炒烏冬通常有烏龍麵、醬油、肉和蔬菜,
起源於九州福岡縣,
各家炒法各有不同,

不用去居酒屋自己就能做!

▶材料 INGREDIENTS
蒜頭 ニンニク garlic
紅蘿蔔 人参 carrots
木耳 きくらげ black fungus
任何蔬菜 好きなベジ any vegetables
洋蔥 玉ねぎ onion
大蔥 ネギ leek
香菜 パクチー cilantro
烏龍麵 うどん udon
▶調味料 SEASONING
橄欖油 オリーブオイル olive oil
鹽巴 塩 salt
白胡椒 white pepper
辣椒粉 チリパウダー chili powder
料理酒 japanese sake
蒜泥 にんにくおろし garlic paste
老抽 dark soy sauce
醬油 soy sauce
楓糖 メープルシロップ maple syrup
辣醬 ホットソース chili sauce
中華辣椒醬 チリソース chili sauce
辣椒 チリ chili
▶作法
先炒蔬菜配料:
① 橄欖油爆香蒜片後加入紅蘿蔔、蔬菜拌炒
② 加入鹽巴、白胡椒、辣椒粉拌炒
③ 加入料理酒、蒜末、老抽、醬油、楓糖、辣醬拌炒後,蔬菜盛盤備用
再炒烏龍麵:
④ 橄欖油炒香洋蔥後放烏龍麵
⑤ 加料理酒、辣椒醬拌炒
⑥ 加木耳、高湯或熱水、蒜泥、醬油拌炒
⑦ 倒入剛炒好的蔬菜、鹽巴、大蔥拌炒
⑧ 試吃看看自己喜歡的味道,我們愛吃辣
⑨ 盛盤、鋪上香菜後,上菜囉♡
✦ 調味料比較多種增加烏龍麵的層次,若家裡沒有可以略過
✦ 不吃五辛可換成椒類

【日式鹽昆布炒烏龍麵】
雖然常在台灣小吃店吃到的炒烏龍麵。
但其實在日本,炒烏龍麵反而沒這麼常見喔!烏龍拌麵及湯麵反而更常見呢!
日式炒烏龍麵的味道與台灣的不大一樣,這次介紹給各位這道食譜。
運用日本超市常見的鹽昆布烹煮出這道炒烏龍麵,並且捨棄常用的豆芽菜,加入了高麗菜及紅蘿蔔增添營養。
忙碌的時候,10分鐘就能做好,如果你有購入鹽昆布,請務必試試這道料理喔~

烏龍麵---1人份
高麗菜---1大片
紅蘿蔔---1/3根
鹽昆布---10g
麻油---1大匙
鰹魚醬油露---1大匙

☆作法步驟☆
[1]
煮烏龍麵。
[2]
紅蘿蔔切絲。
[3]
將高麗菜切成好入口大小。
[4]
在炒鍋裡倒入麻油,大火放入紅蘿蔔翻炒。
[5]
接著加入高麗菜,繼續翻炒。
[6]
放入煮好的烏龍麵及鰹魚醬油露,拌炒。
[7]
最後放入鹽昆布拌勻就完成了。
[8]
煮烏龍麵的期間,完成切菜及炒菜,最後拌勻就能完成,只需短短十分鐘喔!
★小撇步
隨著鰹魚醬油露的濃縮倍數不同,有可能會感覺過鹹,使用時務必嚐看看,如果太濃的話可以加水稀釋。

Yaki Udon is a very basic Japanese stir-fried Udon noodle dish made with lots of vegetables and meat/seafood. We usually make it using the leftover vegetables and thinly sliced pork but I found it without pork is absolutely delicious!
Kombu (kelp) Dashi is a vegan option for Dashi. You can use any Dashi product but so far my favorite to make this dish is this one.

Vegan Yaki Udon (Stir-Fried Udon Noodles with Vegetables) Recipe
Difficulty: Very Easy
Time: 15min
Number of servings: 2
Ingredients
2 packages fresh Udon noodles
400g (about 1lb) vegetables of your choice *I recommend adding some onion slices
5g (1&2/3tsp.) Dashi powder *I recommend RIKEN Kombu Dashi Powder https://amzn.to/31o8bx8
2 tbsp. soy sauce
1 tbsp. cooking oil
pepper *if you like
Vegetables of your choice ideas:
cabbage, bean sprouts, carrot, green pepper, onion, chive, long onion, Shimeji mushrooms, Shiitake mushrooms, etc... Sometimes I use only bean sprouts and onion slices and it turns out amazingly delicious if you don't care the color of the dish. hehe
Directions:
1. Cut vegetables into bite-size pieces.
2. Wash Udon under running water to separate, then drain well. You can also use boiled frozen Udon.
3. Heat cooking oil in a frying pan and cook the vegetables until tender.
4. Add Udon, season with Dashi powder and soy sauce. You can add pepper if you like.
5. Serve in a dish.

Yaki Udon is a very basic Japanese stir-fried Udon noodle dish made with lots of vegetables and meat/seafood. We usually make it using the leftover vegetables and thinly sliced pork but getting a package of assorted vegetables and any meat/seafood is OK, too! Take it easy and enjoy!!!
You can use any Dashi product but so far my favorite to make this dish is this one.

How to Make Yaki Udon (EASIEST Recipe Ever to Follow)
Difficulty: Very Easy
Time: 15min

100g (3.5oz) thinly sliced pork
300g (10.5oz) vegetables of your choice *I recommend adding some onion slices
1 Chikuwa (fish cake) *If you have OPTIONAL
5g (1&2/3tsp.) Dashi powder *I recommend RIKEN Kombu Dashi Powder https://amzn.to/31o8bx8
2 tbsp. soy sauce
1 tbsp. cooking oil
pepper *if you like
bonito flakes *if you like
Vegetables of your choice ideas:

Furikake Seasoning Cup Fried Udon Noodles 'Noritama Yakiudon'. Nori means seaweed laver, tama means egg. Noritama is famous furikake seasoning, I used to eat it especially in bento lunch box.
