Drum roll please 🥁 Dropping VHC air-fried crispy pork belly recipe in time for Mother’s Day {thịt heo quay}

Ingredients:
• 2 lbs pork belly with skin
• 2 tsp Chinese spicy bake mix seasoning (swipe to see packet)
Ingredients to clean the pork belly:
• 1/2 tbsp vinegar
• 1 tsp salt
• 1/2 cup warm water
Steps:
1. Clean the pork skin and meat with the salt, vinegar and warm water mixture.
2. Rinse and pat the pork belly dry with paper towels.
3. Poke holes in the skin. Avoid poking the holes too deep into the fat/meat part of the pork belly. Wipe the skin again with a paper towel.
4. Place the pork belly on a plate. Meat side up and apply 1 tsp of the Chinese baking powder on the meat and the sides. Flip the pork belly over so the skin is on top. Apply 1 tsp on the skin. Refrigerate the pork belly uncovered for at least 4 hours.
5. Remove pork belly from the refrigerator and let it sit out at room temperature for about 30 minutes.
6. Preheat air fryer to 400F in the middle rack.
7. Place pork belly in a foil and securely wrap the foil to create an edge around the pork belly.
8. Place in the air fryer and cook for 40 minutes.
9. Remove the pork belly and move the rack to the highest level, closest to the heating element. Increase the temperature to 450 and cook for another 10 minutes or until desired crispiness.
10. Remove and cut into smaller pieces.

VHC Grilled Lemongrass Pork Recipe ————————————————————
Ingredients:
3 lbs pork belly (pork shoulder or butt cut)
1 shallot - minced
1 lemongrass stalk - minced
4 garlic cloves - minced
3 red chili peppers - minced
1/2 tbsp ground white pepper
1 tbsp sesame oil
1 tbsp fish sauce
1/2 tbsp sea salt
1 tbsp sugar
1/4 cup organic honey
**Optional:
1 tbsp annatto oil (for color)

Steps to make the sauce:
1. Combine all minced ingredients together in a bowl.
2. Add the remaining ingredients in the bowl. Mix well until sugar is dissolved.
3. Reserve about 1/4 cup of sauce in a separate container. Keep this container in the refrigerator until you are ready to cook the meat.
4. Slice the pork meat into thin slices.
5. Add meat to the sauce bowl. Make sure to massage and coat meat evenly.
6. Refrigerate for at least 2 hours or overnight for best results.
Notes:
1. Before you cook the meat, soak bamboo skewers in cold water for at least 5 minutes. Add meat to skewers and cook based on instructions provided below.

Cooking instructions:
1. Oven - set oven at 375F and cook for 10-15 minutes. Rotating the meat every 5 minutes and basting the meat with the sauce that was set aside. Increase oven to low broil to give the meat a nice golden brown finish. Keep a close eye on it so the meat doesn’t burn and dry out.
2. Grill - cook meat on medium heat. Rotate often and basting with the extra sauce that was set aside. Cook until meat is golden brown with some charred finish around the edges.

Roland can always achieve extremely crispy and light roasted pork with this recipe. This is our second crispy pork belly video following the first one we did almost 1 year ago. Only this time round, to make it simple, Roland omitted the use of fermented beancurd because some of you cannot get hold of it.

0.5 teaspoon of baking soda
3.5 teaspoons of coarse sea salt
Some cooking oil
Five Spice Marinade

Bake at 180C for 25 mins
Followed by 200C for 8 mins

♨ CÔNG THỨC HEO QUAY DA GIÒN:
- 1kg thịt ba chỉ (từ 1kg - 1.5kg)
- 2 muỗng canh nước tương
- 1 muỗng canh tương ớt | Sate tôm
- 1.5 thìa cafe hạt nêm
- 1 thìa cafe đường | muối | tiêu
- 1 muỗng canh giấm gạo
♨ CÁCH LÀM HEO QUAY DA GIÒN TẠI NHÀ:
- Thịt ba chỉ mua về rửa sạch với nước muối loãng, để ráo. Dùng dao cắt dọc phần thịt rồi tiến hành ướp gia vị đường, muối, hạt nêm, tương ớt, sate,.. trong 20 phút.
- Phi thơm hành tím, tỏi rồi cho ba rọi vào chiên sơ phần thịt, đổ nước vào luộc thịt ba chỉ trong 20 phút. Canh sao cho nước sâm sấp mặt thịt, không bị tràn lên phần da.
- Lấy thịt ba chỉ đã luộc ra và xăm khắp da bằng xiên tre. Phết lên bề mặt da heo hỗn hợp muối, giấm. Để miếng thịt nghỉ khoảng 10 phút.
- Cho thịt ba chỉ vào lò nướng, nướng 25 phút, 2 lửa, 200 độ C. Sau khi nướng xong, lấy thịt ra và quét lên 1 lớp giấm muối nữa.
- Cho thịt lại vào lò nướng, nướng với lửa trên, 220 độ C đến khi da heo nổ đều hết.
♨ CHÚ Ý KHI LÀM HEO QUAY TẠI NHÀ:
- Khi cắt thịt ba rọi, hạn chế cắt sâu, làm gia vị thấm vào phần da
- Nếu không có lò nướng, bạn có thể chiên bằng chảo. Khi chiên nên chiên mặt da trước.
