pandan extract
6 eggs eggs
240 g tapioca starch (8.5 oz / 2 cups)
2 ½ tsp single-acting baking powder (eg. Alsa brand http://amzn.to/1dYUnKD)
Optional: 1 pack vanilla sugar 11g (or 1 tsp vanilla extract)

**Do NOT use double-acting baking powder, only single-acting (eg. Alsa brand http://amzn.to/1dYUnKD) works. Difference: Single-acting works once when it gets wet. Double-acting works twice: first when it touches a liquid and then again when it is heated.
**The cake tastes the best freshly out of the oven. It can be stored for 1-2 days by wrapping in plastic wrap. If you serve it on the next day, microwave for about 15 seconds.
**Making this cake might look easy, but it is also easy to FAIL. Please follow the measurements and instructions closely, otherwise the cake might not have the honeycomb texture, or collapse. Check out my blog to find out why your cake collapses!
** The cake tastes very good with pandan extract, but you can replace pandan extract with other flavour.
