南瓜慕絲:南瓜 1,砂糖 40g,忌廉 50ml
做法:
1. 將海綿蛋糕從中間切成2片,切好後共4片,將其中1片切粒
2. 將南瓜壓成蓉,加入砂糖,忌廉,用攪拌機拌勻
3. 在海綿蛋糕上加上南瓜慕絲,海綿蛋糕,南瓜慕絲,海綿蛋糕
4. 蛋糕外圍塗上忌廉,加上海綿蛋糕粒,南瓜慕絲,拔絲南瓜

2 Genoise (Sponge Cake)
- Sweet Pumpkin Mousse: 1 Steamed Sweet Pumpkin, 40g Sugar, 50ml Heavy Cream
150g Whipped Cream, Sweet Pumpkin Mattang
※ PREPARATION
1. Slice 2 Genoise (sponge cake) into two pieces of 1cm thick and slice again into bite size pieces.
2. Sieve the steamed sweet pumpkin and whip up the heavy cream with sugar.
3. Layer genoise -sweet pumpkin mousse -genoise - sweet pumpkin mousse -and genoise.
4. Spread whipped cream to every outer area.
5. Attach bite size genoise to sides of cake and pipe out sweet pumpkin mousse on top and finish off with placing sweet pumpkin mattang.

40 g (1.4 oz) tapioca starch
100 g (½ cup) sugar
